Time 4h55m

Yield 20 to 24 cookies

Number Of Ingredients 9

2 cups plus 2 tablespoons all-purpose flour, plus more for dusting (see Cook's Note)
1/8 teaspoon baking soda
1/8 teaspoon fine salt
1 teaspoon pure vanilla extract
1 large egg
1 1/2 sticks (12 tablespoons) unsalted butter, at room temperature
1/2 cup granulated sugar
1/4 cup confectioners' sugar
1/4 cup red, white and blue edible confetti stars, plus more for sprinkling

Steps:

  • Whisk the flour, baking soda and salt in a medium bowl. Mix the vanilla and egg with a fork in a small bowl.
  • Beat the butter, granulated sugar and confectioners' sugar together in the bowl of a stand mixer on low speed until the butter has picked up the sugars, about 30 seconds. (If using a hand mixer, beat about 2 minutes.) Increase the speed to medium and beat until slightly creamy, stopping halfway to scrape the bowl, about 1 minute (about 3 minutes with a hand mixer).
  • Reduce the speed to low, slowly add in the egg mixture and beat until combined. Add the flour mixture a heaping cup at a time in 2 additions, stopping a few times to scrape the bowl and beaters. (If using a hand mixer, increase the speed as the dough gets thicker to keep the beaters spinning.) Once all the flour is just incorporated, add the confetti stars, increase the speed to medium (higher with a hand mixer) and beat until the dough is very smooth, about 2 minutes (about 5 minutes with a hand mixer).
  • Turn the dough out of the bowl and bring it together. Divide the dough into 2 even pieces, each about 11 ounces. Shape each piece into a 6-inch square and wrap in plastic wrap. Refrigerate the dough for at least 3 hours and up to overnight.
  • Position oven racks in the upper and lower thirds of the oven and preheat to 350 degrees F. Line 2 baking sheets with parchment. Take the dough pieces out of the refrigerator and let soften until just pliable but still cool and firm, about 15 minutes.
  • Dust a piece of parchment with flour. Dust one square of the dough with flour and roll it to about 1/4 inch thick. Lift the dough occasionally by sliding a metal spatula or bench scraper underneath to make sure it isn't sticking to the parchment. Cut out cookies into stars and letters with 3-inch cutters, as close together as possible; transfer to one of the prepared baking sheets, leaving 1 inch between them. Gather together the scraps and repeat with the remaining dough. Sprinkle more stars over the top of the cookies and gently press down so they stick. Freeze the cookies on the baking sheet while you repeat with the other dough. Freeze the cookies about 10 minutes before baking.
  • Bake, rotating the baking sheets from front to back and top to bottom halfway through, until the cookies are light golden brown, 18 to 20 minutes. Let cool completely on the baking sheets on a cooling rack, about 30 minutes.

Preparing for Election Day is always an exciting time, and one way to celebrate the occasion is by making delicious Apples Restaurant Election Day Cookies. These cookies are easy to make and are a great way to show your patriotism. Before you start baking, here are some valuable tips to make sure your cookies come out perfectly. 1. Choose the Right Apples The first step in making Election Day cookies is to choose the right apples. You want to use apples that are firm, crisp, and tart. Granny Smith apples are a great choice for baking since they hold up well and retain their tart flavor even after baking. To prepare your apples, make sure to wash them thoroughly and remove any dirt or debris. You can also peel your apples if you prefer, but leaving the skin on adds extra fiber and nutrients to your cookies. 2. Use Quality Ingredients To make delicious cookies, it's important to use high-quality ingredients. Invest in butter, flour, sugar, eggs, and vanilla extract that are of good quality. Using premium ingredients will elevate the flavor of your cookies and will make them taste even better. 3. Prepare Your Dough Properly To ensure that your cookies turn out perfectly, it's important to prepare your dough properly. Start by creaming your butter and sugar together until it's light and fluffy. Then, add your eggs and vanilla extract and mix well. Next, mix in your dry ingredients, including flour, baking powder, and salt. Mix until just combined and then fold in your chopped apples. Be careful not to over-mix the dough as this can result in dense, tough cookies. 4. Chill Your Dough Before you start shaping and baking your cookies, it's important to chill your dough. Chilling the dough helps it hold its shape while baking and allows the cookies to develop a richer flavor. To chill your dough, wrap it in plastic wrap and refrigerate for at least 30 minutes (or up to 2 hours). Chilling the dough also makes it easier to handle when shaping into cookies. 5. Shape Your Cookies Once your dough is chilled, it's time to shape your cookies. Use a cookie scoop or spoon to scoop out portions of dough and shape them into balls. Then, place them onto a baking sheet lined with parchment paper, leaving enough space between each cookie to allow for spreading. To make your cookies look festive for Election Day, you can roll your cookie dough balls in red, white, and blue sprinkles before baking. 6. Bake Your Cookies Bake your cookies at 350°F for 10-12 minutes or until they are lightly golden. You want to make sure that the cookies are cooked through, but not over-baked as this can result in dry, crumbly cookies. Once your cookies are finished baking, let them cool on a baking sheet for a few minutes before transferring them to a wire rack to cool completely. 7. Store Your Cookies Properly To keep your Election Day cookies fresh, it's important to store them properly. Place your cooled cookies in an airtight container and store them at room temperature for up to five days. You can also store your cookies in the freezer for up to three months. Simply place your cooled cookies in a freezer-safe container or bag and freeze until you're ready to enjoy them. In Conclusion, Now that you have these valuable tips, you're ready to make delicious Apples Restaurant Election Day Cookies. Remember to choose the right apples, use quality ingredients, prepare your dough properly, chill your dough, shape your cookies, bake them to perfection, and store them properly. With these tips, your Election Day cookies will be a hit with your family and friends, and you'll be able to celebrate the occasion in a delicious and patriotic way.
