2 large baking apples (about 12 ounces/340 grams), such as Honeycrisp, Gala, Granny Smith or Braeburn, peeled, cored and diced into 1/2-inch pieces
1/2 cup/110 grams dark brown sugar
1/4 teaspoon fine sea salt
1/2 cup/115 grams unsalted butter (1 stick), at room temperature, plus more for the pan
1 1/3 cup/290 grams dark brown sugar
3 large eggs
1 1/2 teaspoons vanilla extract
1 2/3 cup/215 grams all-purpose flour
3/4 teaspoon baking powder
1/2 teaspoon fine sea salt
1/2 teaspoon ground cinnamon
1/4 teaspoon freshly grated nutmeg
3/4 cup/170 grams unsalted butter (1 1/2 sticks), at room temperature
3 cups/370 grams confectioners' sugar, sifted
7 ounces/205 grams unwrapped soft caramel candies
2 tablespoons heavy cream
1 1/2 teaspoons vanilla extract
Flaky sea salt, as needed, for finishing

Steps:

  • Make the apples: In a 10-inch sauté pan, melt the butter over medium heat. Add the apples, brown sugar and salt, and cook, stirring occasionally, until the sugar dissolves and the apples soften slightly, 4 to 5 minutes. Let cool to room temperature.
  • Heat the oven to 350 degrees. Grease a 10-inch oven-proof skillet with butter.
  • Make the cake: In the bowl of an electric mixer fitted with the paddle attachment, cream the butter and brown sugar until light and fluffy, 4 to 5 minutes. Add the eggs one at a time, beating well after each addition, and mix to combine. Scrape the bowl well, then beat in the vanilla.
  • In a medium bowl, whisk the flour, baking powder, salt, cinnamon and nutmeg to combine. Add the flour mixture to the mixer and mix just until incorporated. Scrape the bowl well.
  • With a rubber spatula, gently fold the apple mixture (including all of the caramel-like liquid in the pan) into the batter. Mix just until incorporated.
  • Pour the batter into the prepared skillet and spread into an even layer. Bake until the surface is evenly golden brown and appears set - a toothpick inserted into the center should have a few moist crumbs clinging to it, 30 to 35 minutes. Let cool completely.
  • Make the frosting: In the bowl of an electric mixer fitted with the paddle attachment, cream the butter and confectioners' sugar until light and fluffy, 4 to 5 minutes.
  • Place the caramels in a microwave-safe container. Microwave in 20-second bursts, stirring, until the caramel is warm and fluid. (This mixture will cool quickly, so be sure to do it just before you mix the frosting.) Add the warm (not hot) caramel mixture and mix on medium speed until incorporated. Scrape the bowl well.
  • Add the cream and vanilla and mix to combine. The frosting should be smooth and very soft. Scoop the frosting onto the cooled cake, and spread into an even layer. Garnish with flaky salt just before serving.

Sprinkle with pecans and brown sugar; drizzle with molasses. Arrange apple slices in a single layer over sugar, cut side down., For gingerbread cake: in a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in egg, then molasses. In another bowl, whisk flour, baking soda, ginger, salt and cloves; gradually add to creamed mixture. Stir in hot water., Pour over apples. Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).

1 tablespoon unsalted butter
2 medium apples, peeled, cored and cut in 8 wedges (soft fleshed, preferably Empire or McIntosh)
1 tablespoon sugar
1 cup cottage cheese
3/4 cup sour cream
1 teaspoon vanilla extract
2 tablespoons sugar
3/4 cup flour
3 large eggs
1 tablespoon confectioners' sugar (for dusting)
1 cup maple syrup (optional for serving)

Steps:

  • Melt butter in 10" - 12" ovenproof non-stick skillet. Arrange apple wedges in a layer in skillet and sprinkle with sugar.
  • Cook apples on medium to low heat about 5 minutes, then turn the apple wedges over and cook 5 minutes more.
  • Set skillet with apples aside.
  • Make batter:.
  • Place all batter ingredients in a food processor and process a few seconds to combine them.
  • Heat the broiler.
  • Pour the batter over the apples in the skillet; cover and cook over low heat on the stove for 6 - 8 minutes.
  • Uncover the skillet and broil 6" from the heat source for 6 - 8 minutes, until browned on top.

In one of them, i make eggs, omeletts, fried chicken, fried vegetables, fried breaded meats, etc. In the other one, i make cakes and desserts because i don't like to mix flavors in the same one. I have made this apple cake in it and it is very good, so am sharing my recipe here. Enjoy it like we do.

1/3 cup light butter
1/2 cup splenda brown sugar
1 teaspoon ground cinnamon (or use ground apple pie spices)
3 medium green apples, peeled, cored and sliced
1 (18 ounce) box spice cake mix (i use Duncan Hines with less sugar)
1/2 cup light butter, melted
1 cup ligh sour cream
1/3 cup light dark corn syrup
2 eggs (I use 1 cup egg beaters)
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
1 green apple, chopped
1/2 cup pecans, chopped (optional)

Steps:

