4 medium apples
⅓ cup sugar
3 tablespoons water
2 tablespoons butter
1 teaspoon cinnamon
1 tablespoon + 1 teaspoon cornstarch
2 tablespoons water

Steps:

  • Peel, core, and chop or slice apples*.
  • Melt butter and cinnamon over medium heat. Stir in apples, sugar & water.
  • Cover and cook stirring occasionally for 4-6 minutes or until very slightly softened.
  • In a small dish combine cornstarch and 2 tablespoons water. Add to the pan while stirring and continue to cook until apples are soft (not mushy) and filling is thickened.
  • Let bubble 1 minute. Cool.

4 quarts cored sliced apples
1 1/2 cups water
1/2 cup real butter
8 teaspoons cinnamon
2 3/4 cups sugar
3/4 cup cornstarch dissolved in 1 cup water

Steps:

  • Put apples in crockpot.
  • add rest of ingredients except cornstarch mixture.
  • cook on high 3 or 4 hours until the apples are as soft as you like them.
  • add the corn starch and water well stirred.
  • Cook on high 30 more minutes until it is bubbling well again.
  • Check the consistency add corn starch or water as necessary.
  • Bottle in sterilized quart Mason jars.
  • process for at least 20 minutes.

18 cups thinly sliced apples
3 tablespoons lemon juice
10 cups water
4 ½ cups white sugar
1 cup cornstarch
2 teaspoons ground cinnamon
1 teaspoon salt
¼ teaspoon ground nutmeg

Steps:

  • In a large bowl, toss apples with lemon juice and set aside. Pour water into a Dutch oven over medium heat. Combine sugar, cornstarch, cinnamon, salt, and nutmeg in a bowl; add to water, stir well, and bring to a boil. Boil for 2 minutes, stirring constantly.
  • Add apples and return to a boil. Reduce heat, cover and simmer until apples are tender, about 6 to 8 minutes. Cool for 30 minutes.
  • Ladle into 5 freezer containers, leaving 1/2 inch headspace. Cool at room temperature no longer than 1 1/2 hours.
  • Seal and freeze. Can be stored for up to 12 months.

10 cups water
4 1/2 cups sugar
1 cup cornstarch
3 tablespoons lemon juice
3 teaspoons cinnamon
1/4 teaspoon nutmeg
1/8 teaspoon ginger
1 teaspoon salt
2 -3 drops yellow food coloring
6 -7 quarts apples, peeled,cored & quartered

Steps:

  • Note: To keep apples from turning brown, put in large container of cold water and add lemon juice or if juice is not available, 7UP will work just as well.
  • Blend all dry ingredients, mix well.
  • Add water and cook until thick then add lemon juice and food coloring.
  • Pack apples in quart jars and pour cooked filling over the apples.
  • Put lids and rings on quart jars and put in boiling water bath for 20 minutes.
  • After 20 minutes, take each jar out carefully and put on towel, use pot holders to tighten rings on each jar and let stand until cool.
  • Mark date on outside of jar and store for future use.
  • Enjoy.

¼ cup white sugar
½ cup brown sugar
1 pinch salt
¼ teaspoon ground cinnamon
¼ cup water
1 (15 ounce) package double crust ready-to-use pie crust (such as Pillsbury®)
4 large red apples, cored and thinly sliced

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Melt butter in saucepan over medium heat. Stir in white sugar, brown sugar, salt, cinnamon, and water. Bring the syrup to a boil, stirring constantly to dissolve sugar, then remove from heat.
  • Unroll pie crusts, press one into a 9-inch pie dish, and place the apples into the crust. Unroll the second crust on a work surface, and cut into about 8 1-inch wide strips. Criss-cross the strips over the apples, or weave into a lattice crust. Crimp the bottom crust over the lattice strips with your fingers. Spoon caramel sauce over pie, covering lattice portion of top crust; let remaining sauce drizzle through the crust.

3 pounds mixed apples (such as Golden Delicious, McIntosh and Pink Lady)
2/3 cup sugar
2 tablespoons fresh lemon juice
6 tablespoons unsalted butter
1 tablespoon all-purpose flour
1/2 teaspoon ground cinnamon
Pinch of ground cloves
Pinch of freshly grated nutmeg
2 1/2 cups all-purpose flour, plus more for dusting
1/4 cup sugar, plus more for sprinkling
1 teaspoon salt
1/4 cup vegetable shortening
1 stick cold unsalted butter, cut into 1/2-inch pieces
2 large eggs

Steps:

  • Prepare the filling: Peel, halve and core the apples. Cut each half into 6 wedges and toss with the sugar and lemon juice in a bowl. Melt 4 tablespoons butter in a large skillet over medium-high heat. Add the apple mixture and cook, stirring occasionally, until the firmer apples begin to soften but still hold their shape, 8 to 9 minutes. (Stop before the dough gathers into a ball.) Lay out 2 sheets of plastic wrap; divide the dough between the sheets and pat each into a disk. Wrap the disks tightly and refrigerate until firm, at least 1 hour.
  • Roll 1 disk of dough into a 12-inch round on a floured surface (or between 2 pieces of floured parchment paper). Ease into a 9 1/2-inch deep-dish glass pie plate. Add the filling, mounding it slightly, and dot with the remaining 2 tablespoons butter. Chill the pie while you roll the remaining dough into a 12-inch round.
  • Lay the dough over the filling and press the 2 crusts together around the edges. Fold the overhanging dough under itself and crimp with your fingers. Beat the remaining egg in a bowl and brush over the top crust; sprinkle with sugar. Pierce the top with a knife a few times to let steam escape. Chill 30 minutes.
  • Preheat the oven to 375 degrees F. Place the pie on a baking sheet; bake until the crust is golden and the filling is bubbly, 55 to 60 minutes. (Cover the edges with foil if they brown too quickly.) Transfer to a rack and cool until set, 2 hours.
