Crispy Black Chicken with Apple Cider Vinegar Sauce and Roasted Garlic, Dirty Rice and Heirloom Glazed Carrots image

20 whole cloves garlic, peeled
Canola oil, for frying
8 ounces Brussels sprouts, trimmed and leaves separated
Kosher salt
1 cup cornstarch
1 teaspoon baking powder
2 black chickens, backbones removed, halved with the feet left on
1/4 cup plus 2 tablespoons apple cider
1/4 cup plus 2 tablespoons apple cider vinegar
2 cups chicken stock
3 tablespoons unsalted butter
1 yellow onion, diced
Kosher salt
4 tablespoons extra-virgin olive oil
1 cup long-grain rice
2 cups chicken stock
2 fresh bay leaves
1 shallot, diced
4 chicken livers, cleaned and small diced
3 blood sausages, diced
1/4 cup brandy
3 scallions, sliced
Kosher salt
1 bunch baby rainbow carrots, peeled and cut in half lengthwise
1/2 stick (4 tablespoons) unsalted butter
1/4 cup light brown sugar
Pinch cayenne pepper
1/2 cup chicken stock, plus more if needed
Micro radish, for garnish

Steps:

  • For the chicken: Preheat the oven to 350 degrees F. Spread the garlic cloves onto a sheet tray and roast, 20 minutes.
  • Set up a deep fryer with canola oil and heat to 350 degrees F. Fry the brussels sprouts until crispy, 3 to 4 minutes. Remove to a paper towel-lined plate. Season with salt.
  • Lower the temperature on the fryer to 275 degrees F.
  • Combine the cornstarch, baking powder and salt to taste in a wide shallow dish. Dredge the chicken halves in the cornstarch mixture and shake off any excess. Deep-fry the chicken for 10 minutes, then remove from the oil onto a paper towel-lined tray.
  • Increase the temperature on the fryer to 400 degrees F. Place the chicken back into the fryer to crisp for 5 minutes, or until it reaches an internal temperature of 165 degrees F.
  • Add 1/4 cup each of the apple cider and apple cider vinegar to a large saute pan placed over medium-high heat. Allow to reduce by half, about 5 minutes. Add half the chicken stock and salt to taste. Reduce by half, about 5 minutes, then add the remaining chicken stock. Add the roasted garlic and allow the sauce to reduce, 5 to 7 minutes. Finish the sauce with the remaining 2 tablespoons each apple cider and apple cider vinegar and the butter.
  • For the dirty rice: Add the onion, salt to taste and 2 tablespoons of the extra-virgin olive oil to a medium saucepan and turn the heat to medium high. Sweat the onion until translucent, 5 to 7 minutes. Add the rice and stir to coat. Toast for 2 to 3 minutes. Add the chicken stock, bay leaves and salt to taste. Bring to a boil, cover, reduce to a simmer and cook until the rice is tender, 15 to 20 minutes. Fluff with a fork and set aside.
  • Heat a large saute pan with the remaining 2 tablespoons extra-virgin olive oil over medium-high heat. Add the shallot and salt to taste. Saute until translucent, 5 minutes. Add the chicken livers and blood sausage and brown until cooked through, 4 to 5 minutes. Add the cooked rice to the pan and stir to combine, tossing to thoroughly coat the rice in the chicken livers and blood sausage. Remove the pan from the heat, add the brandy and ignite with a click lighter. Put the pan back on the heat and cook for 2 to 3 minutes until the alcohol has cooked off. Turn off the heat and stir in the scallions.
  • For the glazed carrots: Season a pot of boiling water generously with salt. It should be as salty as the sea. Prepare an ice bath and season generously with salt. Add the carrots to the boiling water and cook for 2 to 3 minutes until tender but still slightly crisp. Remove the carrots and immediately plunge into the ice bath. Set aside.
  • Melt the butter, brown sugar and cayenne together in a large saute pan over medium-high heat. Add the chicken stock and the blanched carrots. Toss to coat the carrots, then allow the liquid to reduce until the glaze has thickened, 5 minutes. If the mixture needs to be thinned out, you can add a bit more chicken stock.
  • To plate: Place a scoop of dirty rice onto the plate. Top with the glazed carrots, followed by the chicken. Spoon the sauce over the chicken, making sure to include the roasted garlic cloves. Garnish with the crispy Brussels sprouts and micro radish.

