Steps:
- 1. Mix together flour, baking powder, salt, 1/2 t. cinnamon and 1/2 t. nutmeg. In a separate bowl cream together butter, 1/2 cup sugar, and 1/2 cup brown sugar. Add eggs and vanilla, mix well. Combine flour mixture and sugar mixture and blend well, then add apple. In a small bowl mix the 2 T of sugar and 1 t of cinnamon to roll the dough in. Shape dough into balls and roll each in the cinnamon sugar. Bake on greased cookie sheet at 350 degrees for 15 minutes. Cool on a rack. Enjoy.

- In a large bowl, cream together butter and sugars. Mix in vanilla and egg until smooth.
- In a medium bowl whisk together flour, pudding mix, baking soda, cinnamon, salt, and nutmeg. Add dry mixture to wet ingredients and mix until combined well. Stir in apples and white chocolate chips (if using). Chill in the fridge for one hour. *I tried it with chilling and not chilling and didn't notice a big difference.
- For the Cinnamon Sugar: In a small bowl, combine the sugar and cinnamon.
- Preheat oven to 350 degrees and line baking sheets with parchment paper. Take around 2 Tablespoons of dough and roll into a ball and then roll generously in the cinnamon sugar. Place on prepared baking sheet.
- Bake for 10-12 minutes. Allow cookies to cool completely on the baking sheet - they will continue to bake as they cool. Store in airtight container at room temperature.

- Baking powder

Wet ingredients:
- Butter
- Brown sugar
- White sugar
- Eggs
- Vanilla extract
- Granny smith apple
Instructions
- Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the dry ingredients.
- In a large bowl, beat the butter and sugars until light and fluffy. Add eggs and vanilla and beat again.
- Slowly stir in the dry ingredients until just combined.
- Peel and grate the apple and stir it into the dough. The dough will be sticky and moist.
- In a small bowl, combine sugar and cinnamon for rolling the cookies.
- Scoop dough into 2 tablespoon-size balls and roll into the cinnamon-sugar mixture.
- Place the balls onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 12-14 minutes or until cookies are lightly golden brown and set in the center.
- Cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
