1 cup old-fashioned oats
1 cup dark raisins
1/2 teaspoons salt
1 cup packed dark brown sugar
1 cup unsweetened applesauce
1/4 cup vegetable oil
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
2 large eggs
13 by 9-inch baking pan

Steps:

  • Bring the water to a boil in a medium-size saucepan over moderately high heat. Stir in the oats. When the liquid returns to a boil, stir in the raisins and salt. Reduce the heat and simmer 4 to 5 minutes, stirring occasionally, until the oats are soft and the water is absorbed. Remove from heat, stir in the sugar, applesauce, and oil. Cool to lukewarm. Meanwhile, heat the oven to 350 degrees, and grease the pan. Put the flour, baking soda, cinnamon, and nutmeg into a large bowl. Stir to mix well. Stir the eggs into the oat mixture. Add the flour mixture, and stir just until moistened. Spread in the prepared pan and bake 30 to 40 minutes, or until the cake starts to shrink from the sides of the pan and a wooden pick inserted in the center of the cake comes out clean. 3/4 cup flaked coconut
1/2 cup packed brown sugar
1/3 cup chopped pecans or walnuts
1/4 cup butter or margarine, melted
3 tablespoons milk

Steps:

  • In 1-quart saucepan, heat applesauce to boiling over medium-high heat. Stir in oats. Let stand 20 minutes.
  • Heat oven to 350°F. Grease bottom and sides of 9-inch square pan with shortening. In large bowl, beat 1/2 cup butter and granulated sugar with electric mixer on medium speed until light and fluffy. Beat in vanilla and eggs until fluffy. Beat in applesauce mixture just until mixed. Stir in flour, baking soda, cinnamon, nutmeg and salt, scraping bowl once, just until blended. Pour into pan.
  • Bake 40 to 50 minutes or until toothpick inserted in center comes out clean.

1 ⅛ cups applesauce
¾ cup milk
1 ½ cups all-purpose flour
1 ½ cups rolled oats

Steps:

1 1/4 cups unsweetened applesauce
3/4 cup quick-cooking oats
3/4 cup raisins
1/2 cup butter or 1/2 cup margarine, softened
3/4 cup brown sugar, firmly packed
1 egg
1 1/2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1/4 teaspoon ground cloves

Steps:

  • Bring applesauce to a boil in a small saucepan; remove from heat.
  • Stir in oats and raisins; cover and let stand 20 min.
  • (Mixture will be thick and will thicken up more while standing, so you should have the rest of the batter ready by the time the 20 min. are up.) Beat butter at medium speed with an electic mixer until fluffy.
  • Gradually add sugar, beating well.
  • Add egg and beat well.
  • Combine dry ingredients and add gradually to creamed mixture, mixing just until blended after each addition.
  • Stir in applesauce mixture.
  • Pour batter into a 9-in. square pan that has been sprayed with nonstick spray.
