APPLESAUCE CAKE WITH CREAM CHEESE AND HONEY FROSTING

Applesauce Cake With Cream Cheese and Honey Frosting image

This super-simple cake, which requires one bowl and one cake pan, comes from Julia Turshen's cookbook "Now & Again," and it's so easy to make you find yourself doing so often, especially throughout the fall when apples are on your mind. (It'd be especially great for Rosh Hashana, the Jewish new year, or for novice or time-pressed Thanksgiving bakers.) The cake's texture and appeal are similar to those of banana bread; if you like, you can stir a large handful or two of raisins, nuts or both into the batter just before you scrape it into the pan. And although you can use homemade applesauce for this, know that store-bought is just fine.

Time 1h45m

Yield 8 to 10 servings

Number Of Ingredients 14

2 cups/255 grams all-purpose flour
1 tablespoon ground cinnamon
1 tablespoon ground ginger
1 1/2 teaspoons kosher salt
2 teaspoons baking soda
2 eggs, beaten
1/2 cup/100 grams sugar
1/2 cup/120 milliliters buttermilk or plain yogurt
1 1/2 cups/400 grams unsweetened applesauce
1/3 cup/80 milliliters canola or other neutral oil
6 ounces/170 grams cream cheese, at room temperature
2 tablespoons sour cream
1/4 cup/60 milliliters honey
Pinch of kosher salt

Steps:

  • Make the cake: Heat the oven to 350 degrees. Spray the bottom and sides of a 9-inch round cake pan with baking spray and line the bottom with a circle of parchment paper.
  • In a large bowl, whisk together the flour, cinnamon, ginger, salt and baking soda. Add the eggs, sugar, buttermilk, applesauce and oil and whisk gently just until everything is combined. Use a rubber spatula to scrape the batter into the prepared pan and then smooth the surface so it is even.
  • Bake the cake until it is just barely firm to the touch and a toothpick inserted in the center comes out clean, about 55 minutes. Set the cake aside on a wire rack to cool to room temperature.
  • Use a dinner knife to loosen the edges of the cake from the pan sides and then invert it onto a work surface. Peel off and discard the parchment. Invert the cake one more time onto a serving platter.
  • Make the frosting: In a large bowl, combine the cream cheese, sour cream, honey and salt and whisk together aggressively until the cream cheese is slightly aerated (you can also do this with a handheld electric mixer or in a stand mixer).
  • Spread the frosting over the top of the cake and don't worry too much about making this perfect. A not-too-perfect cake is so much better than a perfect cake. Cut into wedges and serve. Leftovers can be wrapped in plastic wrap and stored in the refrigerator for up to 3 days.

Time 1h2m

Number Of Ingredients 14

1/2 cup butter
1/2 cup firmly packed brown sugar
1/2 cup pure maple syrup
2 eggs
1 3/4 cups unbleached all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon ground cloves
1 cup unsweetened applesauce ((or two 4 ounce apple baby food jars))
8 ounces cream cheese (softened)
1/2 cup butter (softened)
2 cups powdered sugar (sifted)
2 teaspoons pure vanilla extract

Steps:

  • Preheat the oven to 350ºF. Grease two clean tuna cans and one 9x5 loaf pan. Line the sides and bottom of the tuna cans with parchment and grease again.
  • In the bowl of a stand mixer fitted with the paddle attachment, cream brown sugar and butter. Add the maple syrup and mix until incorporated. Add the eggs and beat well.
  • In a medium bowl, combine flour, baking soda, baking powder, cinnamon, and cloves.
  • Alternately add the dry ingredients and the applesauce to the butter mixture, mixing just until incorporated.
  • Pour the batter evenly into the prepared pans, filling the tuna cans about 3/4 full. Bake about 27 minutes or until a toothpick inserted in the center of a cake comes out clean. Allow the cakes to cool in the pans for 15 minutes before carefully inverting onto a wire rack to cool completely before frosting.
  • Place cream cheese in the bowl of a stand mixer fitted with the paddle attachment. Beat on low about one minute, ensuring that it is soft and pliable. Stop the mixer and scrape down the bowl. Add the butter and beat on medium speed for one minute, until thoroughly combined.
  • Turn the mixer on low and add the powdered sugar, followed by the vanilla extract. Beat until almost incorporated.
  • Stop the mixer and scrape down the bowl and beater. Beat on medium speed until the frosting is velvety soft.
  • To frost the cake, spread frosting on top of one of the small cakes, top with the other, and spread frosting all around the outside. Use any remaining frosting to top the loaf cake, or drizzle the loaf with vanilla glaze.

Spicy Ginger Applesauce Cake With Cream Cheese Frosting image

This simple sheet cake is packed with three kinds of spicy ginger: fresh, ground and crystallized. The cake is delicious on its own, but cream cheese frosting and a sprinkle of crystallized ginger push it closer to dessert. The cake can be made a day in advance, covered and refrigerated and brought to room temperature before serving. The crystallized ginger should be sprinkled on just before serving as it will weep in the fridge.

