APPLE SAUSAGE STUFF PORK CHOPS

Apple Sausage Stuff Pork Chops image

You can make your own stuffing and use for this recipe I just typically use Stove Top Pork Flavored. I try to always use unflavored/unseasoned Pork Sausage. I typically use Granny Smith Apples for this recipe but any kind of apple works just use your favorite kind. For the Cajun Seasoning I usually use Emeril's Essence.

Provided by pasmaszek

Categories     One Dish Meal

Time 1h30m

Yield 4 serving(s)

Number Of Ingredients 10

4 thick-cut bone in pork chops
1 tablespoon cooking oil (i use olive oil)
1 prepared box pork flavored Stove Top stuffing mix
2 -3 cooked then diced pork sausage
3 skinned and diced apples
1/4 cup raisins
1/3 cup chopped green onion
1/4 cup apple juice
1 tablespoon cajun seasoning
1/2 tablespoon parsley

Steps:

  • Preheat your oven for 400 degrees.
  • Cut a 'pocket' in each of your Pork Chops were the 'stuffing mixture' will eventually go.
  • Seasoning the Pork Chops to your liking w/ the Cajun Seasoning. Sear the Pork Chops for about 1 to 2 minutes on each side on med-high heat. Just enough to get a nice quick brown to them. Set aside.
  • In a large mixing bowl combined your already prepared stuffing, the cooked diced up pork sausage, the apples, raisins, and green onions. To add some moisture to the mixture gradually mix in the apple juice. Seasoning the entire mixture w/ Cajun Season (Emeril's Essence) and Parsley. I tend to season heavy w/ the Cajun Seasoning.
  • Place your Pork Chops in a glass casserole dish. Open the precut pockets in the pork and stuff each pork chop w/ the stuffing mixture. Place the remaining stuffing around the Pork chops.
  • Bake at 400 degrees in a glass casserole dish until the meat is no longer pink (about 1 hour- 1 1/2 hrs). If the stuffing starts to get too dry before the meat is done cooking just pour some additional apple juice on it.

ITALIAN SAUSAGE STUFFED PORK CHOP

Italian Sausage Stuffed Pork Chop image

Provided by Food Network

Categories     main-dish

Time 1h

Yield 4 servings

Number Of Ingredients 14

8 ounces unsalted butter
2 ounces extra-virgin olive oil, plus more for searing
1 Vidalia onion, thin julienne
1 cup diced celery
4 cloves garlic, split in 1/2 and sliced paper thin
1 pound sweet Italian sausage, removed from casing
8 ounces baby spinach
1/2 cup croutons
3 cups chicken stock
3 ounces heavy cream
1/2 bunch flat-leaf Italian parsley, chopped
1 1/2 cups grated Parmigiano-Reggiano
Kosher salt and freshly ground black pepper
4 (8-ounce) bone-in center cut pork chops, frenched, marinated in extra-virgin olive oil, sliced shallots and Italian herbs

Steps:

  • Stuffing: In large a rondeau or heavy bottomed pot over medium-low heat, add butter and olive oil, then sweat onion, celery and garlic until translucent, about 3 minutes. Add sausage, and allow it to cook through, stirring often. Add spinach and toasted croutons. Mix well then add chicken stock, cream and parsley. Cook until thickens. Add cheese and season with kosher salt and freshly ground black pepper. Allow stuffing to cool.
  • Pork Chops: Preheat oven to 400 degrees F.
  • Make a 1-inch incision with a knife right next to the bone of the pork chop. Work the knife inside the pork chop to make a pocket for the stuffing. With a piping tool or simply with your hands, stuff the pork chop with the stuffing mixture until the pocket is packed well. Season the pork chop with salt and black pepper. Heat a large skillet and add oil. Sear both sides, about 1 minute. Place skillet in oven to roast for about 10 to 12 minutes, turning chops over half way through so as not to burn. Cook pork chop to medium, and the internal temperature registers 165 degrees F on an instant-read thermometer. Anything more than medium may dry out the chop.

