Number Of Ingredients 13

3/4 cup (1 1/2 stick) unsalted butter
1 1/2 cup firmly packed light-brown sugar
2 large eggs
1 1/2 cup raisins
1 1/2 cup currants
1 1/2 cup coarsely chopped walnuts
2 2/3 cups cake flour
3/4 teaspoon coarse salt
3/4 teaspoon ground cloves
1 1/2 teaspoon baking soda
1 1/2 teaspoon ground cinnamon
3/4 teaspoon freshly grated nutmeg
1 1/2 cup thick applesauce, warmed

Steps:

  • Combine the raisins, currants, and walnuts in a small bowl. Sprinkle with a tablespoon of flour and toss to coat to prevent sinking during baking. Whisk remaining flour with other dry ingredients in a medium bowl. Beat flour mixture into butter mixture alternating with applesauce. Reduce to low speed and beat in raisins, currants, and nuts. Pour batter into prepared pan and bake until a cake tester inserted into the center comes out clean, about 60 minutes.

Time 2h30m

Number Of Ingredients 17

1/3 cup granulated sugar
1 tablespoon water
3 tart green apples, such as Granny Smith, cored, peeled, and cut into 1-inch chunks
2 sticks unsalted butter, room temperature, plus more for pan
3 cups all-purpose flour, plus more for pan
2 1/2 teaspoons baking powder
1/2 teaspoon baking soda
3/4 teaspoon ground cinnamon
3/4 teaspoon freshly grated nutmeg
3/4 teaspoon ground ginger
Coarse salt
1 3/4 cups packed light-brown sugar
3 large eggs
1/2 cup whole milk
3/4 cup chopped toasted walnuts
1 1/2 cups confectioners' sugar, sifted
3 tablespoons apple cider

Steps:

  • Make the caramelized apples: Cook granulated sugar and water in a medium saucepan over medium-high heat, without stirring, until sugar caramelizes, about 4 minutes. Reduce heat to low. Stir in apples. Cook, covered, until softened, about 6 minutes. Slightly mash apples with a fork until broken down but still chunky. Continue to cook, uncovered, stirring, until liquid evaporates, about 5 minutes. Let cool completely.
  • Preheat oven to 350 degrees. Make the cake: Butter a 10-inch Bundt pan. Dust with flour, tapping out excess. Sift flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and 1 teaspoon salt into a medium bowl.
  • Beat butter and brown sugar with a mixer on high speed until pale and fluffy, about 4 minutes. Add eggs, 1 at a time. Reduce speed to low, and add flour mixture in 3 additions, alternating with milk, beginning and ending with flour. Mix in caramelized apples and the walnuts.
  • Transfer batter to pan. Bake until cake is deep golden brown and a toothpick inserted into the center comes out clean, about 50 minutes. Let cake cool in pan set on a wire rack for 10 minutes. Turn out cake onto rack, and let cool completely.
  • Once cake is cool, make the glaze: Whisk together confectioners' sugar and cider. Drizzle over top of cake, letting it drip down the sides.

Apple spice cake with walnuts and currants is a delicious cake that is perfect for fall. It is a great way to use up any extra apples you may have from apple picking or just from being in season. The combination of warm spices, sweet apples, and crunchy nuts makes this cake a real treat.

Tip 1: Choosing the Right Apples

When making apple spice cake, it is important to use the right type of apples. You want to choose apples that will hold their shape and not turn to mush when baked. A good choice would be Granny Smith, Honeycrisp or Jonathan apples. They have a nice balance of tartness and sweetness which will make your cake flavorful.

Tip 2: Toasting the Nuts

Toasting the walnuts before adding them to the cake is a great way to enhance their flavor and give them a nice crunch. Simply spread the walnuts on a baking sheet and roast for about 5-7 minutes in a preheated oven at 350°F. Be sure to watch them carefully as they can burn quickly.

Tip 3: Soaking the Currants

Currants can be quite dry, so it is a good idea to soak them in warm water before adding them to the cake. This will not only soften the currants but also plump them up, giving them a more juicy and flavorful taste.

Tip 4: Measuring Ingredients Accurately

When baking, it is important to measure ingredients accurately to achieve the best results. Use measuring cups and spoons to ensure that you are using the exact amount required in the recipe. Be sure to level off dry ingredients for an exact measurement.

Tip 5: Using Room Temperature Ingredients

It is important to use ingredients that are at room temperature when making apple spice cake. This allows for the ingredients to combine better and create a smoother batter. Leave the eggs, butter, and cream cheese out on the counter for at least an hour before starting.

Tip 6: Mixing the Batter

When mixing the batter, start by creaming together the butter and sugar until light and fluffy. Add the eggs, one at a time, and beat well after each addition. Next, add the dry ingredients and mix until just combined. Finally, fold in the prepared apples, currants, and toasted walnuts.

Tip 7: Baking Time and Temperature

Baking time and temperature are crucial factors in making a perfect apple spice cake. Preheat the oven to 350°F and bake for around 45-50 minutes, or until a toothpick inserted into the center comes out clean. Be sure to check on the cake after 30 minutes to make sure it is not getting too brown. If it is, loosely cover the cake with foil.

Tip 8: Cooling and Serving

Once the cake is baked, let it cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely. Serve the cake warm or at room temperature with a dollop of whipped cream or a scoop of vanilla ice cream.

Conclusion

Apple spice cake with walnuts and currants is a delicious dessert that everyone will love. With a few tips and tricks, you can create a moist, flavorful cake that is perfect for fall baking. Remember to choose the right apples, toast the nuts, soak the currants, measure ingredients accurately, use room temperature ingredients, mix the batter properly, bake at the right temperature and time, and serve with whipped cream or ice cream for a perfect dessert.