All-purpose flour, for dredging
2 to 3 tablespoons vegetable oil
1 large red onion, cut into large pieces
1 sweet cooking apple, cored and cut into large pieces
3 tablespoons apple cider vinegar
1 1/2 cups low-sodium chicken broth
2 tablespoons cold unsalted butter
1 handful fresh parsley, roughly chopped

Steps:

  • Preheat the oven to 350 degrees Fahrenheit. Heat a large skillet over medium-high heat. Season the chicken breasts with salt and pepper and dredge in the flour, shaking off the excess. Add 2 tablespoons oil to the pan. Place the chicken in the skillet smooth-side down and cook until golden, about 5 minutes per side. Transfer to a baking dish and bake until cooked through, about 8 minutes.
  • Meanwhile, add the onion and apple to the skillet, along with 1 tablespoon oil, if the pan is dry, and increase the heat to high. 1 teaspoon shallots, minced
1/2 teaspoon honey

3/4 cup apple cider
1/4 cup apricots, minced
1 teaspoon shallots, minced

1 cup seedless red grapes, halved

Steps:

  • Soak the apricots in hot water for 10 minutes. Drain and then mince. Mix the apricots, raisins, peanuts, shallots, honey, mint and parsley until they hold together. Slice the chicken horizontally and slightly flatten with a mallet. Place 1/4 cup of mixture in each breast. Fold the breast together. Season the chicken with salt and pepper and place on a medium hot grill with soaked applewood chips. Grill for 4 minutes. Turn 1/4 turn for 2 minutes to mark breast and then flip the breast over and cook for 4 minutes.
  • Combine all the ingredients in a medium size saucepan and bring to a boil. Reduce the heat to medium and cook until the volume is reduced to 3/4 cup.
  • Combine the apples, celery, grapes, cherries and peanuts in a large bowl. Toss thoroughly. In a separate bowl, whisk together the yogurt, sour cream, peanut butter, and all but 2 teaspoons of the parsley. Fold the dressing into the salad and season with salt and pepper. 1/4 cup clarified butter (I used regular butter)
6 boneless skinless chicken breasts (I think I used 3 breasts, cut up when I made it)
4 tablespoons butter
1 1/2 cups finely chopped onions
2 garlic cloves, minced
1 1/2 cups peeled cored and finely chopped tart apples
3 tablespoons flour
1 1/2 tablespoons curry powder
1/2 teaspoon cardamom
1 teaspoon coriander
3/4 teaspoon salt
1/2 teaspoon pepper
3 cups chicken stock
2 teaspoons grated lime rind
1 tablespoon lime juice
1/2 cup mango chutney, finely chopped

Steps:

  • Preheat oven to 200°.
  • Heat the clarified butter in a large pan and sauté chicken breasts on both sides till browned.
  • Cover the pan; heat the chicken breasts over low heat for five minutes.
  • Transfer to a platter. Keep warm in the oven while you're making the sauce.
  • To make the sauce, melt the butter in the sauté pan.
  • Add the onion and sauté over low heat till transparent.
  • Add the garlic and apples and sauté for 2 minutes.
  • Add the flour, curry powder, cardamom, coriander, salt and pepper. Stir to mix well.
  • Add the chicken stock, lime rind, lime juice and chutney.
  • Bring sauce to a boil, stirring constantly.
  • Pour around chicken and serve.
  • It's great served over rice.

