NO-FAT BANANA APPLESAUCE MUFFINS

No-Fat Banana Applesauce Muffins image

I got this recipe out of a Gooseberry Patch cookbook and it is one of my stand-by recipes when I am watching my calories and fat. Since I am doing just that right now, thought I would put it on the zaar for easy access and hopefully someone else likes this recipe as good as I do. (I prefer to sub 3/4 of the white flour for whole wheat and use brown sugar instead of granulated sugar. I think fresh nutmeg is the key in this!)

I was looking for a banana/apple recipe and this one is really good. The banana flavor is great. It comes from the AMA Family Health Cookbook. The picture I took was better than this...guess I...

APPLESAUCE BANANA MUFFINS

Applesauce Banana Muffins image

This is a re-make of a recipe I've had forever...A great way to use up that one lingering banana in the fruit bowl, and the substitution of whole wheat flour for part of the regular flour as well as the splenda for part of the sugar makes these a bit healthier than lots of muffins out there. And they're delicious! Makes 2 dozen regular size muffins or 1 dozen regular and 1 dozen minis.

BANANA APPLESAUCE CRANBERRY GLUTEN FREE MUFFINS

Banana Applesauce Cranberry Gluten free muffins image

Wow, that name is a mouthful How about "crananasauce muffins"? These turned out moist and delicious. I do not need to eat GF, but I make it for friends. Non the less, I loved these too. They could be made dairy free with a coconut oil substitute for the butter.

Provided by Linda Mericle @bakermom2

Categories     Other Breakfast

Number Of Ingredients 13

4 tablespoon(s) butter, melted
1/3 cup(s) sugar
1/2 cup(s) applesauce, unsweetened
1 - banana, overripe and slightly mashed
1 - egg
1 tablespoon(s) cinnamon or pumpkin pie seasoning
1 teaspoon(s) vanilla
3/4 cup(s) gluten free baking mix
1/8 teaspoon(s) xanthum gum
1 tablespoon(s) baking powder
1/2 teaspoon(s) salt
1/3 cup(s) dried cranberries
- cinnamon sugar for topping

Steps:

  • Preheat the oven to 375. In a mixing bowl put the melted butter, sugar, egg, vanilla, smashed banana and applesauce. Whisk this together.
  • In another bowl whisk the GF baking mix, cinnamon, baking powder, salt and xanthum gum.
  • Mix the wet ingredients with the dry. Stir gently until mixed. It too runny, add a little more baking mix. Then add the Cranberries. I just added a big handful. Gently stir in.
  • Spoon into prepared muffin pans. Sprinkle tops with the cinnamon sugar. Bake for about 12 minutes or until toothpick comes out with crumbs, not batter. Let cool slightly before moving. Do not cover until totally cool. GF items do not seem, in my experience, to like steam.

Making applesauce banana muffins is a delicious, healthy and enjoyable experience. Whether you prefer to have them for breakfast or snack, they are a perfect idea to have anytime. With the right ingredients and recipe, anyone can make these muffins at home without any fuss. In this article, we'll discuss some valuable tips that you should consider when making applesauce banana muffins recipes.

Ingredients:

All muffin recipes start with a list of ingredients, and applesauce banana muffins are no exception. Here are some ingredients you should get:
  • 1 1/2 cups of all-purpose flour
  • 1 teaspoon of baking soda
  • 1/2 teaspoon of baking powder
  • 1/2 teaspoon of salt
  • 1/2 cup of unsweetened applesauce
  • 1/2 cup of mashed ripe banana
  • 1/2 cup of brown sugar
  • 1/4 cup of vegetable oil
  • 1 egg
  • 1 teaspoon of vanilla extract

Preparation:

Once you have gathered all of the ingredients, it's time to prepare them for muffin making. The following are some preparation guidelines for the perfect muffins:
  • Preheat your oven at 350 degrees Fahrenheit or 175 degrees Celsius
  • Prepare your muffin pan by either greasing with cooking spray, muffin liners or parchment paper
  • In a mixing bowl, combine your dry ingredients (flour, baking soda, baking powder, and salt) and whisk them together
  • In a separate bowl, combine your wet ingredients (applesauce, mashed banana, brown sugar, vegetable oil, egg, and vanilla extract) and stir until they are well combined
  • Add the dry ingredients to the wet ingredients and stir until the mixture is well combined
  • Scoop the mixture into your prepared muffin pan
  • Bake your muffins for 20-25 minutes until they are golden brown and cooked through.
  • Let your muffins cool down for a few minutes before removing them from the pan

Valuable Tips:

In order to make the best applesauce banana muffins, the following are some valuable tips that you should consider:
Select ripe bananas:
One of the most important ingredients in this recipe is the banana. It is essential to select ripe bananas as they will add more sweetness and flavor to your muffins. Ripe bananas are those that have yellow skins spotted with brown spots or black speckles. If you use unripe bananas, your muffins won't be as sweet, and they'll turn out dense and gummy.
Don't overmix your ingredients:
Overmixing your muffin batter can cause your muffins to be dense and chewy. When you mix your ingredients too much, you will end up developing too much gluten which will toughen your muffins. You should mix your ingredients until they are just combined, and there are no lumps. This way, your muffins will be moist, tender, and fluffy.
Use unsweetened applesauce:
Applesauce is an excellent substitute for oil and butter in muffins, and it also adds natural sweetness to your baked goods. However, to keep your muffins healthy, you should use unsweetened applesauce which contains no added sugar. Using sweetened applesauce will make your muffins too sweet and may cause them to be dense and sticky.
Measure your ingredients correctly:
Measuring your ingredients correctly is crucial when baking muffins. If you use too much flour, your muffins will be dry and dense, and if you use too much liquid, they will be sticky and gloopy. You should use a food scale or measuring cups to ensure that you measure your ingredients accurately. It's also important to measure your ingredients at room temperature.
Adjust for altitude:
If you live in high altitude areas, you will need to adjust your muffin recipes to accommodate for the differences in air pressure. At high altitudes, the air pressure is lower, and this affects baking time and temperature. You will need to add more liquid to your muffin batter to make up for the reduced moisture in the air. You should also adjust your oven temperature to 375 degrees Fahrenheit and add 3-5 minutes to your baking time.
Experiment with add-ins:
Applesauce banana muffins are delicious on their own, but you can also experiment with different add-ins to make them even more exciting. You can add nuts, such as walnuts or pecans, to add crunch and texture to your muffins. You can also add dried cranberries, raisins, or chocolate chips to add some sweetness and flavor. You can either mix your add-ins into your muffin batter or sprinkle them on top of your muffins just before baking. In conclusion, making applesauce banana muffins is easy and a great way to enjoy the delicious and healthy treat. By following the above tips, you can create the perfect muffins that are moist, tender, fluffy, and full of flavor. So, get started in the kitchen today and enjoy the taste of these lovely muffins.
