Steps:

  • Cut bacon in inch squares and fry out.
  • Remove bacon.
  • Reserve grease.
  • Clean the fry pan.
  • Add 1 tablespoon of bacon fat to hot fry pan and add onions.
  • Brown the onions until golden and translucent.
  • Add more fat if needed.
  • Add apples and cook until tender.
  • Taste, if mixture is a bit sharp, add brown sugar.

  • Top w/ crumbled bacon.

1 ½ teaspoons rubbed sage
1 teaspoon dried minced garlic
1 teaspoon dried thyme leaves
1 teaspoon salt
½ teaspoon ground allspice
½ teaspoon ground paprika
2 tablespoons olive oil
4 (5 ounce) boneless pork chops, about 1 inch thick
1 medium sweet onion, thinly sliced
2 medium Red Delicious apples, cored and thinly sliced
½ cup apple juice
1 ½ tablespoons brown sugar

Steps:

  • Mix flour, sage, garlic, thyme, salt, allspice, and paprika together in a small bowl. Set aside 2/3 of the spice mixture for later use. Sprinkle remaining spice mixture onto the pork chops, coating all sides.

6 medium size apples, I used MacIntosh
1 small onion, very thinly sliced
1 -2 tablespoon maple syrup
1/8 teaspoon cinnamon
nutmeg (just a sprinkle)

Steps:

  • Turn your oven up to 350°F.
  • While your oven is heating, peel and core and slice your apples.
  • Finely slice your onions.
  • Add the sliced apples to an oven proof dish.
  • Add the onions.
  • Drizzle the maple syrup over the apples and onion mixture.
