APPLE SAGE CORNBREAD-STUFFED PORK CHOPS FOR TWO

Apple Sage Cornbread-Stuffed Pork Chops for Two image

These pork chops are going to be a date night favorite in your household this fall. It's a warm, hearty dish that you can make together: One of you can hold the pork chop as the other stuffs it, or vice versa.

Provided by Food Network

Categories     main-dish

Time 1h15m

Yield 2 servings

Number Of Ingredients 11

2 boneless pork chops (1 pound total)
2 tablespoons olive oil
1 garlic clove, minced
1/2 onion, diced
1/2 cup chopped green apple, such as Granny Smith
1/2 cup diced carrots
1/2 cup diced celery
1 cup crumbled cornbread
1/4 cup chicken broth or stock
4 sage leaves, coarsely chopped
Salt and ground black pepper

Steps:

  • Slice into the pork chops horizontally, but not all the way through. (You're essentially butterflying the pork chops and giving them a little pouch.) Set aside.
  • In a large skillet over medium-high heat, heat up 1 tablespoon olive oil. Add the garlic and onion and saute until fragrant and softened, about 3 minutes. Add the apple, carrots and celery and cook until softened, 7 to 10 minutes.
  • Add in the cornbread, chicken broth and sage leaves, and stir to incorporate. Season with salt and pepper to taste. Remove the skillet from the heat and let the filling cool for 10 minutes.
  • Carefully spoon the filling into the pork chops. If they become full and you can no longer stuff anymore, that's ok-save the filling to eat on the side. Use toothpicks to secure the chops shut. If the toothpicks poke out, use scissors to trim them flush to the pork chops.
  • In the same skillet you used earlier, heat up the remaining tablespoon olive oil. Sear the pork chops, 3 to 5 minutes per side. Turn the heat down to medium and continue cooking, flipping occasionally, until the pork chops have cooked through completely, 15 to 20 minutes. Serve warm with the additional cornbread stuffing!

STUFFED PORK CHOPS WITH GORGONZOLA AND APPLE

Stuffed Pork Chops with Gorgonzola and Apple image

This is a full-flavored, pungent, yet subtle special occasion dish. We served the meal with diced, spiced new potatoes with chopped onions baked in foil for 40 minutes, and a Caesar salad.

Provided by Richard D. Jehn

Categories     Main Dish Recipes     Pork     Pork Chop Recipes     Stuffed

Time 1h45m

Yield 2

Number Of Ingredients 13

1 tablespoon butter
½ tablespoon dried thyme
½ cup chopped Granny Smith apples
ground black pepper to taste
¼ cup Gorgonzola cheese at room temperature, crumbled
2 thick cut pork chops
½ teaspoon olive oil
2 cloves garlic
¼ cup Gorgonzola cheese
3 tablespoons dry sherry
⅛ cup heavy cream
½ cup chicken broth
salt and pepper to taste

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • To make the apple stuffing: In a saute pan or skillet on medium heat, melt the butter and saute thyme, chopped apples, salt and pepper together until the apples are completely softened; about 15 to 20 minutes.
  • Place the apple mixture in a bowl and mix in 1/4 cup Gorgonzola cheese. The cheese should liquefy into the stuffing within a couple of minutes.
  • To prepare the pork chops: Butterfly the pork chops by slicing them parallel to the plane of the chop from the fat side to the bone. Stuff each one with about 2 to 3 tablespoons of the apple mixture.
  • Bake the chops for about 1 hour. Place the chops on a rack with the two stuffing sides pressed together to hold the stuffing inside the chops.
  • To make the sauce: Heat the oil in a saute pan or skillet on medium heat, then saute the garlic until transparent, and the cheese until slightly melting. Immediately add the sherry, let cook for a minute until combined, then add the cream and 1/4 cup of the chicken stock, salt and pepper. Stir until well blended. Stir occasionally and reduce the liquid on medium high heat until the sauce begins to toast/caramelize and turn darker brown. Add the remaining 1/4 cup chicken stock, reincorporate the cheese and continue reducing until there is just 1/4 to 1/2 cup of thick liquid remaining.

Although I've never frozen them, I bet they'd keep well for a quick dinner as this is easily doubled or tripled. This dish is a big hit with my family and friends. When it comes to cooking pork chops, there are few things more delicious than a perfectly cooked apple stuffed pork chop. The combination of savory pork with sweet, juicy apples is a crowd-pleaser, and this dish is perfect for a cozy fall dinner or a special occasion. If you're new to cooking pork chops, or just looking to take your apple stuffed pork chops to the next level, here are some valuable tips to keep in mind:

Choosing the right pork chops:

Not all pork chops are created equal, and you'll want to choose the right cut for your apple stuffed pork chops recipe. Look for bone-in pork chops that are at least 1 inch thick; thinner chops will cook too quickly and can dry out, while boneless chops lack flavor and can easily overcook. Avoid chops with excess fat, as this can make the dish greasy.

Preparing the apples:

The key to a great apple stuffed pork chop recipe is, of course, the apples! Use firm, tart apples like Granny Smith, Honeycrisp, or Braeburn for the best results. Peel and core the apples, then chop them into small pieces. You can also add other ingredients like dried cranberries, raisins, or nuts to the stuffing for extra flavor and texture.

Searing the chops:

Before stuffing and baking the pork chops, it's important to sear them on the stovetop. This will create a brown, caramelized crust on the outside of the meat, which adds flavor, locks in juices, and helps the chops cook evenly. Heat a tablespoon of oil in a skillet over medium-high heat, then add the chops and cook for 3-4 minutes per side until browned.

Making the stuffing:

To create the stuffing for your apple stuffed pork chops, combine the chopped apples with breadcrumbs, herbs, and seasonings like cinnamon, nutmeg, and thyme. You can also mix in some butter or olive oil to help bind the stuffing together. Use a spoon to stuff the mixture into a pocket you will create through the side of each chop. Be careful not to overstuff the chops, as this can cause them to split open during cooking.

Baking the chops:

Once the chops are stuffed, it's time to bake them in the oven. Preheat the oven to 375 F and place the stuffed chops in a baking dish. You can also add a cup of chicken or vegetable broth to the dish to keep the chops moist as they cook. Bake for about 25-30 minutes, or until the internal temperature of the pork reaches 145 F. Let the chops rest for a few minutes before serving.

Serving:

When it comes to serving your apple stuffed pork chops, there are many options. You can pair them with roasted vegetables like brussels sprouts or sweet potatoes, or serve them alongside a simple salad. For an extra touch of sweetness, drizzle some maple syrup over the chops before serving. You can also garnish with fresh herbs like parsley or thyme for added flavor and presentation.

Cooking variations:

There are many ways to modify the traditional apple stuffed pork chops recipe to suit your tastes or dietary needs. For example, you can swap out the pork chops for boneless chicken breasts or even tofu for a vegetarian version of the dish. You can also experiment with different types of apples or stuffing mix-ins, such as chopped bacon, diced onions or shredded cheddar cheese. Additionally, you can cook your apple stuffed pork chops in different ways – try grilling them over charcoal, smoking them over wood chips, or even slow-cooking them in a crockpot.
In conclusion:
Apple stuffed pork chops is a delicious and satisfying meal that is sure to impress your family and guests.
