Time 1h20m

Yield Makes 24

Number Of Ingredients 10

18 graham crackers
1 cup plus 2 tablespoons sugar
Coarse salt
1/2 cup (1 stick) unsalted butter, melted
10 ounces apricots (about 4), halved, pitted, and cut into eighths
1 tablespoon fresh lemon juice
2 packages (8 ounces each) cream cheese, room temperature
1/2 cup sour cream, room temperature
1/2 teaspoon pure vanilla extract
2 large eggs, room temperature, lightly beaten

Steps:

  • Preheat oven to 350 degrees. In a food processor, process graham crackers, 2 tablespoons sugar, and 1/4 teaspoon salt until fine crumbs form. Transfer to a medium bowl and stir in melted butter until crumbs are moistened. Wipe processor bowl clean. With a flat-bottomed 1-cup measure or glass, press crumbs evenly into a 9-by-13-inch baking pan. Bake until crust is firm, 15 minutes. Let cool on a wire rack. Reduce heat to 325 degrees.
  • In a small saucepan, bring apricots, 1/4 cup sugar, and pinch of salt to a boil over medium-high, stirring, until sugar dissolves. Reduce heat and simmer, stirring frequently, until mixture is shiny, 10 minutes. In food processor, puree apricot mixture, lemon juice, and 1 tablespoon water.
  • In a large bowl, using an electric mixer, beat cream cheese and sour cream on medium until smooth. Add 3/4 cup sugar and beat until smooth. Add vanilla and pinch of salt and beat to combine. Add eggs and beat until smooth, scraping down bowl as needed. Pour cream-cheese mixture into cooled crust and smooth top.
  • Randomly drop small spoonfuls apricot puree on cream-cheese mixture. With a skewer or thin-bladed knife, gently swirl puree. Bake just until set, about 25 minutes. Let cool slightly in pan on rack, then refrigerate until chilled and firm before cutting into squares, 2 hours.

Some recipes call for a simple mixture of flour, sugar, and butter that is pressed into the bottom of a baking dish, while others use a more complicated dough that is rolled out and layered with apricot filling. Regardless of the recipe that you choose, the end result is always delicious. One of the great things about apricot bars is that they can be adapted to suit a variety of tastes and dietary restrictions. For example, if you are looking for a healthier version of this classic treat, you can use whole wheat flour and honey instead of all-purpose flour and sugar. Alternatively, if you are looking for something decadent and indulgent, you can add chocolate chips or nuts to the filling for an extra burst of flavor. No matter how you choose to make your apricot bars, one thing is for sure: these sweet treats are sure to be a crowd pleaser. Below, we have compiled some information about the ingredients used in apricot bars as well as some tips for making the perfect batch. Ingredients for Apricot Bars Flour: One of the key ingredients in apricot bars is flour. Most recipes call for all-purpose flour, which has a neutral flavor and works well in baked goods. However, you can also use whole wheat flour for a healthier twist. Sugar: Another important ingredient in apricot bars is sugar. This sweetener helps to balance out the tartness of the apricots and adds to the overall flavor of the bars. You can use either granulated sugar or cane sugar, depending on your preference. Butter: Butter is an essential component of the dough for apricot bars. It helps to bind the dough together and gives it a rich, buttery flavor. You can use either salted or unsalted butter, depending on your taste. Apricots: Of course, the star ingredient in apricot bars is apricots! These sweet and tart fruits are what give the bars their distinctive flavor. You can use fresh apricots when they are in season, or you can use dried apricots for a year-round option. Other ingredients: Depending on the recipe, you may also need ingredients like baking powder, salt, eggs, vanilla extract, or lemon zest. These ingredients help to enhance the flavor and texture of the bars. Tips for Making Apricot Bars Here are some tips to help you make the perfect apricot bars: - Use fresh or high-quality dried apricots: The apricots you use will greatly impact the flavor of your bars. If you are using fresh apricots, make sure they are ripe and flavorful. If you are using dried apricots, look for ones that are plump and juicy, rather than tough and dry. - Chill the dough: Most apricot bar recipes call for the dough to be chilled before baking. This helps to make the dough easier to work with and reduces the risk of it spreading too much in the oven. - Press the dough evenly into the pan: When you are pressing the dough into the pan, make sure to do so evenly. This will ensure that the bars bake evenly and have a consistent texture throughout. - Make sure the apricot filling is thick: The filling for apricot bars needs to be thick enough to hold together when the bars are cut. If your filling is too thin, it may not set properly and your bars may fall apart. - Let the bars cool before cutting: After the bars are done baking, it is important to let them cool completely before cutting them. This will help to ensure that they hold together and maintain their shape. Conclusion In conclusion, apricot bars are a delicious baked good that is perfect for any occasion. Whether you are looking for a dessert to serve at a party or a sweet snack to enjoy with your morning coffee, apricot bars are a great option. With a variety of recipes to choose from and a few tips for making the perfect batch, you can easily whip up a delicious batch of these sweet treats at home. Valuable Tips When Making Apricot Bars Recipes

