1 1/2 cups chopped Granny Smith apples (2 to 3 apples)
1/2 cup sugar
1/4 cup flour
2 tablespoons butter

Accompaniment: vanilla ice cream

Steps:

  • Sift flour and measure then sift together with the other dry ingredients. Beat the egg, then add the milk and melted shortening. Pour the wet into the dry then add the raw apples and mix well. Pour into a well greased 8-inch square pan. Mix together the streusel ingredients and sprinkle over the top of the batter. Bake at 400 about 25 to 30 minutes or until a toothpick inserted comes out clean. Serve the coffee cake with vanilla ice cream.

100g butter , plus 1 tbsp
175g light brown muscovado sugar , plus 1 tbsp
2 dessert apples , peeled and cut into 1.5cm pieces
2 eggs
1 tsp vanilla extract
200g plain flour
1 tsp baking powder
½ tsp ground cinnamon
100ml milk
25g flour
85g demerara sugar , plus 1 tbsp
½ tsp ground cinnamon
50g cold butter
3 tbsp toasted, chopped hazelnuts

Steps:

  • Heat 1 tbsp butter and 1 tbsp sugar in a large frying pan over medium heat until the sugar starts to melt. Add apples, then cook for about 5 mins, until nicely browned and the sauce is a rich caramel. Leave to cool.
  • While the apples cool, make the topping. In a food processor or using the tips of your fingers, rub together flour, 85g sugar, cinnamon and cold butter until the mixture is crumbly and only pea-size pieces of butter remain. Stir in 2 tbsp of hazelnuts. Set aside in a cool place.
  • Heat oven to 180C/160C fan/gas 4. To make the cake, place the remaining butter and sugar in a bowl or food mixer and beat until light and creamy. Add the eggs one at a time, followed by the vanilla extract. Add the flour, baking powder, cinnamon and milk in two goes, alternating between dry and wet ingredients. When the mixture is well combined, stir through the apples.
  • Grease a 20cm cake tin with removable base and line the base with a circle of baking paper. Spoon in the cake mixture, smooth over the top with a spoon, then sprinkle over the streusel topping. Scatter with the remaining 1 tbsp demerara sugar and hazelnuts. Cook in the oven for 50 mins-1 hr or until a skewer inserted into the cake comes out clean. Leave to cool in the tin for 10 mins, then turn out onto a baking rack, remove paper and cool.

  • Heat oven to 190C/fan 170C/gas 5. Butter two 20cm sandwich tins and line with non-stick baking paper. In a large bowl, beat all the cake ingredients together until you have a smooth, soft batter.

Once the cake mix is in the pan, poke into it thick slices from the 4 peeled and cored small eating apples (Cox's are ideal). 4 cups diced peeled cored granny smith apples
3 tablespoons sugar
1 teaspoon ground cinnamon
1 1/2 cups flour
1 cup brown sugar, firmly packed
1/2 cup unsalted butter, cut into pcs. room temperature
1/2 teaspoon salt
3/4 cup canned pumpkin puree
1/3 cup sour cream
2 tablespoons sugar
2 teaspoons pumpkin pie spice
1 teaspoon baking soda
2 large eggs

Steps:

  • For Apples: Melt butter in large non-stick skillet over med-high heat.
  • Add apples, saute until apples begin to brown, about 5 minutes.
  • Add sugar, cinnamon and saute' until golden brown, about 3 minutes.

3/4 c all purpose flour
1/2 c butter, chilled and diced
2 tsp cinnamon
1 c chopped walnuts
3 1/4 c all purpose flour

3/4 c butter, room temperature
1 1/2 c white sugar
3 eggs
2 tsp pure vanilla extract
16 oz sour cream
2 to 3 large baking apples, peeled, cored and finely diced

Steps:

  • 1. Preheat oven to 350' degrees. Grease and flour a bundt cake pan or spray with bakers secret.
  • 2. Make Streusel: In medium bowl, mix brown sugar, 3/4 cup flour and cinnamon.
  • 3. Cut in butter with fork until crumbly. Stir in walnuts. Set aside.
  • 4. To Make Cake: In a medium bowl, stir together 3 1/4 cups flour, baking powder and baking soda.
  • 5. In large bowl, cream together the butter and sugar until light and fluffy.

  • 12. Bake 50 to 60 minutes or untila toothpick comes out clean. Cool in the pan on a wire rack for 15 minutes. Place a plate or cookie sheet over bundt and invert. Cool Completely
  • 13. Caramel Topping: Place 1 stick butter, 1 cup brown sugar and 1/4 cup milk in a small saucepan.
  • 14. Boil for 3 minutes. Remove from heat and add 1 teaspoon vanilla. Stir. Let cool.
  • 15. Pour over apple cake, top with chopped walnuts if desired.
