CINNAMON WHIPPED CREAM

Cinnamon Whipped Cream image

The inspiration for the whipped cream came from Bon Appetit December 2002 issue. I've changed the measurements to my own taste. This whipped cream is delicious on anything with apples such as pie, cobbler and apple bread (see recipe 76946 for a great combo). Also would be nice on top of hot chocolate or coffee!

Time 50m

Yield 4 to 6 servings

Number Of Ingredients 9

1 vanilla bean
1/2 cup sugar, plus 3 tablespoons
2 tablespoons ground cinnamon
1 stick butter
1/4 teaspoon salt
1 cup water
1 cup all-purpose flour
4 eggs
Olive oil, for frying

Steps:

  • Cut open the vanilla bean lengthwise. Using the back of a knife, scrape along the inside of the vanilla bean to collect the seeds. Scrape vanilla bean seeds into a small bowl. Add the 1/2 cup sugar and cinnamon and stir to combine. Set aside.
  • In a medium saucepan combine the butter, salt, 3 tablespoons of sugar, and water over medium heat. Bring to a boil. Take pan off the heat and stir in the flour. Return pan to the heat and stir continuously until mixture forms a ball, about 3 to 5 minutes. Transfer the flour mixture to a medium bowl. Using an electric hand mixer on low speed, add eggs, 1 at a time, incorporating each egg completely before adding the next. Beat until smooth. If not frying immediately, cover with plastic wrap and reserve in the refrigerator.
  • Meanwhile, pour enough oil into a large frying pan to reach a depth of 2 inches. Heat the oil over medium heat until a deep-fry thermometer registers 375 degrees F.
  • Using a small ice-cream scooper or 2 small spoons, carefully drop about a tablespoon of the dough into the hot olive oil, frying in batches. Turn the zeppole once or twice, cooking until golden and puffed up, about 5 minutes. Drain on paper towels. Toss with cinnamon-sugar. Arrange on a platter and serve immediately.

Time 1h2m

Yield 4 servings

Number Of Ingredients 6

1/2 cup heavy cream
2 tablespoons powdered sugar
1 (9-inch) refrigerated rolled pie crust (recommended: Pillsbury)
2 medium Granny Smith apples, peeled
1/4 cup granulated sugar
1 tablespoon ground cinnamon, plus extra for dusting

Steps:

  • Special equipment: a 3-inch round cookie cutter
  • Place an oven rack in the center of the oven. Preheat the oven to 400 degrees F. Line a baking sheet with a silpat or parchment paper sprayed with vegetable cooking spray.
  • Unroll the pie crust out on a work surface. Using a 3-inch round cookie cutter, cut out 8 disks of pastry. Arrange the pastry disks on the prepared baking sheet. Using the tines of a fork, prick the pastry all over. Bake until brown and crispy, 8 to 10 minutes. Remove to a wire rack to cool completely, about 10 minutes.
  • Slice the bottom of the apples to create an even surface for cutting. Slice each apple into 6 (1/2-inch) slices. Cut each apple slice in half and remove any seeds or pieces of core. In a medium bowl, mix together the sugar and 1 tablespoon cinnamon. Add the apple slices and toss until coated. Shake off any excess mixture. Arrange the apple slices on the same baking sheet in a single layer. Bake until dark brown, about 12 to 15 minutes. Remove from the oven and let cool for 15 minutes.
  • In a medium bowl, using an electric hand mixer, beat the cream until thick, about 1 minute. Add the powdered sugar and continue to beat until the cream is very thick.
  • To assemble the pies: Place the pastry disks on a work surface. Divide the cooked apple slices among 4 of the disks. Dollop about 2 tablespoons of the cream on top of the apples and cover with the remaining disks.
  • Transfer the apple pies to dessert plates, dust with cinnamon and serve immediately.

1 cup light brown sugar
2 refrigerated rolled pie crusts, such as Pillsbury
One 21-ounce can apple pie filling
2 tablespoons cinnamon sugar
2 cups whipping cream, chilled
1 teaspoon ground cinnamon
4 tablespoons sugar

Steps:

  • For the skillet apple pie: Preheat the oven to 400 degrees F.
  • Melt the butter in a 9-inch cast-iron skillet; set aside 1 tablespoon of the melted butter for the top crust. To the melted butter, add the brown sugar and melt them together on medium heat, about 2 minutes. Remove from the heat and line the skillet with one of the pie crusts. Pour the apple pie filling over the crust and sprinkle with 1 tablespoon of the cinnamon sugar. Use the second pie crust to cover the filling. Apple zeppole with cinnamon whipped cream is a delicious and indulgent dessert that is perfect for any occasion. It is a perfect way to enjoy the autumn that brings with it the bounty of apples that make any dish absolutely delicious. In this article, we will provide some valuable tips on how to make apple zeppole with cinnamon whipped cream, without including the recipe.

Tips for Making Apple Zeppole

1. Choose the Right Apples: The key to making a great apple zeppole is to choose the right type of apples. For this recipe, you will want to choose firm and tart apples, such as Granny Smith or Honeycrisp apples. These apples will hold up well during the frying process and will provide a nice contrast in flavor to the sweet dough. 2. Prepare the Dough Properly: The dough is the foundation of your zeppole, and it is important to make sure it is prepared properly. Take your time to follow the recipe and make sure you are using the right amount of ingredients. Overworking the dough can lead to tough and chewy zeppole. 3. Fry the Zeppole at the Right Temperature: It is important to fry the zeppole at the correct temperature. If the oil is too hot, the zeppole will cook too quickly and be raw in the center. If the oil isn't hot enough, the zeppole will become greasy and won't have that delicious crispy exterior. 4. Drain the Zeppole: Once the zeppole are done cooking, make sure to drain them on a paper towel-lined plate. This will help remove any excess oil and make sure your zeppole are crispy and delicious. 5. Add Toppings: Once the zeppole have cooled slightly, you can add a variety of toppings to them. Powdered sugar is a classic option, but you can also try dipping them in melted chocolate or caramel for an extra indulgent touch.

Tips for Making Cinnamon Whipped Cream

1. Use Good Quality Cream: The quality of your whipped cream is dependent on the quality of your cream. For the best results, use heavy cream that has a high fat content. This will result in a creamier and more stable whipped cream. 2. Chill Your Bowl and Whisk: To make sure your whipped cream turns out perfectly, it is important to chill your bowl and whisk prior to whipping the cream. This will ensure that the cream stays cold and whips up quickly and easily. 3. Add the Right Amount of Sugar: Adding sugar to your whipped cream is essential for adding sweetness and stability. However, it is important not to add too much sugar, as this can cause the cream to become too sweet and unstable. Start with a tablespoon of sugar and add more if needed. 4. Add Cinnamon: Adding cinnamon to your whipped cream will provide an extra layer of flavor that complements the apple zeppole perfectly. Be careful not to add too much cinnamon, as it can overpower the other flavors. 5. Whip Until Stiff Peaks Form: To ensure that your whipped cream is the perfect consistency, whip it until stiff peaks form. This means that when you lift your whisk out of the cream, the peaks should stand up straight and not flop over.

Conclusion

Making apple zeppole with cinnamon whipped cream is a delightful and indulgent dessert that is perfect for fall. By using the tips outlined above, you can ensure that your zeppole turn out perfectly every time. Whether you are making them for a special occasion or just because, these apple zeppole are sure to be a crowd-pleaser.
