My first MIL used to make this cake. I adored it served with a dollop of softly whipped cream. She passed away more than 35 years ago but I think of her every time I make this or one of her other recipes. Loved that lady!

1/2 c sugar
1 1/4 c flour
1 tsp ground ginger
1/4 tsp cinnamon
1 1/2 tsp salt
1/2 c molasses
1/2 c neutral oil
1 egg
1/2 c applesauce
1 tsp baking soda
1/2 c boiling water

Steps:

  • 1. Combine dry ingredients
  • 2. add molasses, oil, egg and applesauce. Blend well
  • 3. Add soda to boiling water and mix immediately in to the rest of the ingredients. Pour in to an 8" x 8*' greased pan. Bake at 350 45 - 50 minutes
  • 4. Optional Glaze: 1 cup icing sugar, 1 tbsp lemon juice. Mix and pour over cake while warm

Beat all ingredients except yogurt and crystallized ginger with electric mixer on low speed 30 seconds, scraping bowl constantly. Beat on medium speed 3 minutes, scraping bowl occasionally. Pour into pan.3. Bake 30 to 35 minutes or until toothpick inserted in center comes out clean.
