HOMEMADE MINCE PIE WITH CRUMBLY TOPPING

Homemade Mince Pie with Crumbly Topping image

This pie has no meat in it (it's a 'mock' mincemeat pie). It doesn't use mincemeat mixes or prepared pie crusts. It's homemade, like ma (or grandma) used to make. Enjoy it! I made it for my father for Father's Day (he loves mince pie).

Time 2h30m

Yield 8

Number Of Ingredients 17

½ cup cold butter
1 ½ cups all-purpose flour
½ teaspoon salt
½ cup cold water
1 ½ cups raisins
5 apples - peeled, cored and chopped
2 tablespoons finely chopped grapefruit peel without white layer
⅓ cup orange juice
½ cup apple cider
¾ cup white sugar
½ teaspoon ground cinnamon
¼ teaspoon ground cloves
½ graham cracker, crushed
⅓ cup white sugar
¾ cup all-purpose flour
6 tablespoons butter
½ graham cracker, crushed

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • In a bowl, mix together 1/2 cup of cold butter with 1 1/2 cups flour and the salt with a fork until the mixture is very crumbly. Mix in water, a tablespoon at a time, just until the mixture holds together. Mix again with a fork, then turn out onto a floured pastry cloth. Pat the dough out into a round piece, and roll out into a 10-inch circle. Invert a 9-inch pie dish onto the dough. Flip the dough over, and peel from the pastry cloth; adjust the crust into the plate if necessary. Fold the dough over the edge of the pie dish. Set the crust aside.
  • Combine the raisins, apples, grapefruit peel, orange juice, and apple cider in a saucepan, and bring to a simmer over medium heat. Cook, stirring occasionally, until the apple pieces are soft, about 15 minutes. Stir in 3/4 cup of sugar, the cinnamon, cloves, and half a crushed graham cracker, and mix well.
  • Mix together 1/3 cup of sugar, 3/4 cup of flour, 6 tablespoons of butter, and half a crushed graham cracker in a bowl, stirring until the mixture looks like fine crumbs. Pour the mince filling into the prepared pie crust, and sprinkle evenly with the streusel topping.
  • Bake in the preheated oven for 15 minutes, and reduce oven temperature to 350 degrees F (175 degrees C); bake until the topping is lightly browned, about 30 more minutes. Allow to cool before serving.

RUSTIC APPLE STREUSEL PIE

Rustic Apple Streusel Pie image

Be sure to slice the apples thin so that they cook in the amount of time needed to bake the crust - this isn't a chunky filling.

Provided by Emily Weinstein

Categories     dessert

Time 2h

Yield 8 servings

Number Of Ingredients 15

1/2 recipe Tender Pie Dough (see recipe)
4 pounds Granny Smith apples, peeled, cut into 1/4-inch-thick slices and trimmed
2/3 cup superfine sugar
3 tablespoons unbleached all-purpose flour, plus more for rolling out the dough
2 teaspoons pure maple syrup, preferably Grade B
2 teaspoons fresh lemon juice
1/2 teaspoon ground cinnamon
3/4 teaspoon pure vanilla extract
1 large egg, well beaten with a hand blender
1/3 cup plus 1 tablespoon unbleached all-purpose flour
1 tablespoon superfine sugar
1 tablespoon light brown sugar
1/8 teaspoon ground cinnamon
2 1/2 tablespoons unsalted butter, melted
1/8 teaspoon pure vanilla extract

Steps:

  • Position a rack in the center of the oven and preheat to 350°F. Line a half-sheet pan with parchment paper.
  • To make the filling, gently toss the apples, sugar, flour, maple syrup, lemon juice, cinnamon, and vanilla in a medium bowl until well combined.
  • Make the streusel. Combine the flour, superfine sugar, brown sugar, and cinnamon in a small bowl. Stir the melted butter and vanilla together in another small bowl. Gradually stir the butter mixture into the flour mixture, just until evenly moistened (you may not need all of the butter). Squeeze the mixture in your hands until thoroughly combined. Crumble the mixture in the bowl to make fine crumbs with some small lumps.
  • Lightly flour a work surface. Unwrap the dough and rap the entire circumference around its edge on the work surface. Dust the top of the dough with flour. Roll out into a 15-inch round. Transfer the dough to a 9-inch pie pan, centering it in the pan, and let the excess dough hang over the sides. Heap the apples in the crust, mounding them high in the center. Bring up the edges of the dough, pleating the dough as needed around the circumference of the dish - the center of the filling will be visible. Brush the exposed crust with the egg. Place the streusel over the exposed filling to cover it, then sprinkle any remaining streusel over the crust.
  • Place the pie on the half-sheet pan. Bake, rotating the pan halfway through, until the crust is golden brown and any juices that escape are thick, about 1 hour. If the crust is browning too quickly, tent it with parchment paper. Remove from the oven and cool on a wire rack for 1 hour. Serve warm or at room temperature.

