Saw this on TV and could almost smell it. Had to try it myself. Tweaked it just a little bit (cut down on the fat).

4 boneless skinless chicken breasts
1 tablespoon vegetable oil
1 lb plum, stoned and finely chopped
4 ounces apricots, stoned and finely chopped (you can use dried apricots)
1 inch fresh ginger, grated
2 red chilies, deseeded and very finely chopped
2 cooking apples, peeled,cored and grated
2/3 cup balsamic vinegar
2/3 cup water
salt & freshly ground black pepper, to taste

Steps:

  • Cook plums, apricots, ginger, chillies, apples, balsamic vinegar and water together in a heavy based pan for about 20 minutes to make a sauce.
  • In another pan, brown the chicken breast in the oil.
  • Add the sauce and cook together gently for about 15 minutes.
  • Season well with salt and pepper.
  • Serve over rice or cous-cous.

1 turkey breast
1 c apricot nectar
1/4 c olive oil
2 Tbsp soy sauce, light
1/2 tsp pepper
6 large purple plums or medium peaches, peeled and chopped
1 jalapeno pepper, seeded, finely chopped
1/4 c green onions, chopped
1/4 c cilantro, chopped
3 Tbsp light brown sugar - firmly packed

Steps:

  • 1. Remove and discard skin from turkey breast.
  • 2. Place turkey in a heavy-duty zip-top plastic bag or shallow baking dish.
  • 3. Combine apricot nectar and next 4 ingredients in a jar; cover tightly, and shake vigorously.
  • 4. Remove and refrigerate 3/4 cup marinade.
  • 5. Pour remaining marinade over turkey, turning to coat; seal bag or cover, and refrigerate overnight, turning turkey occasionally.
  • 6. Combine 1/4 cup reserved marinade, plums and next 4 ingredients in a medium bowl; cover and refrigerate at least 1 hour.
  • 7. Remove turkey from marinade; discard marinade.
  • 8. Place turkey in center of cooking grate over a drip pan; grill 1 1/2 to 2 hours or until an instant-read meat thermometer registers 170.
  • 9. Brush occasionally with remaining 1/2 cup reserved marinade; let stand 10 minutes before slicing.
  • 10. Serve with chilled plum mixture.

1 large onion, coarsely chopped
4 garlic cloves, minced
1/4 cup fresh ginger, coarsely chopped
2 limes, thinly sliced and seeded
1 lb apricot, pitted, coarsely chopped
1 lb plum, pitted, coarsely chopped
1 cup cider vinegar
1/2 cup tawny port
2 cups dark brown sugar
1 teaspoon cinnamon
1 teaspoon ground allspice
1/2 teaspoon cayenne pepper or 1/2 teaspoon crushed red pepper flakes
1 teaspoon salt
1/4 cup chopped fresh cilantro

Steps:

  • In a food processor fitted with s steel blade, process the onion, garlic, ginger, limes, apricots, and plums until pureed.
  • In a medium nonaluminum dutch oven or heavy saucepan, combine the pureed ingredients and all the remaining ingredients except the cilantro and bring to a boil over medium-high heat.
  • Lower the heat and simmer until slightly thickened, about 45 minutes. Stir frequently to avoid burning. Remove from the heat and cool.
  • Add the cilantro and taste for seasoning. Pour the sauce into a large glass container and refrigerate. Make sure the cilantro is totally submerged before storing, or omit and add at service.
  • NOTES: This sauce may be refrigerated in an airtight container for up to 2 months. Makes 4 cups. Recipe may be doubled. Makes a good gift. Uses: particularly good with pork, chicken, quail, and game hens. Dilute it with wine or nectar to use it as a marinade.