SAUSAGE AND APPLE STUFFED PORK ROAST

Sausage and Apple Stuffed Pork Roast image

Provided by Melissa d'Arabian : Food Network

Categories     main-dish

Time 1h55m

Yield 8 servings

Number Of Ingredients 14

1/2 pound mild Italian sausage (or 2 links, casings removed)
1 yellow onion, chopped
2 stalks celery, chopped
1 tart apple, peeled and diced
Salt and freshly ground pepper
2 cloves garlic, minced
2 pieces white bread
2 teaspoons chopped fresh sage
2 teaspoons chopped fresh rosemary
1 teaspoon chopped fresh thyme
2 tablespoons butter
One 3-pound boneless pork loin
1 tablespoon vegetable oil
1/2 cup white wine

Steps:

  • Preheat the oven to 375 degrees F.
  • In a large saute pan over medium heat, saute the sausage until no longer pink. Remove the sausage (leave in the fat), and set aside. To the pan, add the onion, celery, and apple and sprinkle with salt and pepper. Cook until the apple is no longer crisp, about 5 minutes. Add the garlic and cook an additional couple of minutes. Remove from the heat, stir the sausage back in and set aside.
  • In a food processor, pulse the bread with the sage, rosemary, and thyme into coarse crumbs.
  • Heat the butter in a medium saute pan and cook the crumbs over medium-high heat until coated with butter and lightly toasted, about 3 minutes (be careful not to burn). Mix the breadcrumbs into the sausage mixture.
  • Prepare the roast as if making a jellyroll. Place the roast with the short side toward you, and fat facing down toward the counter or cutting board. Use a sharp knife to slice the roast open at about 1/2-inch from the bottom of the roast (parallel to the cutting board), being careful not to cut all the way through. Continue cutting, unrolling the roast as you work until you have a large, thin piece of meat. Place the rolled out piece of meat between 2 sheets of waxed or parchment paper, and lightly pound with meat mallet to increase the meat surface area by 10 to 20 percent. Be careful not to pound through the meat. Salt and pepper the pork and top with the filling, spreading evenly across the pork, leaving a 1-inch margin around the perimeter.
  • Starting with the short side, roll up tightly jellyroll style, and secure the roast with kitchen twine.
  • Heat a large saute pan over medium heat and add oil. Add the roast and brown on all sides. Place in a roasting pan fitted with a rack and add the wine in the bottom of the pan (to keep the juices from burning), and bake for 45 minutes to 1 hour, or until the internal temperature hits 145 degrees F on an instant-read thermometer. Remove the roast from the oven and allow to rest for a full 10 minutes before slicing and serving.

The Key Ingredients

To prepare apple sausage stuffed pork chops, you will need a few key ingredients. The first ingredient is pork chops, which are thick and bone-in cuts of meat, that are perfect for stuffing. The second important ingredient is apple sausage, which is a type of sausage that is infused with the sweet flavors of apples. You can typically find this type of sausage at your local grocery store or meat market. Finally, you will need apples and herbs to give your dish the perfect flavor balance.
Pork Chops
When it comes to selecting pork chops for this recipe, it's important to choose bone-in pork chops that are at least 1 1/2 inches thick. This will give you enough room to create a pocket for the stuffing. If you can't find bone-in pork chops, boneless pork chops will work, but you will need to be careful when stuffing them, as they may not hold up as well during the cooking process.
Apple Sausage
Apple sausage is the star of this dish, and it's what gives the pork chops that delicious and unique flavor profile. You can typically find pre-made apple sausage at your local grocery store, but if you're feeling adventurous, you can also try making your own. To make apple sausage, you will need ground pork, grated apples, and a variety of herbs and spices.
Apples and Herbs
The apples play a crucial role in this dish, as they not only add sweetness but also help to keep the stuffing moist. You can use any type of apples that you like, but granny smith apples are an excellent choice, as they hold up well during the cooking process. As for herbs, thyme, sage, and rosemary work well with the sweet and savory flavors of this dish.