Apricot bars are a delicious and easy-to-make dessert that can be enjoyed at any time. Whether you're serving them as an afternoon snack or dessert after a meal, apricot bars can be the perfect treat for any occasion. However, making apricot bars can often be challenging and requires careful attention to detail. Here are some valuable tips to keep in mind when making apricot bars recipes.
1. Choose the Right Apricots
The first and most important tip when making apricot bars is to choose the right apricots. It's important to pick apricots that are ripe but not overly soft. Overripe apricots can result in a mushy filling and a soggy crust. It's best to use apricots that are slightly firm with a bright orange color. If the apricots are too hard or underripe, you risk having a tough and chewy filling. You can also choose to use fresh or dried apricots depending on your preference.
2. Prepare the Crust Properly
The crust is an essential element of the apricot bar, and it's crucial to prepare it properly. The crust should be thin and flaky, yet sturdy enough to hold the filling. When making the crust, be sure to use cold butter and cold water, as this will help keep the dough from becoming too soft and sticky. It's important not to overmix the dough or knead it too much, as this can result in a tough and chewy crust. Once the dough is formed, be sure to chill it in the refrigerator for at least 30 minutes before rolling it out.
3. Use the Right Pan
The right pan can make all the difference when making apricot bars. It's best to use a 9x13 inch baking pan, which will provide enough space for the crust and filling to spread out evenly. If you use a smaller pan, you risk overcrowding the filling and having a soggy crust. Be sure to grease the pan well before adding the crust and filling to prevent sticking.
4. Thicken the Filling
The filling is the star of the apricot bar, and it's important to achieve the right consistency. To thicken the filling, it's best to use a combination of cornstarch and sugar. This will create a thick and gooey filling that won't run or drip when cutting the bars. Be sure to mix the cornstarch and sugar together before adding it to the apricot mixture to prevent lumps.
5. Let the Bars Cool Before Cutting
One of the biggest mistakes people make when making apricot bars is cutting them too soon. It's important to let the bars cool completely before cutting them into squares. This will allow the filling to set and prevent the bars from falling apart. Once the bars are cooled, use a sharp knife to cut them into squares, and be sure to clean the knife between cuts to prevent sticking.
6. Store in the Refrigerator
Apricot bars should be stored in the refrigerator to prevent spoilage. Be sure to store them in an airtight container or covered with plastic wrap to prevent them from drying out. They can also be frozen for up to 2 months, making them a great make-ahead dessert for any occasion.
Conclusion
Making apricot bars can be a fun and delicious experience, but it requires careful attention to detail. By following these valuable tips, you can ensure that your apricot bars turn out perfectly every time. Remember to choose the right apricots, prepare the crust properly, use the right pan, thicken the filling, let the bars cool before cutting, and store them in the refrigerator. With these tips, you'll be well on your way to making the perfect apricot bars recipe.
