CARAMEL-APPLE UPSIDE-DOWN CAKE

Caramel-Apple Upside-Down Cake image

The best part about the classic pineapple upside-down cake is its gooey fruit topping, and this fresh take on the beloved dessert is no exception. We replaced canned pineapple with fresh apple slices whose tart flavor is the perfect balance to a sticky-sweet caramel sauce. We don't like to play favorites, but this topping plus a tender vanilla scratch cake equals an easy modern-day treat that may just outdo the original.

APPLE-CINNAMON UPSIDE-DOWN CAKE

Apple-Cinnamon Upside-Down Cake image

You'll want firm but ripe apples that are sweet, such as Empire or Gala. With the cinnamon in this homey cake, they'll hit the spot. Take a few minutes to arrange the apple slices in neat circles on the bottom of the pan -- when the cake is baked and inverted, you'll find them decorating the top.

Time 2h

Number Of Ingredients 12

10 tablespoons unsalted butter, room temperature
1/2 cup packed light-brown sugar

1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon ground cinnamon

UPSIDE-DOWN BUTTERSCOTCH APPLE SOUR CREAM CAKE

Upside-Down Butterscotch Apple Sour Cream Cake image

Baker's sugar, a favorite of pastry chefs, is also called superfine sugar. It measures the same as regular but dissolves more quickly. It's available at some supermarkets. You can also make your own by whizzing granulated sugar in a food processor until powdery.

Yield Makes 8 servings

Number Of Ingredients 15

Cake
1 1/2 cups all purpose flour
1 1/2 teaspoons baking powder
3/4 teaspoon salt
1/2 cup (1 stick) unsalted butter, room temperature
2/3 cup baker's sugar (superfine sugar) or regular sugar
2 large eggs
1 1/2 teaspoons vanilla extract
1/2 cup sour cream
1/2 Golden Delicious apple, peeled, cored, finely chopped (about 3/4 cup)
Butterscotch-caramel apples
6 tablespoons (3/4 stick) unsalted butter
1/3 cup (packed) dark brown sugar
1/3 cup butterscotch morsels
2 8-ounce Golden Delicious apples, peeled, halved, cored, cut into 1/4-inch-thick slices

Steps:

  • For cake:
  • Preheat oven to 375°F. Mix flour, baking powder, and salt in medium bowl. Using electric mixer, beat butter in large bowl until smooth. Gradually add sugar and beat until well blended. Add eggs and vanilla; beat until blended. Beat in flour mixture, then sour cream. Stir in chopped apple. Set aside while preparing butterscotch-caramel apples.
  • For butterscotch-caramel apples:
  • Melt butter in 10-inch-diameter nonstick ovenproof skillet over medium heat. Add brown sugar and butterscotch morsels; stir until melted and smooth and mixture is bubbling, about 2 minutes. Add apple slices to skillet and cook until golden brown, using tongs to turn slices, about 3 minutes per side (there will be a lot of liquid in skillet). Remove skillet from heat and let cool 3 minutes. Using tongs, arrange apple slices in skillet in concentric circles or other pattern.
  • Carefully spoon cake batter in small dollops atop apples in skillet. Using offset spatula, gently spread batter evenly to edges of skillet (batter will seem to float on top of apples and pan juices). Bake until cake is golden brown and tester inserted into center comes out clean, about 30 minutes. Cool in skillet 10 minutes. Run knife around edges of cake to loosen. Place large platter atop skillet. Using oven mitts or pot holders, hold platter and skillet firmly together and invert, allowing cake to settle onto platter. Serve cake warm.

CARAMEL APPLE UPSIDE-DOWN CAKE

Caramel Apple Upside-Down Cake image

This is truly a wonderful fall treat! It is warmly spiced, not overly sweet, and those tender, buttery caramel apples on top are a lovely touch. Serve this lightly warmed with vanilla ice cream, or call it a coffee cake and serve it for breakfast-your choice!

