Cranberry Apple Stuffed Pork Loin image

An easy and impressive dish that tastes wonderful.

Categories     Meat and Poultry Recipes     Pork

Time 1h35m

Yield 10

Number Of Ingredients 8

1 cup chicken flavored dry stuffing mix
½ cup water
1 (3 pound) boneless pork loin roast
1 cup chopped apple
⅓ cup dried cranberries
⅓ cup chopped toasted pecans
¼ cup finely chopped onion
salt and black pepper to taste

Steps:

  • Preheat an oven to 325 degrees F (165 degrees C). Combine the stuffing mix and water in a mixing bowl; set aside. Grease a roasting pan with cooking spray.
  • Trim the fat and connective tissue from the pork loin. Cut from one side through the middle horizontally to within 1/2-inch of the other side. Open the two sides and spread them out like an open book. Place the pork loin between two sheets of heavy plastic (resealable freezer bags work well) on a solid, level surface. Firmly pound the pork with the smooth side of a meat mallet to a thickness of 1/2-inch.
  • Stir the apple, cranberries, pecans, and onion into the stuffing mix. Season the pork loin with salt and pepper to taste, then spread the stuffing mix onto the cut side of the loin. Roll the pork into a firm cylinder, and secure with cooking twine. Place into the prepared roasting pan.
  • Bake in the preheated oven until the pork is no longer pink in the center, about 1 hour. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C). Cover the meat with two layers of aluminum foil, and allow to rest in a warm area for 10 minutes. Remove kitchen twine before slicing and serving.

APPLE AND PRUNE STUFFED PORK LOIN

Apple and Prune Stuffed Pork Loin image

Provided by Anne Burrell

Time 13h15m

Yield 8 servings

Number Of Ingredients 10

Extra-virgin olive oil
4 slices bacon, cut crosswise into lardons
1 small red onion, cut into 1/4-inch dice
Kosher salt
2 Granny Smith apples, peeled, cored, and cut into 1/2-inch dice
1/2 cup prunes, quartered
2 sprigs fresh rosemary, leaves picked and finely chopped, divided
1/2 cup brandy or Calvados
1 (3 to 4-pound) boneless pork loin
1 cup chicken stock

Steps:

  • Coat a large saute pan lightly with olive oil. Add the bacon and bring the pan to a medium heat. When the bacon is crispy and has released a lot of fat, add the onions and season with salt. Cook the onions until they are soft and aromatic, 5 to 6 minutes. Add the apples, prunes, and half the chopped rosemary. Cook the apples, stirring occasionally, until they start to soften, about 5 minutes. Pull the pan off the heat and add the brandy. Return to the fire and flambe, or let the alcohol just burn off. Remove from the heat and let cool.
  • Lay out a length of plastic wrap about 2-feet in length. Spoon the apple mixture onto the plastic and make a log down the center that is about the same length as the pork loin. Roll the plastic tightly around the apple mixture and twist at the ends to secure. The log should be about 1- inch in diameter. Place the log in the freezer and let it freeze solid. This can and should be done ahead of time.
  • To stuff the pork: Insert a long, thin knife into the center of one end of the pork loin; repeat this process at the other end. Wiggle the knife back and forth to create a place big enough to accommodate your frozen stuffing log. After cutting with the knife, you can use the handle of a long wooden spoon to make sure the incision goes all the way through the pork loin.
  • Preheat the oven to 375 degrees F.
  • Get the stuffing log from the freezer and remove the plastic wrap. Slide the stuffing log through the pork loin - it might need a little encouragement but it should go the length of the loin. Season the outside of the pork generously with salt and sprinkle it with the remaining chopped rosemary.
  • Coat a roasting pan with olive oil and bring the pan to a high heat. Add the pork to the pan and sear it on all sides until it is brown.
  • Remove the pork to a plate and ditch the fat in the roasting pan. Add the pork back to the pan pour in the chicken stock. Place it in the oven for 25 to 35 minutes, depending on how you like your pork. I personally like it pinker and would remove it from the oven when a meat thermometer reaches 130 degrees F. Turn it over halfway through the cooking time. Remove it from the oven, cover it with foil, and let it rest for 15 minutes before carving.