Yield 12 servings

Number Of Ingredients 24

1 1/4 cups/275 grams light brown sugar
2 large eggs
2 cups/480 milliliters unsweetened applesauce
3/4 cup/180 grams neutral oil like canola or grapeseed
2 tablespoons fresh ginger, peeled and finely grated
1 tablespoon ground ginger
1 teaspoon finely grated orange zest
1 teaspoon ground cinnamon
1 teaspoon ground cardamom
1/4 teaspoon ground allspice
1 teaspoon vanilla extract
3/4 teaspoon kosher salt
2 cups/255 grams all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 cup/85 grams finely chopped crystallized ginger
12 ounces/350 grams cream cheese, softened
1/2 cup/115 grams unsalted butter, softened
2 1/4 cups/226 grams confectioners' sugar, sifted
1 tablespoon fresh ginger, peeled and finely grated
1 teaspoon lemon zest
1 teaspoon vanilla extract
Pinch of kosher salt
1/2 cup/85 grams finely chopped crystallized ginger

Steps:

  • Heat oven to 350 degrees. Butter and flour a 9-by-13-inch glass or light-colored metal baking pan.
  • In a large bowl, whisk sugar and eggs until light, about 1 minute. Add applesauce, oil, fresh and ground ginger, orange zest, cinnamon, cardamom, allspice, vanilla extract and salt. Whisk to combine.
  • Add the flour, baking soda and baking powder, and whisk until just combined. Fold in 1/2 cup chopped candied ginger.
  • Pour the batter into the prepared pan, smooth the top and firmly tap the pan on a countertop to release air bubbles. Bake the cake until golden and puffed, and a tester inserted into the center comes out clean, 25 to 35 minutes. Cool the cake in the pan on a rack.
  • When the cake is cool, make the frosting: Add the cream cheese and butter to the bowl of a stand mixer fitted with the whisk attachment. Mix on medium-high until smooth, stopping the mixer occasionally to scrape the bottom and sides of the bowl. Turn the speed to low, and slowly add the confectioners' sugar. Mix until the sugar is moistened, then turn the mixer speed up to medium-high and whip until smooth. Scrape down the bottom and sides of the bowl. Add the ginger, lemon zest, vanilla and salt, and mix on low.
  • Spread the frosting over the cooled cake in dramatic swoops and swirls, then sprinkle the remaining 1/2 cup crystalized ginger on top. Serve at room temperature.

Apple sauce and cream cheese frosting are a match made in heaven. They complement each other so well in terms of taste and texture. Apple sauce cake with cream cheese frosting is the perfect combination of sweet, tangy, and creamy flavors. It's a classic dessert that everyone loves. Here are some valuable tips to help you make the perfect applesauce cake with cream cheese frosting recipes.

Tip 1: Use Homemade Apple Sauce

Using homemade apple sauce in your cake recipe will give you a more natural and fresher taste. Homemade apple sauce is easy to make and requires only a few ingredients. All you need are apples, sugar, cinnamon, and water. Peel and core the apples, chop them into small pieces, and place them in a pot with the remaining ingredients. Boil the mixture until the apples become soft, then mash them with a fork or blend them until smooth.
Pro tip:
You can use different varieties of apples to make your apple sauce. Granny Smiths are sour, while Honeycrisp are sweet. Choosing the right apples can help you adjust the sweetness and taste of your apple sauce to your liking.

Tip 2: Add Spices

Adding spices such as cinnamon, nutmeg, and ginger can enhance the flavor of your apple sauce cake. These spices are perfect for fall and winter desserts because they provide a warm and cozy aroma. You can add them directly to the cake batter or sprinkle them on top of the cream cheese frosting.
Pro tip:
Be careful when adding spices as they can overpower the cake's flavor. Start with a small amount and adjust as needed.

Tip 3: Use Buttermilk

Using buttermilk in your apple sauce cake recipe adds a tangy flavor and helps keep the cake moist. It's also acidic, which reacts with baking soda to make the cake rise. You can use low-fat buttermilk or make your own by adding a tablespoon of lemon juice or vinegar to regular milk.
Pro tip:
Be sure to let the buttermilk come to room temperature before adding it to the cake batter. Cold buttermilk can cause the cake to become dense.

Tip 4: Don't Overmix the Batter

Overmixing the batter can cause the cake to come out tough and rubbery. Mix the ingredients until they are just combined. It's okay if there are a few lumps in the batter. You can also fold in the apple sauce gently to avoid overmixing.
Pro tip:
Use a wooden spoon or spatula to mix the batter by hand. Overmixing is more common when using an electric mixer.

Tip 5: Don't Overbake the Cake

Overbaking the cake can cause it to become dry and crumbly. Instead, bake the cake until a toothpick inserted in the center comes out clean. The exact baking time will depend on your oven, so keep an eye on the cake.
Pro tip:
Check the cake's progress after 25-30 minutes of baking. If the cake is browning too quickly, cover it with foil and continue baking.

Tip 6: Make the Cream Cheese Frosting Ahead of Time

Making the cream cheese frosting ahead of time can save you time and stress. You can make the frosting a day or two in advance and refrigerate it until you're ready to use it. Let the frosting come to room temperature before frosting the cake.
Pro tip:
If the frosting is too thick, add a tablespoon of milk to thin it out. If it's too thin, add more powdered sugar.

Tip 7: Garnish with Caramel Sauce

Drizzling caramel sauce over the cake adds an extra level of sweetness and decadence. You can either make your own caramel sauce or buy it from the store. You can also garnish the cake with chopped nuts or whipped cream.
Pro tip:
Warm the caramel sauce in the microwave or on the stove before drizzling it over the cake. This will make it easier to pour and spread.

Conclusion:

Making an applesauce cake with cream cheese frosting is easy and delicious. By using homemade apple sauce, adding spices, using buttermilk, not overmixing the batter, not overbaking the cake, making the cream cheese frosting ahead of time, and garnishing with caramel sauce, you can take your cake to the next level. Use these valuable tips to impress your family and friends with your baking skills.