APPLE AND PEAR STREUSEL PIE

Apple and Pear Streusel Pie image

You might think that a pastry chef would never recommend buying pie crusts but hey, its much better to make a pie with a pre-made crust than not to make a pie at all! For the best flavor, always look for the ones made with at least some butter, rather than all shortening. You can place the crust in a glass pie dish. That way you can check the bottom crust as it bakes and make sure it's getting nice and golden which to my mind is the most important step in pie-making. Nothing ruins a delicious pie like this classic combination of autumn fruits and warm spices faster than an undercooked, soggy bottom crust. You can mix the topping and keep it refrigerated for up to 7 days.

Time 2h

Yield 8 servings

Number Of Ingredients 11

1/2 cup all-purpose flour
1/4 cup light brown sugar
1/4 teaspoon ground cinnamon
4 tablespoons cold unsalted butter, cut into pieces
1 refrigerated or frozen 9-inch deep-dish pie crust (see above)
3 Granny Smith or other tart apples, peeled, cored, and sliced 1/4-inch thick
3 firm but ripe pears, peeled, cored, and sliced 1/4-inch thick
1/2 cup light brown sugar
1 1/2 tablespoons cornstarch
1/4 teaspoon ground cinnamon
1 tablespoon cold butter, cut into small pieces

Steps:

  • Make the topping: In a medium bowl, mix the flour, brown sugar, and cinnamon. Add the butter and, using your fingertips, pinch the ingredients together into a sandy, crumbly mixture. Do not over mix; as soon as the mixture is sandy, cover and refrigerate until ready to use.
  • Heat the oven to 375 degrees F. If using a refrigerated crust, use it to line a glass pie dish. If using a frozen crust, let thaw at room temperature and gently remove the crust from the aluminum liner. Transfer to a glass pie dish.
  • In a medium bowl, toss the apples, pears, sugar, cornstarch, cinnamon, and butter together. Place the filling in the pie crust. Sprinkle the streusel topping on top and place the pie on a sheet pan to catch any juices. Bake for 40 to 50 minutes, until the crust is golden brown and the juices are bubbling. Check the pie after 30 minutes; if the streusel topping is already brown, cover lightly with foil.
  • Let cool at least 30 minutes before serving. Serve warm or at room temperature.

This pie combines the delicious flavors of apple, cinnamon, and nutmeg with the rich taste of mincemeat filling. The crunchy, golden-brown streusel topping adds a delightful texture and flavor, making it the perfect end to any meal.

What is Mince Pie?

Mince pie, also known as Christmas pie, is a traditional British pastry filled with a mixture of chopped dried fruits, spices, sugar, and suet. The mincemeat filling can be made well ahead of time and stored in a cool place for several weeks to enhance the flavor. Although the recipe traditionally called for beef or venison, most modern versions omit the meat altogether, or use vegetarian substitutes.

The History of Mince Pie

Mince pie has been around for centuries and is steeped in history and tradition. The pie’s roots can be traced back to the Middle Ages when it was known as shred or chewet pie. The original recipe contained meats such as lamb or veal, rather than the sweet filling we know today. The pie’s popularity continued to grow throughout the centuries, and soon became a symbol of Christmas in the UK. In fact, the British Parliament even passed laws in the 17th century mandating that mince pies be served on Christmas Day.

Apple Streusel Mince Pie Recipe

To make an apple streusel mince pie, you will need to gather a few ingredients:
Ingredients:
- 1 pre-made pie crust (store-bought or homemade) - 1 jar of mincemeat filling (14 oz) - 2 medium-sized Granny Smith apples, peeled and diced - 2 tbsp brown sugar - 1 tsp cinnamon - 1/4 tsp nutmeg - 1/4 cup flour - 1/4 cup rolled oats - 1/4 cup brown sugar - 1/2 tsp cinnamon - 1/2 stick unsalted butter, softened
Steps:
1. Preheat the oven to 375°F (190°C). 2. Roll out the pre-made pie crust and place it in a 9-inch pie dish. Trim off any excess dough and crimp the edges. 3. In a medium-sized bowl, mix together the mincemeat filling, diced apples, brown sugar, cinnamon, and nutmeg. 4. Pour the mixture into the pie crust and even it out. 5. In a separate bowl, mix the flour, rolled oats, brown sugar, and cinnamon. 6. Cut the softened butter into small cubes and mix it into the dry ingredients until it resembles coarse crumbs. 7. Sprinkle the streusel mixture over the top of the pie, covering the filling completely. 8. Bake the pie for 50-55 minutes or until the top is golden brown and the filling is bubbling. 9. Remove the pie from the oven and let it cool completely before slicing and serving.