APPLE-STUFFED PORK LOIN WITH CORIANDER, CUMIN AND CINNAMON

Apple-Stuffed Pork Loin With Coriander, Cumin and Cinnamon image

Provided by Mark Bittman

Categories     dinner, roasts, main course

Time 1h

Yield 6 to 8 servings

Number Of Ingredients 13

4 tablespoons butter
2 medium apples, peeled, cored and thinly sliced
1 large onion, chopped
1 teaspoon ground coriander
1 teaspoon ground cumin
1 teaspoon cinnamon
1 teaspoon ground ginger
1 teaspoon paprika
1/2 teaspoon ground turmeric
1 teaspoon salt, or to taste
1 tablespoon freshly ground black pepper
1 boneless pork loin roast, 2 to 3 pounds
1 cup apple juice for basting, or more if needed.

Steps:

  • Heat oven to 450. Put 2 tablespoons of the butter in a large skillet over medium heat. When it starts to foam, add the apples, onion and all the spices, along with some salt and pepper, and cook, stirring occasionally, until the apples and onion are soft, 10 to 15 minutes.
  • Meanwhile, wriggle a thin, sharp knife into each end of the meat, making a kind of pilot hole. Then use the handle of a long wooden spoon to force a hole all the way through the loin. Wriggle the spoon to make the hole as wide as you can. Stuff the apple and onion mixture into the roast from each end, all the way to the center. Sprinkle the roast with salt and pepper.
  • Roast on a rack in a large roasting pan for 15 minutes, then lower the heat to 325. Continue to roast, basting with apple juice about every 15 minutes or so. If the liquid accumulates on the bottom of the pan, use it to baste; if not, add more juice.
  • Start checking the roast after 45 minutes of total cooking time (large roasts can take up to 1.5 hours). When it's done, an instant-read thermometer will register 145. Remove the roast and set it on a platter.
  • Put the roasting pan on the stove over one or two burners on medium-high heat. If there is a lot of liquid, reduce it to about .75 cup, scraping up any brown bits from the bottom of the pan; if the pan is dry, add 1 cup of apple juice and follow the same process. When the sauce has reduced some, stir in the remaining 2 tablespoons butter if you like. Spoon the sauce over the roast, slice and serve.

People drive from miles around to eat at this beautiful inn. This is an awesome dish. If fresh berries are not available, of course you can use frozen. If you prefer not to use brandy, you could use apple juice.

Categories     Trusted Brands: Recipes and Tips     Reynolds®

Time 1h20m

Yield 4

Number Of Ingredients 17

2 tablespoons olive oil
2 cloves garlic, minced
2 medium shallots, diced
1 medium fennel bulb, diced
½ teaspoon fennel seeds, crushed
2 tablespoons minced fresh rosemary, divided
1 large tart, firm apple (like Granny Smith), diced
½ teaspoon kosher salt
½ teaspoon freshly ground black pepper
1 tablespoon honey
1 teaspoon apple cider vinegar
1 tablespoon apple brandy
½ cup crumbled Gorgonzola dolce or other blue cheese
2 bacon strips, cooked crisp, fat drained and crumbled
1 ¾ pounds boneless pork loin roast, butterflied
Kitchen twine
Reynolds Wrap® Heavy Duty Aluminum Foil

Steps:

