1 1/4 cups old-fashioned rolled oats
1 1/4 cups unsweetened applesauce
1/2 cup milk
1 large egg
1 teaspoon vanilla extract
4 Tablespoons butter (, melted (or coconut oil))
1/3 cup granulated sugar
1 cup whole wheat flour
1 teaspoon baking powder
3/4 teaspoon baking soda
1 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 cup raisins (, or craisins, or chocolate chips)

Steps:

  • Preheat oven to 375 degrees F. Line a 12-cup muffin tin with liners or grease with non-stick cooking spray. Set aside.
  • In a medium bowl, stir together the oats, applesauce, milk, egg, vanilla, butter and sugar.
  • In a large bowl, mix the flour, baking powder, baking soda, cinnamon, salt and cranberries or raisins.
  • Make a well in the center of the dry ingredients and pour in the applesauce mixture. Stir just until combined (don't overmix!)

2/3 cup all-bran cereal (not flakes)
1 3/4 cups unsweetened applesauce
1 egg, lightly beaten
3/4 cup chopped dates
1/3 cup packed light brown sugar (I use brown sugar twin))
3 tablespoons becel margarine, melted
1 1/2 cups whole wheat flour
1 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon salt

Steps:

  • Preheat oven to 375f degrees.
  • Spray muffin tins with nonstick cooking spray.
  • In a medium bowl, combine bran cereal and applesauce, let stand 5 minutes.
  • Stir in egg, dates, brown sugar and margarine.
  • In a large bowl, blend flour, baking soda, cinnamon and salt.
  • Stir cereal mixture into dry ingredients until just moistened.
  • Spoon batter into muffin cups.
  • Bake for 25 minutes or until set and golden.
  • Cool on rack.
  • This can also be made into a loaf, bake for 45 min to 1 hour

1 cup all-purpose flour
1 cup wheat bran
1 teaspoon baking powder
1 teaspoon baking soda

1/4 cup brown sugar, packed
2 tablespoons vegetable oil
1 cup 1% low-fat milk