Provided by Rebekah Rose Hills

Categories     Upside-Down Cake

Time 2h5m

Yield 12

Number Of Ingredients 13

nonstick cooking spray
6 tablespoons unsalted butter
½ cup brown sugar
2 medium apples, cored and thinly sliced
1 ½ cups all-purpose flour
2 teaspoons ground cinnamon
1 ½ teaspoons baking powder
½ teaspoon salt
½ cup unsalted butter, at room temperature
½ cup white sugar
½ cup packed brown sugar
2 large eggs, at room temperature
1 ½ teaspoons pure vanilla extract

Steps:

  • Spray an 8- or 9-inch round cake pan with nonstick spray.
  • Combine butter and brown sugar for topping in a small saucepan over medium heat. Cook, stirring occasionally, until butter has melted and mixture begins to simmer gently, 3 to 4 minutes. Don't let the caramel mixture come to a boil; just allow it to bubble gently for a couple of minutes so it can thicken slightly.
  • Pour into the prepared cake pan, then arrange apple slices all around the pan as desired. Place in the refrigerator so the topping can set while you prepare the cake.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • Whisk flour, cinnamon, baking powder, and salt together in a bowl.
  • Beat butter, sugar, and brown sugar in a separate bowl with an electric mixer until light in color and fluffy, 2 to 3 minutes, scraping down the bottom and sides as needed. Blend in eggs, incorporating slowly and scraping down the sides again, as needed. Mix in vanilla. Add in dry ingredients on low speed, blending just until combined; batter will be thick.
  • Remove the cake pan from the refrigerator. Gently spread the thick batter over the topping, trying not to disturb the apples too much.
  • Bake in the preheated oven until a toothpick inserted in the center comes out clean, 40 to 45 minutes. Remove from the oven and set on a cooling rack for 15 minutes.
  • Place a plate over the top of the pan, then carefully invert it, allowing the cake to release from the pan onto the plate. Let cake cool completely to room temperature, 45 minutes to an hour; the top can be fairly soft and may not cut cleanly while it is still warm.

3/4 cup dark molasses

APPLE-HONEY UPSIDE-DOWN CAKE

Apple-Honey Upside-Down Cake image

Time 1h55m

Yield 8 serving(s)

Number Of Ingredients 14

1/4 cup pecans, chopped
1/4 cup butter
1 cup light brown sugar, packed
2 granny smith apples
1 cup flour
2 teaspoons baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
6 tablespoons butter, softened
3/4 cup sugar
1 egg
1/2 teaspoon vanilla extract
6 tablespoons milk
whipped topping (optional)

Steps:

  • Peel, core and slice apples about 1/4 inch thick. Place in a mixture of water and lemon juice to prevent browning. Set aside.
  • Preheat oven to 450°F.
  • Toast pecans on ungreased baking sheet in oven until lightly browned, about 10 minutes. Check frequently to prevent burning.
  • Reduce oven temperature to 325°F.
  • Melt butter in small, heavy saucepan. Add brown sugar and cook, stirring, just until melted, 3 to 5 minutes. Watch closely because sugar burns easily.
  • Pour butter-sugar mixture into 9 inch round nonstick cake pan and spread to coat bottom. Sprinkle chopped pecans on top butter-sugar mixture. Drain and pat dry apples and place in circles, slightly overlapping, over pecans.
  • Sift flour, baking powder, cinnamon and salt into bowl. Using electric mixer, beat butter at medium speed until light and fluffy. Add sugar and continue beating until creamy, 3 to 5 minutes. Add egg and vanilla and continue beating until completely incorporated.
  • Reduce speed to low, add flour mixture and milk, alternating, in 3 additions. Continue to mix only until dry ingredients are completely mixed in, stopping to scrape sides if necessary.
  • Spoon batter over topping and spread carefully so batter is even.
  • Bake 55 minutes, or until tester comes out clean. Cool in pan 10 to 15 minutes. Carefully run spatula around edge of pan and let stand another 10 to 15 minutes.
  • Invert pan over large plate and let stand 3 minutes. Carefully remove pan.
  • Serve warm with fresh whipped cream.