  • Place your oven rack in the middle of the oven and preheat oven to 350ºF.
  • Prepare the topping, melting the 1/3 cup butter in a 10" cast iron skillet ((2" deep), over low heat.
  • Remove skillet from heat and stir in the brown sugar and ground cinnamon (or apple pie spices) using a fork.
  • Spread this mixture evenly over the bottom of the skillet and arrange the apple slices over the butter/sugar mixture in the skillet.
  • In a mixer, blend cake mix, 1 stick melted butter, sour cream, dark corn syrup, eggs and ground cinnamon.
  • Beat on low speed for 1 minute. Increase speed to medium and beat 2 minutes longer until creamy.
  • Pour the batter over the top of the apples in the skillet and then place the skillet in the oven and bake at 350ºF. for 40-45 minutes and bake until the cake rises high in the skillet, (it will spring back when lightly pressed with your finger when it's done).
  • Remove skillet and cool cake in the pan for 5-10 minutes and then run a knife around the edges of the cake to loosen it from the sides of the pan and carefully flip upside down onto a serving plate.
  • Cool completely for about 15 minutes and serve warm with vanilla ice cream if you like.
  • I have made this cake with Duncan Hines Caramel flavor cake mix and the taste is excellent, too.
  • NOTE: this cake can also be made in these baking pans. Just prepare the butter, brown sugar and spices in a skillet over the stove and then pour this mixture in the baking pan sprayed with cooking oil, add the apple slices, pour the batter and bake it.

Here's a dessert that's perfect for a large fall dinner party, like ones we have at our friend's house upstate. Bring the two rustic skillets straight from the oven to the table to serve up. This cake is a cross between an apple cake and English pudding, so it is best eaten warm. Sprinkling melted butter, sugar, and cinnamon on the apples enables them to be slightly caramelized before they are enveloped by the batter. It's not like a pie or a tart, so don't hate me when the apple slices sink in. I've baked this cake in numerous ways and prefer it when the apples get all gooey and delicious from baking in the batter. Serve with creme Anglaise, whipped cream or vanilla bean ice cream.

1 cup (240 milliliters) buttermilk, shake carton

Steps:

  • Preheat the oven to 350 degrees F. Grease two 9-inch cast iron skillets with butter or prepare springform pans, making sure they're lined.
  • In a small bowl, toss the apple slices in lemon juice to stop them from browning, cover with plastic wrap, and set aside.
  • Make the batter for the Milk and Honey Cake according to directions.
  • For the Milk and Honey Cake:
  • Place a large sifter or a sieve in a large bowl. Add the flour, baking powder, baking soda, and salt and sift.
  • In a small bowl, whisk the eggs together. Set aside.
  • In another small bowl, whisk together the buttermilk, honey, and vanilla. Set aside.
  • Using an electric mixer with beaters or a paddle attachment, beat the butter for 30 to 45 seconds on medium speed, then gradually add the sugar. When all the sugar has been added, stop and scrape down the sides of the bowl with a spatula. Continue beating on medium speed for another 4 minutes or until light in color and fluffy.
  • With the mixer still on medium speed, add the eggs 1 tablespoon at a time, over 3 minutes. If the batter curdles, add 1 to 2 tablespoons of the flour to bind it back together.
  • With the mixer on low speed, add the dry and wet ingredients alternately two times, starting and ending with the dry. Mix until just combined and smooth. Don't overbeat. Scrape down the sides and bottom of the bowl with a spatula to make sure it's well combined.
  • Divide the batter evenly between the skillets or pans and smooth the tops with a spatula. Working from the center out, gently lay the apple slices on top of the batter; leave behind any excess juice. Brush or drizzle the melted butter over the apple slices. Mix the sugar and cinnamon together and sprinkle evenly over the apple slices.
  • Bake for approximately 30 minutes or until golden. A skewer may not come out completely clean due to the moisture of the apple, but it shouldn't be wet. If baked in a springform pan, let sit for 10 minutes then release and remove parchment paper.
  • Serve with a dusting of confectioners' sugar and vanilla bean ice cream.

1/4 cup(s) vanilla instant pudding mix
3/4 cup(s) apple cider or apple juice
3 large eggs
1 teaspoon(s) ground cinnamon
1/4 teaspoon(s) ground cloves
1 large pear, peeled, cored, and cut into 1/4 inch slices

Steps:

  • Place a rack in the center of the oven and preheat the oven to 350F. Place 2 tablespoons of the butter in a 10 inch cast iron skillet and melt the butter over low heat. Remove the skillet from the heat and stir in the brown sugar. Using a spatula, press the butter and brown sugar mixture evenly over the bottom of the skillet. Arrange the apple and pear slices on top of the brown sugar mixture, pressing them into it. Set the skillet aside.
  • Place the cake mix, pudding mix, cider, eggs, cinnamon, cloves, and the remaining 4 tablespoons butter in a large mixing bowl and beat with an electric mixer on low speed until the ingredients are just incorporated, 30 seconds. Stop the machine and scrape down the side of the bowl with a rubber spatula. Increase the mixer speed to medium and beat the batter until smooth, 1 1/2-2 minutes longer, scraping down the side of the bowl again, if needed. Pour the batter into the skillet over the apples and pears, smoothing the top with the rubber spatula, and place the skillet in the oven.
  • Bake the cake until it is golden brown and the top springs back when lightly pressed with a finger, 25-30 minutes. Transfer the skillet to a wire rack and let the cake cool for 5 minutes. Run a sharp knife around the edge of the cake and invert it onto a serving plate. Serve the cake warm.

But using a skillet requires keeping a close eye on it since cast iron retains heat much better than other baking pans. You can use cut up pears instead of apples for a different twist or even use both apples and pears. Adding other fruits for the occasion and season is a great way to give someone a special treat, like cranbverries, raisins, raspberries.
