4 lb chicken wings, tips removed, and cut at the joint or use drum sticks
1 tsp kosher salt
1 c apricot preserves (such as simply fruit)
1 clove garlic, mashed
1 Tbsp chopped fresh ginger
2 Tbsp soy sauce
1/2 tsp red pepper flakes or hot sauce to taste
2 Tbsp fresh lime juice (about 1 lime)
1 tsp balsalmic vinegar
1/2 tsp cumin
2 Tbsp chopped fresh chives
fresh lime wedge for garnish

  • 1. Season wings with salt. Heat grill to medium high.
  • 2. In the bowl of a food processor (small if available), combine preserves, garlic, ginger, soy sauce, red pepper flakes, lime juice, vinegar, and cumin process until smooth. Add chives.

1 tablespoon baking powder
1-1/2 teaspoons salt

SAUCE:
1 cup (3 ounces) dried apricots
1-1/4 cups water
2 tablespoons sugar
2 tablespoons cider vinegar
2 tablespoons honey
1/8 to 1/4 teaspoon cayenne pepper

1 tablespoon vegetable oil
1/2 teaspoon black pepper
2 1/4 teaspoons salt
1 cup apricot preserves
1/2 cup fresh lime juice
1 garlic clove, smashed
1/2 teaspoon ground cumin
1/2 teaspoon cayenne

Steps:

  • Preheat broiler. Line bottom of a broiler pan with foil, then oil rack of pan.
  • Toss wings with oil, black pepper, and 2 teaspoons salt in a large bowl, then spread in 1 layer on rack of broiler pan. Broil 4 to 5 inches from heat, turning over once, until barely cooked through, 20 to 25 minutes.

1 C apricot preserves

  • Instructions 1. In a medium mixing bowl, combine all the sauces & spices. Remove about ½ cup of the mixture and refrigerate for later! 2.Add the chicken wings to a large slow cooker, then cover with the sauce mixture. Stir until wings are well-coated. Cook on low for 6-8 hours or high for 3-4 hours. 3. Once done, set oven to broil. Line a baking sheet with foil. 4. Remove wings from slow cooker and place on the lined baking sheet.