  • Preheat oven to 350 degrees F. In a medium saute pan, heat 1 tablespoon olive oil. Add the garlic and shallots and cook on medium heat until fragrant and translucent, about 1-2 minutes. Add the fennel, fennel seed, 1 tablespoon of the rosemary, apple, salt, black pepper, honey, vinegar, and apple brandy. Cook on medium heat until the apple and fennel are browned, about 15 minutes. Fennel should be soft but not mushy and still have some firmness. Remove the filling from heat and cool to room temperature. Toss in the blue cheese and the crispy bacon.
  • Line a baking sheet with a heavy sheet of Reynolds Wrap® Heavy Duty Aluminum Foil, making sure the sheet is long enough to wrap up over the ends of the roast. Layer another two sheets of Reynolds Wrap® Heavy Duty Aluminum Foil over the first one. Set aside.
  • Place the pork loin fat side down on a work surface, season the inside lightly with salt and pepper and then evenly spread the filling. Roll the pork up lengthwise and tie it securely with kitchen twine. Rub with remaining olive oil and season evenly with kosher salt. Heat a large heavy skillet (big enough to hold the entire loin) over high heat until very hot. Add the pork loin and brown very well on all sides, about 1 minute per side.
  • Using tongs, place the roast in the center of the foil. Sprinkle with pepper and the rest of the rosemary. Bring up foil sides. Double fold top and ends to seal packet, leaving room for heat circulation inside.
  • Bake the wrapped loin for 45 minutes or until an instant-read meat thermometer reads 130 degrees F. Let the pork rest, wrapped, for 10 minutes. Open packet carefully by cutting along top fold with a sharp knife, allowing steam to escape; then open top of foil packet. Slice and serve.

APPLE STUFFED PORK LOIN WITH APPLE-SHALLOT CREAM SAUCE

APPLE STUFFED PORK LOIN WITH APPLE-SHALLOT CREAM SAUCE image

Categories     Pork     Roast     Dinner

Yield 8 persons

Number Of Ingredients 13

Pork Loin:
1 pork loin, approximately 5 pounds (3 1/2 pounds after boning)
salt and pepper for seasoning
3/4 cup apple slices
1/2 cup Maui or Vidalia onion slices
1 teaspoon thyme
1/2 cup chicken broth
Apple-Shallot Cream Sauce:
2 tablespoons butter
2 tablespoons minced shallots
1 1/4 cups peeled and chopped apple
1 cup chicken broth
1 cup cream

Steps:

  • Pork Loin: Have your butcher remove the bone from roast (ask for some string to tie roast with after stuffing). Lay roast flat and sprinkle inside with salt and pepper. Preheat oven to 400 degrees. Arrange apple and onion slices, lengthwise, down center of roast. Bring sides of roast together to enclose apple and onion slices. Tie in several places to enclose filling and form a lengthwise (rolled) roast. Sprinkle outside with salt, pepper and thyme. Pour chicken broth in bottom of a roasting pan. Set roast on a rack in pan and place in preheated oven. Immediately turn heat down to 350 degrees and roast for 1 1/2 hours. Begin sauce while roast is cooking. Apple-Shallot Cream Sauce: Heat butter in a skillet set over medium heat. When foam from butter subsides, sauti shallots and apple for 5 minutes. Add chicken broth and bring to a boil. Stir well, then set sauce aside. When roast is done, remove from pan and allow roast to set before carving. Add sauce to the roasting pan placed over medium-high heat on burners. Deglaze pan with the sauce, incorporating browned bits on bottom of roasting pan into sauce. Simmer for 5 minutes. Add cream, reduce heat and simmer gently for 5 minutes. Slice roast and serve with sauce

APPLE AND PLUM STUFFED PORK LOIN

Apple and Plum Stuffed Pork Loin image

One by me, adapted from a Scandinavian cookbook. (Actually, I think this method was described to me by a friend and I used that description in combination with glancing at a recipe.) From Friday, December 28th, 2001, LJ entry describing dinner. It was really easy to make, and absolutely delicious! A tribute to the folks in Puget Sound's Ballard and my own German/English/Scandinavian heritage. :)

Categories     Plums

Time 2h

Yield 4-6 serving(s)

Number Of Ingredients 11

1 1/2 lbs pork loin
kitchen twine
1 cup dried plums or 1 cup prune
water or wine
1 cooking apple, peeled, cored, and sliced
2 tablespoons olive oil
1 tablespoon butter
1 cup white wine
1 cup half-and-half
2 tablespoons black currant jelly or 2 tablespoons red currant jelly
salt & freshly ground black pepper, to taste

Steps:

