2 tablespoons confectioners' sugar
1 teaspoon corn syrup
Pinch salt
1/2 teaspoon ice

Steps:

  • In a small bowl, combine flour and salt; cut in shortening until mixture resembles coarse crumbs. Gradually add water, tossing with a fork until dough forms a ball., On a lightly floured surface, roll dough into a 7-in. circle. Place apple slices on half of the circle; sprinkle with sugar and cinnamon. Fold dough over filling, sealing edges with fingers or pressing with a fork. Brush with milk. Prick top with a fork. This recipe is based on an old recipe from my 1941 cookbook. The original recipe didn't give any measurements on the ingredients, but these are pretty close to the measurements that I use. If you need to make more for a larger family or for company, you can easily double this recipe. They are so delicious and they made my kitchen smell awesome! I hope you'll give this vintage recipe a try.

1 sheet(s) prepared puff pastry
2 to 3 small apples
1 teaspoon(s) lemon juice
2 tablespoon(s) brown sugar
2 tablespoon(s) white sugar
1/4 teaspoon(s) pumpkin pie spice
1/4 teaspoon(s) cinnamon
1/8 teaspoon(s) nutmeg
1 dash(es) salt
1 teaspoon(s) all purpose flour (may need a little more, if apples are juicy)
1 or 2 pats of butter
EGG WASH
1 large egg
1 teaspoon(s) water
raw sugar for sprinkling on the top

Steps:

  • Preheat oven to 375 degrees. Line a baking sheet with parchment paper and set aside. Thaw frozen puff pastry according to package directions and set aside.
  • Peel and coarsely chop apples and place in a bowl. Add spices, lemon juice, flour and thoroughly mix with hands or a spatula.
  • Lightly flour a sheet of waxed paper. Lay the puff pastry on the paper and gently unfold. Cut into four squares. In a mixing cup or small bowl, add egg and water. Combine with a fork until well mixed and slightly foamy and set aside.
  • Spoon apples into one side of pastry squares, leaving a little room at the edge. Dot with butter pats. Fold over to form a triangular shape. Brush edges with egg wash to seal. Repeat with the three remaining squares.
  • Gently place turnovers onto the prepared baking sheet. Brush tops with egg wash and sprinkle with raw sugar. Make some holes in the top using a fork or small knife to let steam escape.

  • In a small bowl, combine flour and salt; cut in 1/4 cup butter until crumbly. Gradually add water, tossing with a fork until a ball forms. 1 1/4 pounds tart apples, such as Empire or Granny Smith (3 apples)
3 tablespoons dried cherries
3 tablespoons sugar, plus extra to sprinkle on top
1 tablespoon all-purpose flour
1/4 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
Pinch kosher salt
1 package (17.3 ounces, 2 sheets) frozen puff pastry, defrosted
1 egg beaten with 1 tablespoon water, for egg wash

Steps:

  • Preheat the oven to 400 degrees F.
  • Combine the orange zest and orange juice in a bowl. Peel, quarter, and core the apples and then cut them in 3/4-inch dice. Immediately toss the apples with the zest and juice to prevent them from turning brown. Add the cherries, sugar, flour, cinnamon, nutmeg, and salt.

2 medium-large Bramley apples, peeled, cored and roughly chopped
50g golden caster sugar
½ tsp ground cinnamon
1 tbsp butter
1 Gala or sweet dessert apple, peeled, cored and cut into 1cm dice
320g pack puff pastry
2 tbsp milk to glaze
2 tsp demerara sugar

Steps:

  • Put the Bramley apple, sugar and cinnamon in a small pan with 1 tbsp water. Cover with a lid and simmer over a low heat for 10-15 mins until the apple breaks down and turns into a compote.
  • Stir in the butter and the Gala apple and cook for a further 5 mins, uncovered, until the Gala apple is just soft but retaining its shape, and any excess water has evaporated to make a thick compote around the Gala chunks. Remove from the heat and leave to cool.
  • Heat the oven to 220C/200C fan/gas 7. Unravel the puff pastry sheet out on a work surface, and cut into 4 even rectangles. Divide the apple filling to one side of each of the puff pastry rectangles, leaving a 1cm border. Brush the border with milk and fold over the empty side of pastry over the filling and crimp together. Brush with more milk and sprinkle over the sugar. Make a small steam hole in the middle of the turnovers.
  • Transfer to a parchment-lined baking sheet and bake for 20-25 mins until golden and puffed up. Leave to cool for 10 mins on a wire rack (the filling will be molten when it first comes out the oven) before serving warm with a scoop of vanilla ice cream, or serve at room temperature. Keep for 2 days in an airtight container.
