PHILLY BAVARIAN APPLE TORTE
Easy to prepare and absolutely delicious, this is a rich dessert perfect for special occasions.

Steps:
- Heat oven to 425 degrees F. Beat butter and 1/3 cup of the sugar in small bowl with electric mixer on medium speed until light and fluffy. Add flour; mix well. Spread onto bottom and 1 inch up side of 9-inch springform pan.
- Beat cream cheese and 1/3 cup of the remaining sugar in same bowl with electric mixer on medium speed until well blended. Add egg and vanilla; mix well. Spread evenly over crust. Combine remaining 1/3 cup sugar and the cinnamon. Add to apples in large bowl; toss to coat. Spoon over cream cheese layer; sprinkle with almonds.
- Bake 10 min. Reduce temperature to 375 degrees F; continue baking 25 min. or until centre is set. Cool on wire rack. Loosen torte from rim of pan. Cover and refrigerate 3 hours before serving. Store any leftovers in refrigerator.

Steps:
- Preheat oven to 450.
- Cream butter, sugar and vanilla.
- Blend in flour.
- Press into 9" springform pan and spread with jam.
- Combine cream cheese and sugar.
- Add egg and vanilla.
- Mix well.
- Pour over jam.
- Topping: Toss apples with sugar and cinnamon and spoon over cheese.
- Sprinkle almonds on top.
- Bake at 450 for 10 minutes; then 400 for 25 minutes.
- Cool.

- Preheat oven to 450°. In a small bowl, cream butter and sugar. Beat in flour and vanilla until blended. Press onto the bottom of a greased 9-in. springform pan., In a large bowl, beat cream cheese and 1/4 cup sugar until fluffy. Beat in egg and vanilla. Pour over crust. In another large bowl, toss apples with cinnamon and remaining sugar. Spoon over cream cheese layer., Bake 10 minutes. Reduce oven setting to 400°; bake 25 minutes. Sprinkle almonds over top; bake 10-15 minutes longer or until lightly browned and a toothpick inserted in the center comes out clean. Cool on a wire rack. Remove sides of pan before slicing. - Combine softened cream cheese and sugar, mixing until well blended.
- Blend in egg and vanilla.
- pour into pastry lined pan.
- Toss apples with combined sugar and cinnamon.
- spoon apple mixture over cream cheese layer.
- sprinkle with nuts.
- Bake at 450 degrees for 10 minutes.
- Reduce oven temperature to 400 degrees; continue baking 25 minutes.
- Loosen cake from rim of pan.
- Cool; remove rim. Chill.

This is a recipe of a wife of a coworker. She made them for Christmas and they are wonderful. The crust is almost like a shortbread cookie and the filling creamy cheese. Easy to make and very elegant looking.

- Crust: cream butter and sugar, add vanilla and mix well.
- add flour and blend with your hand till crumbly.
- press into the bottom and 3/4 up the sides of 2 9 inch springform pans.
- Filling: beat cream cheese and sugar, add vanilla.
- Add eggs one at a time, beating well after each egg.
- pour half into each crust.
- Topping: Mix apples cinnamon and lemon juice.
- Lay apples on top on cheese mixture in a curcular pattern, and inside and outside row.
- Top with almonds.
- Bake at 350 for 45 minutes to an hour.
- Cool on wire rack for 1 hour.
- Remove from pan and refrigerate over night.
BAVARIAN APPLE TORTE
I entered this dessert at my church's Harvest Fest Pie Bakeoff, and the judges created a category right there and then just for this torte so they could give it a blue ribbon! My friend, Nancy, shared this recipe with me. For such an elegant presentation, it's very easy to make. In this version, you don't even need to mix the apples before putting them on the filling.

- Preheat oven to 350 degrees.
- Grease 9-inch pie pan with Crisco.
- CRUST: Mix together Butter, 1/3 Cup Sugar, 1 Teaspoon Vanilla Extract, 1 Cup Flour. Press into pie pan evenly across bottom and up the sides.
- FILLING: Mix until creamy: 8 ounces Cream Cheese, 1/3 Cup Sugar, 1 Teaspoon Pure Vanilla Extract, 1/4 teaspoon Pure Almond Extract, 1 Egg. Pour into the crust.
- APPLE LAYER: Peel, core and thinly slice Apples. Arrange over cream cheese mixture.
- Mix together 2 Tablespoons Sugar with 1/2 Teaspoon Cinnamon, 1/4 Teaspoon Fresh Grated Nutmeg and sprinkle over apples.
- TOPPING: 1/2 Cup Sliced Toasted Almonds.
- Bake at 350 degrees for 1 hour.
- Cool and refrigerate.
- Hint #1: I purchase almonds already sliced, and simply toast them in a non-stick skillet at medium-high heat until fragrant and just starting to turn golden, just 2 or 3 minutes.
- Hint #2; Have all ingredients at room temperature, and make the recipe in the order as written, saving the apple-peeling until just before you sprinkle on the almonds.
- Hint #3: Use real vanilla extract, not vanilla flavor. It makes a big difference in the quality of flavor.
