1 1/2 lbs chicken parts
1/4 cup apricot preserves
2 tablespoons white wine (or chicken broth)
1 tablespoon honey
1 tablespoon soy sauce
1 tablespoon olive oil
1/4 teaspoon black pepper
1/4 teaspoon ginger
1/4 teaspoon red pepper flakes
2 green onions, chopped

Steps:

  • Preheat oven to 375.
  • Place chicken in a 13" x 9" baking dish; set aside.
  • In a small saucepan over medium heat, cook preserves, wine, honey, soy sauce, oil, pepper, ginger, red pepper flakes, and green onion just until bubbly.
  • Evenly pour over the chicken pieces. Bake for 45-55 minutes or until chicken is no longer pink.

10 (5-ounce) skinless chicken breast halves (with bone)
Salt and ground black pepper
1 1/2 cups apricot preserves
2 tablespoons reduced-sodium soy sauce
1 teaspoon liquid smoke
1/2 cup chopped fresh parsley leaves

Steps:

  • Preheat oven to 400 degrees F. Coat a large roasting pan with cooking spray.
  • Season chicken all over with salt and black pepper. Arrange chicken in prepared pan and set aside.
  • In a small bowl, combine apricot preserves, soy sauce and liquid smoke. Mix until blended. Pour mixture over chicken.
  • Roast 35 minutes, until chicken is cooked through. Serve 4 chicken breast halves with this meal and refrigerate remaining chicken until ready to use (or freeze up to 3 months). Garnish with parsley.

1 cut up fryer chicken (I don't use the neck, instead I save that in the freezer to make bone broth)
½ cup apricot jam
½ cup balsamic vinegar
½ cup water
4 T extra virgin olive oil
1 T. finely chopped oregano
1 teaspoon sea salt
1 small leek, chopped
8-10 dried or fresh figs (cut in half or into quarters)

Steps:

  • 1. Rise chicken and place in baking dish. Preheat oven to 325 degrees. 2. In separate small dish, whisk together apricot jam, balsamic vinegar, water, olive oil, chopped oregano, and sea salt. Pour over chicken. Place leeks and figs on the bottom of the pan around the chicken. 3. Place pan in oven and roast for 1 ½ to 2 hours. The longer it cooks, the more tender the meat will be. Check on it periodically to baste. 4. Serve over quinoa or brown rice (optional) and with a side of parboiled greens or steamed broccoli.

For the chicken and rub:
1 teaspoon ground cinnamon
1/2 teaspoon ground cumin
1 teaspoon ground turmeric
1 1/2 teaspoon Spanish paprika
1 teaspoon sea salt
1 teaspoon ghee or olive oil
1 (4- to 6-pound) whole chicken
3 plum tomatoes, cut into small dice
1/2 cup chopped dried Turkish apricots
4 large garlic cloves, minced
1/4 cup golden raisins
3 cups Chicken Bone Broth
For the squash:
1 butternut squash, peeled, cut in half, and seeds removed, cut into small dice
1 teaspoon olive oil
1 tablespoon roughly chopped fresh sage
1 tablespoon roughly chopped fresh mint
2 teaspoons sea salt

Steps:

  • Prepare the rub and the chicken: Preheat the oven to 375°.
  • In a large mixing bowl, combine the cinnamon, cumin, turmeric, paprika, sea salt, and ghee or oil. Add the chicken to the bowl and, using your hands, work the rub into the chicken, ensuring the entire chicken is coated.
  • In a deep cast-iron pot or slow cooker, combine the tomatoes, apricots, garlic, raisins, and broth. Place the chicken on top of the veggies and place the pot in the oven for 50 minutes, or until the chicken reaches an internal temperature of 150°F.

1 whole chickens or 1 cut-up chicken piece
1 cup water
1 large onion, sliced
3 bay leaves
1/3-1/2 cup apricot jam
garlic powder
onion powder
salt (depending on the chicken) (optional)
pepper (to taste)

Steps:

  • Layer a large roasting pan with onions. Place the chicken with your favorite stuffing or without on top of the onions.
  • Sprinkle to cover the chicken with onion and garlic powders. Spoon the jelly over all the chicken. Pour the water over the chicken. Add the bay leaves to the water.
  • Cover well and bake in a 425 oven for 1 hour. After 1 hour turn the chicken over so that both sides get nice and juicy and continue baking for another 1 1/2 hours.
