1 cup raisins or 1 cup dried currant
4 eggs
3/4 cup vegetable oil
1 1/4 cups honey or 1 1/4 cups maple syrup
1 teaspoon pure vanilla extract
1 2/3 cups unsweetened applesauce
3 cups finely grated carrots
2 tablespoons sesame seeds

Steps:

  • Preheat the oven to 350 degrees F.
  • Oil a 10-inch bundt or tube pan or a 9x13-inch baking pan.

2 teaspoons baking soda
1 1/2 teaspoons cinnamon

3 cups carrots, coarsely chopped

Steps:

  • In a large mixing bowl, combine flour, sugar, baking soda, cinnamon, nutmeg and salt.
