APPLESAUCE & RAISIN CAKE

Applesauce & Raisin Cake image

Found in the All*You Magazine from March 2009. A nice moist cake with the fun of a pretty glaze. I've made this with both raisins and dried cranberries and they both work really well. Feel free to use what suits your tastebuds the best. It is a great cake to have when you expect company as it is light and goes great with a mug of coffee.

If you can't find pastry flour, you can mix you own by combining cake flour and all-purpose flour in a ratio somewhere between two parts cake flour to one part all-purpose and one part cake flour to one part all-purpose.

Applesauce raisin cake is a delicious dessert that is perfect for any occasion. With its moist and tender crumb, warm spices, and sweet raisins, this cake is sure to be a crowd-pleaser. If you're thinking about making an applesauce raisin cake, these tips will help ensure that your cake turns out perfectly every time.

Tip 1: Use the right kind of applesauce

The first and most important tip when making an applesauce raisin cake is to use the right kind of applesauce. You want to use unsweetened applesauce that has no added sugar or preservatives. This will allow you to control the sweetness and flavor of the cake. Additionally, it's important to use a thick, smooth applesauce. Chunky applesauce can alter the texture of the cake and make it less tender.

Tip 2: Use the right amount of spices

The spices used in this cake are what give it its warm and comforting flavor. However, it's important not to overdo it with the spices. Too much cinnamon or nutmeg can overpower the other flavors in the cake. Use a light hand when measuring out the spices, and taste as you go. You can always add more, but you can't take it out once it's in.

Tip 3: Don't overmix the batter

One of the most common mistakes people make when making cakes is overmixing the batter. Overmixing can lead to a tough, dry cake. When making applesauce raisin cake, it's important to mix the ingredients just until they're combined. This will ensure that the cake has a tender crumb and is moist and flavorful.

Tip 4: Don't overbake the cake

Overbaking the cake can also lead to a dry, tough cake. It's important to check the cake for doneness a few minutes before the recommended baking time. To do this, insert a toothpick into the center of the cake. If it comes out clean, the cake is done. If there are still crumbs on the toothpick, the cake needs more time in the oven. Keep a close eye on the cake during the last few minutes of baking to ensure that it doesn't overcook.

Tip 5: Use fresh ingredients

When making an applesauce raisin cake, it's important to use fresh ingredients. Old spices or expired baking powder can affect the flavor and texture of the cake. Additionally, using fresh eggs and butter will ensure that the cake rises properly and has a nice, tender crumb.

Tip 6: Add the raisins at the right time

Raisins are an important ingredient in this cake, as they add sweetness and texture. However, it's important to add them at the right time. If you add the raisins too early, they can sink to the bottom of the cake. To prevent this, toss the raisins in a little bit of flour before adding them to the batter. This will help them stay suspended in the batter and distribute evenly throughout the cake.

Tip 7: Let the cake cool completely before frosting

If you're planning on frosting your applesauce raisin cake, it's important to let the cake cool completely before you do so. If you frost a warm cake, the frosting can melt and become runny. Additionally, letting the cake cool will allow the flavors to settle and develop, resulting in a more delicious cake.

Tip 8: Store the cake properly

Once you've made your applesauce raisin cake, it's important to store it properly to ensure that it stays fresh and delicious. If you're not serving the cake right away, wrap it tightly in plastic wrap and store it in the refrigerator. The cake will stay fresh for up to four days. If you're freezing the cake, wrap it tightly in plastic wrap and aluminum foil and store it in the freezer. The cake will stay fresh for up to three months.
Conclusion
Making an applesauce raisin cake is a delicious way to enjoy the warm flavors of fall. By following these tips, you can ensure that your cake turns out perfectly every time. Use the right ingredients, mix the batter properly, don't overbake, and store the cake properly to enjoy it for days to come.
