A friend at church gave me this recipe and I tweaked it a bit. The cookies are biscuit-like and the frosting makes them very special. I'm sorry the picture is out of focus and I will try to post a better one when I make these again, perhaps this weekend.

1 cups all purpose flour
0.75 teaspoons baking soda
0.5 teaspoons kosher salt
0.5 teaspoons allspice
0.5 teaspoons cinnamon
0.75 cups butter
0.5 cups granulated sugar
0.75 cups light brown sugar
2 units eggs
1 teaspoons vanilla extract
2.75 cups rolled oats
0.75 cups coconut flakes
0.75 cups dried apricots

Steps:

  • Preheat oven to 350 degrees. In a large bowl, whisk together the flour, baking soda, salt, allspice, and cinnamon.

  • Add the brown sugar and mix until incorporated. Add the eggs to the butter mixture, one at time, waiting for the first one to be fully mixed in before adding the last. Put in the vanilla. Reduce the mixer's speed to low. Add the flour mixture, little by little, until a smooth dough is formed (make sure to scrape down the sides of the bowl).
  • Turn off the mixer, stir in the oats, coconut flakes, and apricots with a rubber spatula. Line 2 baking sheets with parchment paper. Use a spoon to drop heaping tablespoons of the dough onto the sheets, space them with enough room to expand.
  • Bake the cookies in batches for about 12-15 minutes; make sure to turn the pan once so they bake evenly. Bake until golden brown but still spongy. Cool on pans for a couple of minutes before moving them to a rack to cool completely. Store in an airtight container.

Cookies are a favorite of everyone, and there is no better way to enjoy a cookie than to make it yourself. One of the popular cookie recipes is the Apricot Coconut Cookies. These cookies are a great mix of sweet and savory flavors made with dried apricots, coconut flakes, and other ingredients. Creating the perfect batch of Apricot Coconut Cookies is not always easy, but there are several valuable tips that can help you get the best results.

Tip 1: Use Quality Ingredients:

The first tip to keep in mind when making Apricot Coconut Cookies is to use high-quality ingredients. Since this recipe only calls for a few ingredients, make sure you use the best quality items you can find. For instance, you should aim for high-end dried apricots with no added sugar, preservatives or sulfur. As our goal is to create a sweet and slightly tangy flavour. Using high-quality dried apricots will provide the best flavor and texture of the cookies. Additionally, using fresh, finely grated coconut flakes guarantees that the cookies are perfectly flavoured, crunchy, and aromatic.

Tip 2: Stick to the Recipe:

While cookies are generally easy to make, it is important to stick to the recipe to ensure the perfect consistency and flavor. This recipe's included measurements have been tested multiple times to achieve the perfect texture and balance of flavors that make these cookies special. Therefore, it is highly recommended to always follow the recipe as precisely as possible.
Suggested Measurements:
- 1 cup dried unsweetened apricots. - 1 1⁄2 cups unsweetened coconut flakes. - 3 egg whites. - 1⁄4 cup sugar.

Tip 3: Use a Food Processor:

Although you can chop the dried apricots into small pieces with a sharp knife, a food processor is recommended for optimal results. A food processor will help you to finely chop them into perfectly sized pieces. Furthermore, using a food processor can also be helpful when processing the coconut flakes into smaller pieces. They will give the cookies an even texture and flavor. However, take care not to over-blend or make the coconut flakes paste as they will lose their texture and flavor.

Tip 4: Refrigerate the Dough:

Once you have mixed the dough, allow it to refrigerate for at least two hours before baking. Chilling the dough will help to solidify and focus the flavor, providing a strong, visible aroma of both apricot and coconut, thus preserving the texture. Chilling the dough also makes the dough firm and more manageable, making it easier to handle while forming it. Furthermore, the cookies would not spread much while baking and will provide a firm, crunchy texture.

Tip 5: Roll the Dough Uniformly:

Rolling the dough uniformly helps to keep the size and shape of the cookies consistent. The dough should be rolled into small balls, with each ball being around 2-3 cm in diameter. Uniform balls ensure that the cookies bake evenly, allowing each cookie to have the same texture, shape, and size. Rolled at this size and shape, the cookies will pack together perfectly, allowing the texture to be consistent throughout the batch.

Tip 6: Don’t Overbake:

It is important not to overbake the cookies. Overbaking the cookies can dry them out, making them hard and crumbly. Baking the cookies until they are light golden brown in color is ideal. When the cookies are baked just right, they are moist, chewy, and have a perfectly golden brown color. However, the critical point to remember when perfecting this recipe is to avoid overbaking them, as it could spoil the texture, aroma and flavour of cookies.

Tip 7: Store Properly:

Storing the Apricot Coconut Cookies properly preserves the flavor, texture, and aroma of the cookies. It is highly recommended to store these cookies in an airtight container. With this storage applied, the cookies will last up to two weeks. It is important to maintain and control the ambient temperature to keep your cookies fresh. Moreover, it helps to store them in a cool, dry, and dark place to keep the quality intact.

Conclusion:

These seven valuable tips can make a significant difference when creating the perfect batch of Apricot Coconut Cookies. Follow this recipe for an exquisitely flavored and textured cookie! With high-quality ingredients, proper mixing, adequate refrigeration, and controlled baking time, you can create a batch of deliciously indulgent, lightly tangy, and aromatic cookies that anyone can crave.
