ALMOST-FAMOUS MAPLE-BUTTER BLONDIES

Almost-Famous Maple-Butter Blondies image

When two brothers opened the first Applebee's in 1980, they gave it the clunky name T.J. Applebee's Rx for Edibles & Elixirs. The name changed six years later, but the chain's insanely popular Maple-Butter Blondies didn't come along until 2004. They're made with walnuts and white chocolate and served in a sizzling skillet with ice cream and maple-butter sauce. Applebee's sells about 2.5 million of the sundaes every year, and readers like Julie Thornton of Dover, PA, have been begging us to track down the recipe. The eatery's Kansas headquarters refused to reveal it, so Food Network Kitchens engineered this spot-on imitation.

Time 55m

Yield 9 blondies

Number Of Ingredients 15

10 tablespoons unsalted butter, at room temperature, plus more for the pan
1 cup walnut pieces
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon salt
1 1/2 cups packed light brown sugar
3 large eggs
2 tablespoons vanilla extract
6 ounces white chocolate, cut into chunks
1/3 cup maple syrup
6 tablespoons unsalted butter
1/4 cup heavy cream
Vanilla ice cream, for serving
1/2 cup walnut pieces

Steps:

  • Make the blondies: Preheat the oven to 350 degrees F. Line a 9-by-13-inch baking pan with foil, leaving an overhang on two sides; butter the foil. Pulse 1/2 cup walnuts in a food processor until almost fine (do not overprocess). Whisk the ground nuts, flour, baking powder, baking soda and salt in a medium bowl.
  • Beat 10 tablespoons butter and the brown sugar with a mixer on medium speed until fluffy, about 2 minutes. Beat in the eggs, one at a time, scraping down the bowl with a rubber spatula. Beat in the vanilla. Gradually beat in the dry ingredients until just combined. Fold in the white chocolate and the remaining 1/2 cup walnuts.
  • Spread the batter in the prepared pan and bake until the blondies are light brown around the edges and spring back when pressed, about 30 minutes. Cool slightly on a rack.
  • Meanwhile, make the topping: Place the maple syrup and butter in a small saucepan over medium heat and cook until the mixture bubbles and thickens, swirling the pan, about 6 minutes. Add the cream and continue to cook until the mixture is the consistency of caramel.
  • Use the foil to lift the blondies out of the pan, then cut into large bars. Serve warm topped with ice cream, the maple-butter sauce and the walnuts.

The combination of caramel, walnuts, and white chocolate results in a perfect balance of flavors that explodes in the mouth. If you are looking to recreate this recipe at home and want to impress your guests with your culinary skills, then there are a few valuable tips that you must keep in mind. In this article, we will discuss some of these valuable tips that will help you make the perfect applebee's white chocolate and walnut blondie recipe.

Tip #1: Use High-Quality Ingredients

The quality of the ingredients that you use in this recipe makes a huge difference in the final taste of the dish. It is highly recommended that you use high-quality ingredients such as organic walnuts, high-quality chocolate, and pure vanilla extract. Using high-quality ingredients will not only enhance the taste of the dish but also make it healthier. Organic walnuts are rich in omega-3 fatty acids, which are beneficial for heart health, while high-quality chocolate contains antioxidants that have anti-aging properties.

Tip #2: Measure Accurately

Measuring the ingredients accurately when making this recipe is key to getting the perfect texture and taste. Make sure to use measuring cups and spoons to measure the ingredients accurately. Follow the recipe instructions closely so that you don't add too much or too little of any ingredient.

Tip #3: Use A Good Quality Baking Pan

Using the right baking pan is also important when making this recipe. A good quality baking pan that distributes heat evenly will help you get the perfect texture and taste. You can use a 9x13 inch baking pan that is at least 2 inches deep. Grease the pan with butter or line it with parchment paper to prevent the blondies from sticking to the pan.

Tip #4: Don't Overmix

Overmixing the batter can result in a dense and tough texture. You should mix the ingredients until just combined to avoid overmixing the batter. Use a spatula to fold the ingredients together gently.

Tip #5: Toast The Walnuts

Toasting the walnuts before adding them to the batter adds a nice crunch and enhances their flavor. Spread the walnuts on a baking sheet and toast them in the oven at 350°F for about 5-7 minutes until they are lightly browned. Let the walnuts cool completely before adding them to the batter to prevent them from melting the chocolate.

Tip #6: Use A Double Boiler To Melt The Chocolate

Melt the white chocolate in a double boiler to prevent it from burning. A double boiler reduces the risk of overheating the chocolate and ensures that it melts evenly. Fill a pot with water and bring it to a simmer. Place a heatproof bowl over the pot, making sure that the bottom of the bowl does not touch the water. Add the white chocolate to the bowl and stir it until it melts completely.

Tip #7: Pour The Caramel Sauce Over The Blondies

To get the perfect caramel sauce consistency, you will need to heat it in a pan. Once it is heated, pour the caramel sauce over the blondies and let it cool completely before cutting the blondies into squares.

Tip #8: Serve Warm With Vanilla Ice Cream

The final step is to serve the applebee's white chocolate and walnut blondie warm with a scoop of vanilla ice cream. The combination of warm blondies and cold ice cream is heavenly and adds a wonderful contrast of flavors and textures to the dessert.
Conclusion
These valuable tips will help you make the perfect applebee's white chocolate and walnut blondie recipe at home. Remember to use high-quality ingredients, measure the ingredients accurately, use a good quality baking pan, avoid overmixing the batter, toast the walnuts, use a double boiler to melt the chocolate, pour the caramel sauce over the blondies, and serve the dessert warm with vanilla ice cream. Happy Baking!
