GLAZED APPLE COOKIES
Spicy cookies that everyone loves. I've mailed them before and they mail beautifully. I've been making these for about 25 years, and never met anyone yet who didn't like them.

Steps:
- Beat shortening and brown sugar together until light and fluffy. Beat in egg and blend thoroughly.
- Stir together flour, baking soda, salt, cinnamon, cloves and nutmeg.
- Stir half the dry ingredients into creamed mixture. Stir in nuts, apple and raisins, then stir in remaining half of dry ingredients and milk. Mix well.
- Drop from tablespoon 1 1/2 inches apart onto lightly greased baking sheet. Bake in a preheated 400 degree oven for 10-12 minutes. Remove cookies to racks and while still warm, spread with glaze.
- To make Glaze: Combine powdered sugar, butter, vanilla and enough cream to make glaze of spreading consistency. Beat until smooth. Spread on warm cookies.

- Heat oven to 375°. Grease cookie sheet with shortening. Beat brown sugar, butter and egg in large bowl with electric mixer on medium speed until light and fluffy. Stir in flour, nutmeg, salt and baking soda. Stir in apple.
- Drop dough by rounded teaspoonfuls about 2 inches apart onto cookie sheet.
- Bake 8 to 10 minutes or until light brown. Remove from cookie sheet to wire rack; cool. Store loosely covered.

- 1 1/2 cups of all-purpose flour

Instructions
For the Apple Filling
- Combine the chopped apple, brown sugar, 2 tablespoons of water, and cornstarch in a small saucepan over medium heat.
- Cook the mixture for about 5 minutes, stirring occasionally, until the apple pieces are soft and the liquid has thickened.
- Set the mixture aside to cool while you prepare the cookie dough.
For the Cookie Dough
- Preheat the oven to 350°F (180°C).
- In a medium-sized mixing bowl, whisk together the flour, cornstarch, baking powder, cinnamon, nutmeg, allspice, and salt.
- In another larger mixing bowl, beat the softened butter until creamy, then add the sugar and beat for another 2-3 minutes until light and fluffy.
- Add the egg yolk, milk, and vanilla extract to the butter and sugar mixture, and beat together until combined.
- Add the flour mixture to the butter mixture, and stir until the dough comes together and there are no more visible flour streaks.
- Dust your work surface with flour, and roll out the dough to a thickness of about 1/4 inch.
- Cut out circles using a cookie cutter or a glass (about 2.5 inches in diameter).
- Place a generous teaspoon of the apple filling in the center of each cookie.
- Fold the cookie dough in half over the filling, pinching the edges together to seal it.
- Place the cookies on a baking sheet lined with parchment paper.
- Repeat the process until all the dough and apple filling are used up.
- Bake the cookies in the preheated oven for 12-15 minutes, or until the edges are lightly browned.
- Remove the cookies from the oven and allow to cool for a few minutes on the baking sheet before transferring to a wire rack to cool completely.
