Time 2h50m

Number Of Ingredients 11

1 1/2 cups all-purpose flour
1 cup almond flour ((or replace with additional all-purpose flour))
2/3 cup sugar
1/2 teaspoon salt
18 Tablespoons unsalted butter ((2 sticks plus 2 Tablespoons) (softened))
1/2 cup rolled oats
1/2 cup almonds (chopped finely (toasted preferred) )
1/4 cup light brown sugar (packed)
1 cup apricot jam
4 ounces dried apricots (diced (1/2 cup))
1 Tablespoon lemon juice ((or orange))

Steps:

  • Preheat oven to 375F.
  • Line a 9x13 pan with parchment paper or foil. Spray the dish with non stick spray.
  • In a large bowl, whisk together the flour, almond flour, sugar, and salt. Using a stand mixer or electric mixer, beat 16 Tablespoons (2 sticks, 1/2 pound) of butter at low speed into the flour until it is incorporated and looks like wet sand. (Alternatively, do this in a large bowl with your fingers, squishing the butter into the flour).
  • Remove one cup of the flour mixture for the topping and set aside.
  • Take the remaining flour mixture and press it into an even layer across the bottom of the dish.
  • Bake the bottom crust in the dish until the edges just start to brown, approximately 15 minutes.
  • While the bottom crust is baking, combine the reserved flour mixture, oats, almonds, and brown sugar in a medium bowl. Stir to combine.
  • Add the remaining 2 Tablespoons of butter to the almond mixture and pinch it to combine, making clumps of the streusel. Set aside.
  • In a small bowl, combine the apricot jam, diced apricots, and lemon juice. Stir to combine.
  • When the bottom crust has been removed from the oven, spread the apricot jam mixture across the warm crust. Then sprinkle the streusel mixture across the top.
  • Bake the crumble bars for approximately 20-25 minutes until the top is browned and the edges of the apricot mixture are bubbling.
  • Let cool completely or until just slightly warm, approximately 2 hours. Use the foil or parchment to remove the bars from the dish and cut into pieces. Re-warm if desired in pieces or as a whole. Serve with ice cream or whipped cream if desired.

Apricot pecan crumb bars are a delicious dessert that's perfect for any occasion. These bars are indulgent, flavorful, and are perfect for those who crave something sweet and nutty. Making these bars require some skill, but it's relatively easy if you follow some simple tips.

Tip 1: Preheat Your Oven

The first and most crucial tip when making apricot pecan crumb bars is to preheat your oven. This step will ensure that your dessert bakes evenly and thoroughly. Set your oven to 350°F or 177°C and wait for it to heat up.

Tip 2: Prepare Your Pan

Before you start making your apricot pecan crumb bars, it's essential to prepare your pan. If your pan is not prepared correctly, it can lead to uneven baking or sticking to the pan. Use a baking spray or butter and flour to grease a 9 x 13-inch baking pan.

Tip 3: Have All Your Ingredients Ready

The key to making any recipe successfully is to have all your ingredients ready before you start. For apricot pecan crumb bars, you will need apricot preserves, all-purpose flour, brown sugar, baking powder, salt, unsalted butter, egg, and chopped pecans. Make sure to measure your ingredients correctly and keep them within reach.

Tip 4: Make the Crumb Base First

The base of the apricot pecan crumb bars is a crumb mixture made of flour, brown sugar, baking powder, salt, and butter. Mix all the dry ingredients in a bowl, and then cut in the butter until it forms a crumbly mixture. Press half of the crumb mixture onto the bottom of the prepared pan.

Tip 5: Add the Apricot Filling

After you've made the crumb base, it's time to add the apricot filling. Heat the apricot preserves in a microwave for a few seconds until it becomes more liquid. Spread it over the crumb base evenly.

Tip 6: Add the Pecan Topping

The final step is to add the pecan topping. Add chopped pecans to the remaining crumb mixture and sprinkle it over the top of the apricot filling. Press it gently into the filling.

Tip 7: Bake the Bars

Now that you've added all the ingredients, it's time to bake your apricot pecan crumb bars. Place the pan in the preheated oven and bake for 25-30 minutes or until the crust is golden brown.

Tip 8: Allow the Bars to Cool

After the bars are done baking, remove them from the oven and allow them to cool to room temperature. Cut them into equal-sized portions and serve.

Tip 9: Store the Bars Properly

If you have any leftovers, you will want to store apricot pecan crumb bars in an airtight container at room temperature for up to three days. You can also freeze them for up to three months, but make sure to wrap them tightly in plastic wrap and aluminum foil.

Conclusion

Apricot pecan crumb bars are a delicious and satisfying dessert that's easy to make if you follow these valuable tips. Remember to prepare your pan correctly, have all your ingredients ready, make the crumb base first, add the apricot filling, add the pecan topping, bake the bars, allow them to cool, and store them properly.
