2 cups all purpose flour
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 1/2 Tablespoon cinnamon
1/2 teaspoon nutmeg
1 teaspoon salt
4 eggs
1 cup vegetable oil
1 cups brown sugar
1 1/2 teaspoons pure vanilla extract
1 2/3 cups unsweetened applesauce
3 cups finely grated carrots
NOTE: Can add one cup of raisins

Steps:

  • Preheat the oven to 350F. Grease at 9x13 inch baking pan. Sprinkle the pan with a bit of flour and set aside.