1/4 cup fresh lime juice
2 tablespoons vegetable oil
3 tablespoons chili powder
Kosher salt
Sriracha Soy Sauce, recipe follows
Smoked Corn and Black Bean Salad, recipe follows, for serving
1 cup apple cider
3 tablespoons dark brown sugar
2 tablespoons apple cider vinegar
2 tablespoons honey
1 bay leaf
Kosher salt and freshly ground black pepper
1 cup sriracha sauce
1/2 cup mayonnaise
2 teaspoons soy sauce
2 to 3 ears corn, shucked and cleaned
2 tablespoons corn oil
One 15-ounce can black beans, drained and rinsed
1/2 cup diced green bell pepper (from 1/2 bell pepper)
1/2 cup diced red bell pepper (from 1/2 bell pepper)
1/2 medium red onion, cut into 1/8-inch slices, then cut in half
3 tablespoons minced fresh jalapeno (from 1 medium jalapeno)
1/4 cup corn oil
2 tablespoons chopped fresh cilantro leaves
2 tablespoons red wine vinegar

Steps:

  • Place the chicken wings in the Brine in a large bowl. Cover and refrigerate for 4 hours.
  • Remove the chicken wings, then rinse with water and dry with paper towels. Place in a large bowl. Drizzle the lime juice and oil over the chicken and toss to coat. Sprinkle the chili powder and 1 tablespoon salt over the wings and toss again.
  • Wrap 1 cup soaked and drained apple wood chips in a foil packet and poke holes on top. Place the foil packet underneath the grill grates of a grill, directly on top of the heating element. Preheat the grill on medium-high heat and let the smoke build for 10 to 15 minutes.
  • Grill the chicken wings over direct heat, covered, until golden brown on the underside, 5 to 7 minutes. Flip and cook until the juices run clear and the internal temperature is 165 degrees F, another 5 to 7 minutes. Serve with Sriracha Soy Sauce and Smoked Corn and Black Bean Salad.
  • Combine the apple cider, brown sugar, cider vinegar, honey, bay leaf, 1/4 cup salt, a pinch black pepper and 1 cup water in a medium pot. Cook over medium-low heat, stirring, until the sugars and salt have dissolved, approximately 10 minutes. Transfer to a large bowl and cool completely in the refrigerator.
  • Whisk together the sriracha, mayonnaise and soy sauce in a medium bowl. Cover and refrigerate until ready to use.
  • Make the salad: Preheat a charcoal grill for cooking at medium-high heat. Place 1 cup soaked and drained apple wood chips directly on the coals.
  • Rub the corn with the corn oil. Grill, turning occasionally, for approximately 15 minutes. Let cool, then cut the kernels off the cobs into a large bowl. Mix in the black beans, bell peppers, onion and jalapeno.
  • Make the dressing: Whisk together the corn oil, cilantro, vinegar, lime juice, cumin, 1/2 teaspoon salt and 1/4 teaspoon pepper in a small bowl.
  • Pour the dressing over the salad, then cover and refrigerate for 1 hour.

1 pound Brussels sprouts, trimmed and halved or quartered if large
2 sweet apples (such as Gala), cut into wedges
1 red onion, cut into wedges (root left intact)
2 small sprigs rosemary, plus 1 teaspoon finely chopped leaves
2 tablespoons extra-virgin olive oil
Kosher salt and freshly ground pepper
2 tablespoons unsalted butter
4 skinless, boneless chicken breasts (about 8 ounces each)
2/3 cup apple cider
1 teaspoon apple cider vinegar

Steps:

