SHRIMP SPRING ROLLS WITH SPICY APRICOT MUSTARD DIP

Shrimp Spring Rolls with Spicy Apricot Mustard Dip image

Provided by Sandra Lee

Time 40m

Yield 4 servings or 8 rolls

Number Of Ingredients 9

1 cup chopped cooked shrimp
2 cups broccoli slaw
2 tablespoons prepared sesame-ginger marinade
1 (4.7-ounce) package spring roll wrappers
Canola or vegetable oil, for deep frying
1 tablespoon sesame-ginger marinade
1/2 cup apricot preserves
1/4 cup spicy brown mustard
1/2 teaspoon hot sauce

Steps:

  • For the dip: In a small bowl, stir together the marinade, preserves, mustard and hot sauce.
  • For the spring rolls: In a bowl, mix together the shrimp, slaw and marinade. Place a spring roll wrapper on your work surface with 1 of the corners facing you so it looks like a diamond. (Keep the spring roll wrappers covered with a damp towel so they don't dry out). Place 2 tablespoons filling on the lower third of the wrapper. Spread the filling out in a line from side to side. Roll the bottom corner up over the filling, and then fold in the sides. Moisten the top corner with some water, using your finger or a brush, and roll the filling over it so it sticks to itself and forms a seal. Place seam-side down on a plate and keep covered with a damp towel while you make the remaining rolls.
  • When you are ready to cook, fill a large, heavy-bottomed pot with enough oil to come up about 3 inches from the bottom. Place over medium-high heat and bring to 360 degrees F. Add the spring rolls, a few at a time, and cook until they are golden brown, 2 to 3 minutes. Drain on paper towels and keep warm while you fry the rest. Serve with the spicy apricot mustard dip.

Valuable Tips When Making Apricot Dip Recipes

Making apricot dip recipes can be quite simple and easy, especially for those who are already familiar with cooking and mixing ingredients. However, there are certain tips that are worth considering to ensure that the apricot dip recipe turns out really well. Below are some tips that you can follow:
1. Choose the Right Apricots
The first tip in making an apricot dip recipe is to choose the right apricots. The best apricots for dips are usually ripe and slightly soft to the touch. They should also have a fragrant aroma that indicates their sweetness and freshness. You can also make use of canned apricots when fresh ones are not available.
2. Experiment with Different Flavor Combinations
Apricots are quite versatile, and so it is possible to experiment with different flavor combinations when preparing apricot dip recipes. One can add flavors like vanilla extract, cinnamon, ginger, mint, rosemary or basil. This will bring a unique twist to the recipe, making it more flavorful.
3. Use a Blender or Food Processor to Puree the Apricots
Pureeing the apricots is necessary when preparing the dip, and using a blender or food processor can make the process much easier. They help to create a smooth and consistent dip that is perfect for any occasion. It is important to note that one should be careful not to overblend the apricots as this could spoil the texture of the dip.
4. Add Creaminess with Yogurt or Sour Cream
Adding a creamy texture to the apricot dip can be achieved by using yogurt or sour cream. These ingredients also bring a tangy flavor to the dip, which complements the sweetness of the apricots. Greek yogurt or full-fat sour cream are ideal for this recipe, as they create a rich and thick dip that is perfect for dipping fruits or crackers.
5. Make the Dip Ahead of Time
Making the dip ahead of time is always an excellent idea, especially when one is expecting guests. This helps to save time and also enables the flavors to marry well. The dip can be stored in an airtight container in the refrigerator, and if it is too thick, one can add a little bit of milk or water to thin it out.
6. Add Texture with Chopped Nuts or Dried Fruits
Adding texture to the apricot dip recipe is also an essential part of creating a delicious dip. Chopped nuts or dried fruits work well in this recipe, helping to add a crunchy texture that complements the smoothness of the dip. Walnuts, almonds, and pecans are ideal for this recipe, as they are readily available and easy to chop.
7. Garnish with Fresh Herbs
Garnishing the dip with fresh herbs not only adds a decorative touch but also helps to bring out the flavors of the dip. Add fresh herbs such as cilantro, parsley, or basil to the top of the dip for a pretty garnish. These herbs also add an earthy and refreshing flavor to the apricot dip, which makes it even more delicious.
8. Keep the Dip Refrigerated Until Ready to Serve
After preparing the apricot dip, it is important to keep it refrigerated until ready to serve. This ensures that the dip stays fresh, and it also helps to preserve the flavors of the dip. When serving, one can plate the dip in a beautiful serving dish, and garnish it with fruits or herbs to create an attractive presentation.
Conclusion
Making an apricot dip recipe can be fun and easy, especially when following these valuable tips. Choosing the right apricots, experimenting with different flavor combinations, using a blender or food processor to puree apricots, adding creaminess with yogurt or sour cream, making the dip ahead of time, adding texture with chopped nuts or dried fruits, garnishing with fresh herbs, and keeping the dip refrigerated until ready to serve, are tips that will help make the apricot dip recipe a success. With these tips in mind, one can create a delicious, refreshing, and flavorsome apricot dip that is perfect for any occasion.