2 tablespoons plus 1 teaspoon unsalted butter
5 McIntosh apples (1 3/4 pounds), peeled, cored, and cut into 8 wedges each
1/2 cup plus 3 tablespoons sugar
1 large egg
1/2 cup buttermilk
1 cup all-purpose flour
1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/8 teaspoon ground nutmeg
1/2 teaspoon baking powder
1/4 teaspoon salt

  • Arrange the apples, cut side down, in the prepared cake pan so that they fit snugly together. Fill in any cracks with small pieces of apple, so that the batter wont leak through. Set pan aside.
  • Melt remaining 2 tablespoons butter; set aside. Break egg into a food processor; process for about 5 seconds, then while processor is running, add melted butter and buttermilk through the feed tube.
  • In a small bowl, whisk together flour, remaining 1/2 cup sugar, spices, baking powder, and salt. Add dry ingredients to mixture in food processor. Cover and pulse until batter is combined, about 20 pulses.
  • Pour the batter over sliced apples. Using a spatula, spread batter to completely cover the apples. Bake until cake is golden brown and a tester inserted in the center comes out clean, 40 to 45 minutes. Remove from oven and place on a wire rack to cool for about 15 minutes before inverting cake onto a serving plate.

Valuable Tips for Making Apple Upside Down Cake Recipes

Making an apple upside down cake may seem like a daunting task, especially if you are new to baking. However, with the right techniques and tips, you can make a delicious and impressive dessert that will have your guests asking for more. Here are some valuable tips for making apple upside down cake recipes.
1. Choose the Right Apples
When making an apple upside down cake, it is important to choose the right type of apples. You need apples that are firm, tart, and able to hold their shape when baked. Some good apple varieties for baking include Granny Smith, Honeycrisp, Braeburn, Rome, and Jonagold. Avoid using apples that are too sweet or too soft, as they may turn to mush in the oven.
2. Get Your Pan Ready
To make an apple upside down cake, you will need a cake pan with high sides. A 9-inch round cake pan or a 9x9-inch square pan works well. You will also need to prepare the pan by greasing it with butter or cooking spray. Once the pan is greased, you can line the bottom with parchment paper. This will help to prevent the apples from sticking to the bottom of the pan.
3. Prepare the Apples
Before you can put the apples in the pan, you need to prepare them. Start by peeling and coring the apples, then slice them into even pieces about 1/4 inch thick. You may want to use an apple slicer to make the job easier. Once the apples are sliced, toss them with some lemon juice to prevent them from turning brown.
4. Make the Caramel Sauce
To create the caramel sauce for your apple upside down cake, you will need sugar, butter, and some optional spices like cinnamon, nutmeg, or ginger. The caramel sauce will provide a sweet and sticky base for the apple slices to rest on. Start by melting the butter in a saucepan over medium heat, then add the sugar and spices. Allow the mixture to cook until it turns a golden brown color, then pour it into the prepared cake pan.
5. Arrange the Apples
Once the caramel sauce is in the pan, you can arrange the apple slices on top. Start from the outside edge of the pan and work your way inwards, slightly overlapping each slice. Arrange the apples in a circular pattern, filling in any gaps as you go. Once the apples are all in place, gently press them down to create an even layer.
6. Make the Cake Batter
To make the cake batter, you will need flour, sugar, baking powder, salt, butter, eggs, milk, and vanilla extract. You can make the cake batter by hand, using a whisk or a wooden spoon, or you can use an electric mixer. The key is to mix the batter until it is smooth and free of lumps.
7. Pour the Batter over the Apples
Once the cake batter is mixed, you can pour it over the apples in the prepared pan. Use a spatula to spread the batter evenly, making sure it covers all the apples. Tap the pan gently on the counter to remove any air bubbles.
8. Bake the Cake
Bake the cake in a preheated oven at 350°F for 35-40 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool in the pan for 10 minutes, then run a knife around the edges to loosen it. Invert the cake onto a serving plate, carefully removing the pan and the parchment paper.
9. Serve and Enjoy!
Once the cake is cooled and plated, you can serve it with a dollop of whipped cream or a scoop of vanilla ice cream. The apple upside down cake is now ready to be enjoyed! In conclusion, making an apple upside down cake can be a rewarding and delicious experience. With these valuable tips, you can create a dessert that looks and tastes amazing. Remember to choose the right apples, prepare your pan, make the caramel sauce, arrange the apples, make the cake batter, pour the batter over the apples, bake the cake, and serve it with your preferred topping. Happy baking!