  • Place the dried plums (prunes) in a saucepan with water or wine to cover and simmer them for 2-3 minutes to rehydrate a bit, then remove from heat and let sit for about 30 minutes.
  • Meanwhile, roll and tie the loin so that you'll be able to stuff things into the inside.
  • Drain the rehydrated plums, reserving the liquid.
  • Using the end of a long wooden spoon (or something else you have about that will work), push the plums and apple slices alternately into the rolled and tied pork loin from both ends.
  • Preheat oven to 350 degree F.
  • In a large roasting pan on the stovetop, melt the oil and butter together, then brown all sides of the stuffed loin.
  • Add the reserved plum liquid and wine, then bake in the roasting pan at 350 degrees F for 1 1/2 to 2 hours (time depending on the thickness and weight of your loin), checking for doneness periodically.
  • When it's done, carefully remove the meat from the roasting pan and let the meat sit, covered, for a few minutes on a platter (probably the one you'll serve it on).
  • Move the roasting pan back to the stovetop and set on medium low, then pour in a cup of half and half into the remaining liquid in the pan.
  • Stir in one to two tablespoons of current jelly (to taste) and let it reduce to your preferred thickness for the sauce. Season to taste with salt and freshly ground black pepper.
  • Untie the loin, cut, and serve it with the sauce and whatever delicious sides you've chosen.
  • Makes 4-6 servings.
  • Note: some folks like to add a bit of Dijon into the sauce.

Making apple stuffed pork loin recipes is a great way to add some variety to your dinner rotation. It's a dish that can be served on any occasion or just as a regular weeknight meal, and it always makes an impression. However, it can be tricky to get it just right. Here are some valuable tips to help you perfect your apple stuffed pork loin recipe.

Tip 1: Choose the Right Cut of Pork

When making an apple stuffed pork loin recipe, it's important to choose the right cut of pork. Pork loin is a popular choice because it's relatively lean and has a mild flavor. It's also easy to stuff and can be cut into neat slices. However, be careful not to overcook the pork loin, as it can become dry and tough.

Tip 2: Properly Stuff the Pork

The stuffing is the star of the show when it comes to apple stuffed pork loin recipes. You can choose anything from breadcrumbs to rice to apples and herbs for your stuffing. However, one of the biggest mistakes people make when stuffing pork loin is not properly preparing it. The pork should be butterflied, which means slicing it down the middle and spreading it out like a book. This will create a pocket in the pork that you can fill with your stuffing. Be sure not to overstuff it, or it won't cook evenly.

Tip 3: Use Apples that Maintain their Shape

When it comes to the stuffing, apples are a great choice. However, not all apples are created equal. Some apples will break down and become mushy during the cooking process, while others will maintain their shape and add a nice texture to the dish. Some good apple choices for stuffing pork loin include Honeycrisp, Granny Smith, and Braeburn.

Tip 4: Season Well

One of the keys to making a delicious apple stuffed pork loin recipe is to season it well. Pork can be bland on its own, so it's important to use a combination of spices and herbs to make it tasty. Some good seasoning choices for pork loin include garlic, rosemary, sage, thyme, salt, and pepper. Be sure to season both the inside and outside of the pork, as well as the stuffing.

Tip 5: Use a Meat Thermometer

As mentioned earlier, pork loin can become dry and tough if overcooked. Therefore, it's important to use a meat thermometer to ensure that it's cooked to perfection. The internal temperature of the pork should reach 145°F, which is the safe minimum temperature for pork according to the USDA.

Tip 6: Let it Rest

After the pork is done cooking, it's important to let it rest for at least 10 minutes before slicing into it. This will allow the juices to redistribute and will make for a more tender and flavorful dish. If you cut into the pork too soon, you risk losing those precious juices, which can make the meat dry.

Tip 7: Serve with the Right Sides

When serving apple stuffed pork loin, it's important to choose the right sides. Some good choices include roasted vegetables, mashed potatoes, green beans, and a salad. You can also serve it with a sauce, such as a cider reduction or a mustard cream sauce, to add some extra flavor.
Conclusion
Making apple stuffed pork loin recipes can seem intimidating, but with these valuable tips, you can create a delicious and impressive dish. Be sure to choose the right cut of pork, properly stuff it, use apples that maintain their shape, season well, use a meat thermometer, let it rest before slicing, and serve with the right sides. With a little patience and practice, you'll soon be making apple stuffed pork loin like a pro.
