2 cups all-purpose flour
1 cup granola without raisins
2/3 cup sugar
3 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
2 large eggs, room temperature
2/3 cup unsweetened apple juice
1/4 cup canola oil
1-1/2 cups grated peeled apples

Steps:

  • In a large bowl, combine the first 7 ingredients. In another bowl, whisk the eggs, apple juice and oil. Stir into dry ingredients just until moistened. Fold in apples., Fill 12 greased or paper-lined muffin cups three-fourths full. Bake at 400° for 18-20 minutes or until a toothpick inserted in the center comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Serve warm., Freeze option: Freeze cooled muffins in tightly sealed freezer containers. To use, thaw at room temperature or, if desired, microwave each muffin on high for 20-30 seconds or until heated through.

½ cup margarine
⅔ cup white sugar
2 eggs
1 ½ cups all-purpose flour
1 teaspoon ground cinnamon
1 teaspoon ground allspice
2 teaspoons baking powder
½ teaspoon baking soda
1 cup applesauce

Steps:

  • Preheat oven to 350 degree F (175 degrees C). Line a mini muffin pan with paper liners.
  • In a large bowl, cream together the butter or margarine and sugar. Add eggs, and beat until smooth. Blend in cinnamon, allspice, baking powder, and baking soda. Alternately add in a half cup of applesauce, one cup of flour, remaining applesauce, and remaining flour. Stir until just blended together. Pour batter into muffin cups 2/3's of the way full.
  • Bake in preheated 350 degree F (175 degrees C) oven for 17 minutes.

⅓ cup whole wheat flour
1 ¼ teaspoons baking powder
¼ teaspoon baking soda
½ teaspoon kosher salt
¾ stick unsalted butter, room temperature
½ cup granulated sugar
¼ cup brown sugar
2 large eggs, room temperature
¼ cup apple sauce
1 honeycrisp apple, shredded, plus 2, finely diced, divided
nonstick cooking spray, for greasing
1 ½ tablespoons unsalted butter, melted
2 tablespoons demerara sugar