  • Position racks in the upper and lower thirds of the oven; preheat to 450 degrees F. Toss the Brussels sprouts, apples, red onion and rosemary sprigs with the olive oil, 1/2 teaspoon salt and a few grinds of pepper on a baking sheet. Spread in a single layer and roast on the upper oven rack, flipping halfway through, until tender and browned, 25 to 30 minutes.
  • Meanwhile, heat 1 tablespoon butter in a large ovenproof skillet over medium-high heat. Season the chicken on both sides with salt, pepper and the chopped rosemary. Add the chicken to the skillet and cook until browned on the bottom, about 6 minutes. Flip and cook 2 more minutes, then pour the cider into the skillet around the chicken. Transfer to the lower oven rack and roast until just cooked through, 10 to 12 minutes.
  • Transfer the chicken to a cutting board to rest and return the skillet to medium-high heat. Simmer until the pan sauce is reduced by half, about 1 minute. Remove from the heat and swirl in the remaining 1 tablespoon butter and the vinegar; season with salt and pepper.
  • Slice the chicken and divide among plates along with the roasted vegetables and apple. Spoon the sauce over the chicken.

¼ teaspoon salt
¼ teaspoon ground black pepper
8 slices bacon
¼ cup minced sweet onion
¾ cup unsweetened apple cider
½ cup chicken broth

Steps:

  • Sprinkle chicken with salt and pepper; set aside.
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels. Crumble bacon when cool enough to handle.
  • Add chicken to the bacon drippings in the skillet. Cook chicken over medium-high heat, flipping halfway, until chicken is no longer pink in the center and the juices run clear, 12 to 14 minutes. 4 6- to 8-ounce skinless boneless chicken breast halves, pounded to 1/2-inch thickness

Steps:

  • Heat 2 tablespoons oil in heavy large skillet over medium-high heat. Add parsnip; sauté until beginning to brown, about 2 minutes. Add apple and chopped thyme; cook until parsnip and apple are tender, about 6 minutes. Transfer parsnip mixture to plate.

1/4 cup apple juice

Steps:

  • Preheat oven to 425°F.
  • Combine first 6 ingredients and process the apple, onion, and green pepper in a food processor. Place all ingredients in a saucepan and bring to a boil. Reduce heat and simmer for about 15 minutes.
  • While the sauce is heating up,place all the Rub ingredients in a bowl and stir together with a spoon. Rub chicken wings on all sides with the spice mixture.
  • Arrange chicken wings in a pan that you have lined with foil and sprayed with cooking spray.

My husband literally drinks the sauce. These are great for 4 or for 24. Very easy to scale up for large dinner parties.

4 boneless skinless chicken breasts
1 tablespoon butter
2 garlic cloves, minced
2 tablespoons sugar
2 tablespoons cider vinegar
2 cups beef stock
7 dried apricots
1/4 cup dried cranberries
1/2 large seeded tomatoes, chopped
1/2 cup crumbled feta cheese
portion of small bag of fresh Baby Spinach
salt and pepper

Steps:

  • Heat the oven to 425 degrees.
  • For stuffing boil enough water to soak apricots and cranberries. Let soak for 15 minutes. Let apricots cool slightly and cut into small pieces and add to bowl with tomatoes and feta cheese. Season to taste with salt and pepper.
  • Using sharp knife, cut horizontal slit 3/4 way through each chicken breast. Open like a book and place on a cooking sheet. I use a cooking stone sheet with great results. Place a couple of layers of spinach on each inside side of chicken breast. No need to steam first. Place as much of the stuffing mix as you can on one side and close the breast over. I don't use string, but you can if you find it easier. I stuff as much as I can, almost to the point of overstuffing.
  • Lightly brush olive oil over breasts. Cover with foil for the first 10 mins of baking and then remove foil for last 30 mins or so. Actual time depends on breast size. I remove from oven when internal temp is 175 degrees. Cover with foil while you complete the sauce. I usually let sit covered for 10 mins or so.
  • For sauce melt 1 tbsp butter in sauce pan on medium heat. Add garlic and brown. Add the cider vinegar and boil 2 minutes. Add the sugar and beef stock and reduce temperature slightly and continue to boil until sauce is reduced to desired thickness and taste. About 10-15 mins should do it. You can dilute with additional stock if you boil down too much. Season to taste with salt and pepper. You can play around with sugar and vinegar amounts to get the flavor that is right for you.
  • You can serve breast as is or sliced. I prefer whole as I find that it tends to fall apart. Pour sauce over and serve.