The Stuffing

To prepare the stuffing for your pork chops, you will need to start by cooking the apple sausage. Once the sausage is cooked, you can add in the chopped apples, herbs, and any other seasonings that you like. After the stuffing is fully cooked, you can use a sharp knife to cut a pocket into the side of each pork chop. Make sure not to cut all the way through the chop. Spoon the stuffing into the pocket, and then use toothpicks or kitchen twine to secure the opening.

Cooking the Pork Chops

When it comes to cooking the pork chops, you have a few different options. You can either cook them on the stove or in the oven. If you choose to cook them on the stove, you will need to sear them in a hot skillet for a few minutes on each side, and then transfer them to the oven to finish cooking. If you choose to cook them in the oven, you will need to bake them for around 30 minutes at 375 degrees Fahrenheit. Make sure to keep an eye on the pork chops to ensure that they do not overcook and become dry.

Serving Suggestions

Once your pork chops are fully cooked, it's time to serve them up. These apple sausage stuffed pork chops are delicious on their own, but you can also pair them with a variety of sides to create a complete meal. Apple sausage stuffed pork chops is a delicious meal that everyone will enjoy. It's a combination of sweet and savory flavors that make for a mouth-watering dish. Making apple sausage stuffed pork chops can be intimidating, but with these valuable tips, you can create a dish that will impress your guests.

Tip 1: Choosing the Right Pork Chops

Choosing the right pork chops is crucial when making apple sausage stuffed pork chops. Look for pork chops that are about 1 inch thick and have a good amount of fat. The fat will keep the pork chops moist while cooking and add flavor. Also, consider getting pork chops with the bone-in. The bone will help the pork chops cook evenly and add more flavor.

Tip 2: Prepping the Pork Chops

Before stuffing the pork chops, it's essential to prepare them properly. Start by making a pocket inside the pork chop using a sharp knife. Be careful not to cut all the way through the pork chop. The pocket should be large enough to fill with the apple sausage stuffing. Once the pocket is made, season the pork chop with salt and pepper inside and out.

Tip 3: Making the Apple Sausage Stuffing

The apple sausage stuffing is the star of the dish. To make the stuffing, sauté diced apples, onions, garlic, and sage in a pan until they're soft. Then add cooked sausage to the mixture and mix well. Bread crumbs may also be added to the stuffing to absorb any excess moisture. Be sure to allow the stuffing to cool before filling the pork chops to avoid the pork chops breaking apart.

Tip 4: Filling the Pork Chops

When filling pork chops with the apple sausage stuffing, don't overstuff them; otherwise, the pork chops may not cook evenly. Fill the pork chops with a spoonful of the stuffing, then push it down with your fingertips. Add another spoonful of the stuffing, and repeat until the pork chop is full. Once the pork chop is filled with the stuffing, use a toothpick to keep the stuffing inside.

Tip 5: Cooking the Pork Chops

After filling the pork chops, it's time to cook them. Start by searing the pork chops in a pan over medium-high heat until both sides are browned. Once the pork chops are browned, put them in a preheated oven at 350°F and bake them for 30-40 minutes or until fully cooked. Remember to let the pork chops rest for at least 5 minutes before serving to allow the juices to redistribute.

Tip 6: Serving the Apple Sausage Stuffed Pork Chops

When serving the apple sausage stuffed pork chops, consider serving them with a side of roasted vegetables or mashed potatoes. A simple salad also pairs well with the pork chops. Garnish the pork chops with fresh herbs like parsley, or a drizzle of balsamic glaze can add an extra touch of sweetness to the dish.
Conclusion
Making apple sausage stuffed pork chops may seem challenging, but with these valuable tips, you can create a dish that is full of flavor and impressive to your guests. Remember to choose the right pork chops, prep them correctly, make a flavorful stuffing, fill them properly, and cook them to perfection. With these tips, you can make apple sausage stuffed pork chops with confidence, and they will undoubtedly be a crowd-pleaser.
