Yield Makes 4 servings

Number Of Ingredients 19

1 teaspoon ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon turmeric
1/2 teaspoon black pepper
1 1/4 teaspoons salt
3 tablespoons plus 1/4 cup olive oil
1 (3-lb) chicken, cut into 6 pieces, wings and backbone discarded
1 tablespoon unsalted butter
1 medium red onion, halved, then sliced 1/4 inch thick
4 garlic cloves, finely chopped
5 fresh cilantro
5 sprigs fresh flat-leaf parsley
1 1/2 cups water
2 tablespoons mild honey
1 (3-inch) cinnamon stick
1/2 cup dried Turkish apricots, separated into halves
1/3 cup whole blanched almonds
Special Equipment
a 10- to 12-inch tagine or heavy skillet; kitchen string

Steps:

  • Stir together ground cinnamon, ginger, turmeric, pepper, 1 teaspoon salt, and 2 tablespoons oil in a large bowl. Add chicken and turn to coat well.
  • Heat butter and 1 tablespoon oil in base of tagine (or in skillet), uncovered, over moderate heat until hot but not smoking, then brown half of chicken, skin sides down, turning over once, 8 to 12 minutes. Transfer to a plate. Brown remaining chicken in same manner, adding any spice mixture left in bowl.
  • Add onion and remaining 1/4 teaspoon salt to tagine and cook, uncovered, stirring frequently, until soft, about 8 minutes. Add garlic and cook, stirring occasionally, 3 minutes. Tie cilantro and parsley into a bundle with kitchen string and add to tagine along with 1/2 cup water, chicken, and any juices accumulated on plate. Reduce heat and simmer, covered, 30 minutes.
  • While chicken cooks, bring honey, remaining cup water, cinnamon stick, and apricots to a boil in a 1- to 2-quart heavy saucepan, then reduce heat and simmer, uncovered, until apricots are very tender (add more water if necessary). Once apricots are tender, simmer until liquid is reduced to a glaze, 10 to 15 minutes.
  • While apricots cook, heat remaining 1/4 cup oil in a small skillet over moderate heat and cook almonds, stirring occasionally, until just golden, 1 to 2 minutes. Transfer with a slotted spoon to paper towels to drain.
  • Ten minutes before chicken is done, add apricot mixture to tagine. Discard herbs and cinnamon stick, then serve chicken sprinkled with almonds on top.

With the sweetness of the apricots and the crunch of the almonds, this dish is sure to become a family favorite. However, making the perfect apricot chicken with almonds recipe can be a bit challenging. In this article, we'll provide valuable tips and tricks that will help you create a delicious and wholesome meal for your family and friends.

Tip #1: Use Boneless Chicken Breasts

When making apricot chicken with almonds, it's best to use boneless chicken breasts. This is because boneless chicken breasts cook more evenly and quickly compared to chicken with bones. Furthermore, it's easier to serve boneless chicken breasts as they can be cut into smaller pieces and they make the dish look more visually appealing.

Tip #2: Use Fresh Apricots

To get the perfect taste for this dish, it's recommended to use fresh apricots instead of canned or dried apricots. This is because fresh apricots have a much stronger and sweeter flavor that adds depth and complexity to the dish. If fresh apricots aren't available, you can use canned apricots or dried apricots, but you will need to adjust the flavors accordingly.

Tip #3: Add the Almonds at the End

One of the most significant mistakes that people make when making apricot chicken with almonds is adding the almonds too soon. To get the best crunch and flavor, the almonds should be added towards the end of cooking. This will help retain their crunchiness and prevent them from becoming soggy.

Tip #4: Use Olive Oil

When making apricot chicken with almonds, it's important to use olive oil instead of butter or vegetable oil. This is because olive oil has a mild flavor that won't overpower the dish's flavors. Additionally, olive oil is better for your health as it has more health benefits than butter or vegetable oil.

Tip #5: Use Spices to Enhance the Flavor

Adding spices to your apricot chicken with almonds recipe will enhance its flavor and make it more interesting. Cumin, paprika, and coriander are spices that work well with this dish. However, you don't want to use too many spices as they will overpower the other flavors in the dish.

Tip #6: Use Chicken Stock

To bring all the flavors together, you will need to use chicken stock. Chicken stock has a rich flavor that will complement the sweetness of the apricots and the nuttiness of the almonds. Additionally, chicken stock will keep your chicken moist and tender.

Tip #7: Use a Slow Cooker

If you're planning to prepare apricot chicken with almonds for a large group of people or want to save time in the kitchen, a slow cooker is an excellent option. A slow cooker will allow the chicken to cook slowly, which helps to retain the flavors and tenderness of the meat. Additionally, a slow cooker will give you time to prepare other dishes or attend to other things.

Conclusion

Making an apricot chicken with almonds recipe can be easy if you follow these valuable tips. Remember to use boneless chicken breasts, fresh apricots, olive oil, and spices to enhance the flavor of your dish. Additionally, make sure to add the almonds towards the end of cooking and use chicken stock to bring all the flavors together. Finally, if you're looking to save time or prepare a large group of people, consider using a slow cooker. With these tips, you're sure to make an unforgettable apricot chicken with almonds recipe that your family and friends will love.
