3 tablespoons water
4 teaspoons cornstarch
1 egg, beaten
3/4 cup half-and-half cream
3/4 cup sugar
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
4 medium Red Delicious apples, peeled, sliced
Pastry for double-crust pie (9 inches)
2 tablespoons butter
1 tablespoon milk
1 tablespoon cinnamon-sugar

Steps:

  • In a small bowl, mix water and cornstarch until dissolved. Add egg, cream, sugar, cinnamon and nutmeg. Place apples in a large bowl; pour cream mixture over and stir to coat. Line a 9-in. pie pan with the bottom pastry. Pour apple mixture into crust; dot with butter. Top with remaining pastry; flute edges and cut slits in top. Brush with milk and sprinkle with cinnamon-sugar. Bake at 350° for 55 minutes or until golden brown.

4 tablespoons/55 grams unsalted butter (1/2 stick)
6 to 8 medium apples, such as Honeycrisp, Granny Smith or Gala, peeled, cored and cut into 1/2-inch dice (about 6 1/2 cups/1 kilogram)
2 tablespoons lemon juice (from 1 lemon)
1 1/2 teaspoons vanilla extract
1 cup/220 grams light or dark brown sugar
1 tablespoon ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon ground nutmeg
3/4 teaspoon fine sea salt
1/2 cup/100 grams granulated sugar
1/3 cup/45 grams all-purpose flour

Steps:

  • In a medium pot, melt butter over medium heat. Add apples, tossing to coat in the butter. Add lemon juice, vanilla, brown sugar, cinnamon, ginger, nutmeg and salt and stir to combine. Continue to cook, stirring occasionally, until the sugar dissolves and the apples start to soften, 5 to 6 minutes.
  • In a small bowl, whisk together granulated sugar and flour. Add to the pot and stir well to combine. Stir constantly until the mixture thickens, 2 to 3 minutes.
  • Let the filling cool completely before using. (You can speed this process up by spreading it into an even layer on a baking sheet.) The filling will keep, refrigerated, for up to 3 days.

10 cups water
4 ½ cups white sugar
1 cup cornstarch
2 teaspoons ground cinnamon
1 teaspoon salt
¼ teaspoon ground nutmeg

Steps:

  • In a large bowl, toss apples with lemon juice and set aside. Pour water into a Dutch oven over medium heat. Combine sugar, cornstarch, cinnamon, salt, and nutmeg in a bowl; add to water, stir well, and bring to a boil. Boil for 2 minutes, stirring constantly.
  • Add apples and return to a boil. Reduce heat, cover and simmer until apples are tender, about 6 to 8 minutes. Cool for 30 minutes.
  • Ladle into 5 freezer containers, leaving 1/2 inch headspace. Cool at room temperature no longer than 1 1/2 hours.

12 cups sliced, peeled, cored apples, treated to prevent browning* and drained
Water
2 ¾ cups granulated sugar
¾ cup cooking starch used for preserving, such as ClearJel®
1 ½ teaspoons ground cinnamon
½ teaspoon ground nutmeg
2 ½ cups apple juice
1 ¼ cups cold water
½ cup lemon juice
7 Ball® or Kerr® Pint (16 oz) Jars with lids and bands

Steps:

  • Prepare boiling water canner. Heat jars and lids in simmering water until ready for use. Do not boil. Set bands aside.
  • Blanch apple slices, working with 6 cups at a time, in a large pot of boiling water for 1 minute. Remove with a slotted spoon and keep warm in a covered bowl.
  • Combine sugar, ClearJel®, cinnamon and nutmeg in a large stainless steel saucepan. Stir in apple juice and cold water. Bring to a boil over medium-high heat, stirring constantly, and cook until mixture thickens and begins to bubble. Add lemon juice, return to a boil and boil for 1 minute, stirring constantly. Remove from heat. Drain apple slices and immediately fold into hot mixture. Before processing, heat, stirring, until apples are heated through.
  • Ladle hot pie filling into hot jars leaving 1 inch headspace. Remove air bubbles. Wipe rim. Center lid on jar. Apply band until fit is fingertip tight.
  • Process jars in a boiling water canner for 25 minutes, adjusting for altitude. Remove jars and cool. Check lids for seal after 24 hours. Lid should not flex up and down when center is pressed.