Conclusion

Apple streusel mince pie is a delightful twist on the classic British mince pie. The combination of tart apples, rich mincemeat filling, and crunchy streusel topping creates a perfect balance of flavors and textures. So, whether you are looking for a unique dessert to impress your guests or just want to indulge in a delicious treat yourself, apple streusel mince pie is sure to delight your taste buds.

The holiday season is incomplete without delicious, warm pies. Apple streusel mince pies are a perfect treat for the cold winter months. Making these pies can be slightly daunting for beginners, but with the right techniques and tips, you’ll be able to whip up a delicious batch of apple streusel mince pies in no time. Here are some valuable tips you should keep in mind when making apple streusel mince pie recipes.

Choosing the Right Apples

The first step to making the perfect apple streusel mince pies is choosing the right apples. Not all apples are equal when it comes to baking. Some apples contain more water and will turn mushy when baked, while others don’t release as much moisture and add a great texture to the pies. Some of the best apples for baking are Granny Smith, Rome, Honeycrisp, Braeburn, and Jonagold. These apple varieties hold their shape well when baked and add a pleasant tartness that complements the sweet mincemeat filling.
Tip:
You should avoid using Red Delicious apples, as they contain a lot of water and will turn mushy when baked.

Making the Mincemeat Filling

Mincemeat is a traditional filling for pies that’s made from a blend of chopped apples, raisins, spices, and alcohol. You can make your mincemeat filling from scratch or use a store-bought one. If you’re making the mincemeat filling from scratch, you should use a mixture of tart and sweet apples, such as Granny Smith and Honeycrisp. Chop the apples into small pieces and combine them with sugar, raisins, candied peel, spices such as cinnamon, nutmeg, and allspice, and a little brandy or rum.
Tip:
If you don’t want to use alcohol in the recipe, you can substitute it with apple juice.

Making the Pie Crust

One of the most important components of apple streusel mince pies is the pie crust. Pie crusts can be tricky to make, but with a few tips, you’ll be able to make a perfect one that’s flaky and delicious. To make the pie crust, you’ll need flour, butter, sugar, salt, and water. You’ll need to use cold butter and cold water, as this will prevent the crust from becoming tough. You can either make the pie crust by hand or use a food processor.
Tip:
Make sure to use ice-cold water when making the pie crust. This will help to keep the butter cold and prevent the pastry from becoming tough.

Rolling Out the Pie Crust

Once you’ve made the pie dough, it’s time to roll it out. Rolling out the dough can be tricky, but there are a few things you can do to make it easier. First, make sure that the dough is chilled before rolling it out. This will make it easier to handle. Second, lightly flour your work surface, rolling pin, and dough to prevent sticking.
Tip:
When rolling out the dough, use a light touch and roll the dough from the center outwards. This will help to keep the dough in an even thickness.

Filling the Pies

Once you’ve rolled out the pie crust, it’s time to fill the pies. You should spoon the mincemeat filling into the crust, leaving about 1/4 inch of space between the filling and the top of the crust.
Tip:
To prevent the crust from becoming soggy, you can brush the bottom of the crust with a beaten egg before adding the filling.

Making the Streusel Topping

The streusel topping is what sets apple streusel mince pies apart from traditional mince pies. The streusel adds a delicious crunch and a hint of sweetness to the pies. To make the streusel, you’ll need flour, sugar, butter, and chopped nuts. You can use any nuts you like, but pecans and walnuts work particularly well. Combine the flour, sugar, and nuts in a bowl, and then mix in the butter until you have a crumbly mixture.
Tip:
Don’t overmix the streusel topping, as this will cause it to become too crumbly.

Baking the Pies

Once you’ve filled the pies and added the streusel topping, it’s time to bake them. You should preheat your oven to 375°F and bake the pies for 20-25 minutes, or until the crust is golden brown and the filling is bubbling.
Tip:
If the crust is browning too quickly, you can cover it with aluminum foil to prevent it from burning.

Conclusion

Apple streusel mince pies are a delicious and warming treat during the cold winter months. With the right tips and techniques, you can make a perfect batch of pies that will impress your family and friends. Remember to choose the right apples, make a flavorful mincemeat filling, roll out the dough gently, and finish with a sweet and crunchy streusel topping. Enjoy your delicious apple streusel mince pies with a dollop of whipped cream or a scoop of vanilla ice cream.