2 chicken breast halves (boneless, skinless)
1/4 teaspoon salt
3 tablespoons gluten-free flour
2 tablespoons cornstarch
1 teaspoon salt

1/4 cup medium sherry
1 cup chicken broth
1 granny smith apple
1/3 cup light brown sugar
1 tablespoon butter
1 dash marsala wine
1 pinch cayenne pepper
1/4 teaspoon paprika

Steps:

  • Sprinkle chicken breasts with 1/4 teaspoon of salt on both sides. Cover and refrigerate for 30 minutes. Remove from refrigerator and cut in half lenghtwise. Place the chicken pieces between two pieces of plastic wrap and pound chicken with meat mallet till 1/4 inch thick.
  • Preheat oven to 200 degrees F.
  • Mix the flour, cornstarch, 1 teaspoon of salt, black pepper, and sugar in shallow bowl. Place each piece of chicken into flour mixture to coat. Melt 2 Tbsp of butter in a skillet until foam disappears, and lay the chicken into the butter. Cook until golden brown on both sides. Remove chicken, and set aside on plate in oven to keep warm.
  • Pour sherry into skillet and bring to a boil, Cook until the sherry is reduced to half its volume. Then stir in chicken broth, add the apple slices to the skillet. Cook, stiring occasionaly until the apple slices are soft and the sherry mixture is reduced to half. Stir in brown sugar, 1 Tsbp of butter, and the Marsala wine until the sugar has dissolved and the sauce is thick.
  • Return the chicken to the sauce, together with any juice from the plate. Simmer for a few minutes on each side.
  • Serve the chicken with the sauce and apple slices on top.

Steps:

  • Heat oven to 325°F. Line cookie sheet with sides with foil.
  • In 12-inch skillet, melt 2 tablespoons of the butter over medium-high heat. Pat chicken dry, then rub in salt. Cook in skillet 4 to 5 minutes or until browned and chicken releases easily from pan. Turn and cook 2 minutes longer. Transfer to cookie sheet. Bake 12 to 14 minutes or until juice of chicken is clear when center of thickest part is cut (at least 165°F).
  • Meanwhile, melt remaining 2 tablespoons butter in skillet, then add onion. Cook 5 to 6 minutes or until onion is translucent and begins to brown. Add apple; cook 1 to 2 minutes. 1 tablespoon curry powder
1/2 cup heavy (double) cream

Steps:

  • Preheat the oven to 350 degrees. In a large saute pan over medium heat, melt the butter until very hot. Saute the shallots, garlic, and ginger for about 2 minutes. Add the diced apple and toss to coat with the butter. Add the wine and cider and cook for 3 to 4 minutes, or until half the liquid has evaporated. In a small saute pan over high heat, dry-saute the curry powder for 2 or 3 minutes, until it begins to give off its aroma. Add it and the cream to the apples and cook until the sauce thickens, about 5 minutes. Season to taste with salt and pepper. Set the sauce aside, keeping it warm. Season the chicken with salt and pepper, In a large saute pan over high temperature, heat the olive oil until smoking hot. Place the chicken breast halves skin side down in the pan and cook for 3 or 4 minutes, or until well browned. Turn the chicken over. If your saute pan is ovenproof, place it in the oven; otherwise, transfer the chicken to a roasting pan. Bake for about 5 minutes, or until the chicken reaches an internal temperature of 165 degrees. Place the chicken breasts on a serving platter and pour the Apple Curry Sauce over all. Garnish with slices of red apple and a sprinkling of chopped green onions.

4 boneless chicken breasts (breasts scored) or 2 -3 lbs chicken wings

3/4 cup apple cider
3/4 cup sugar

1/2 teaspoon ground ginger
1/2 teaspoon ground cinnamon
1/2 teaspoon cardamom
1 pinch chili pepper flakes (optional)

Steps:

  • Marinade:.
  • Mix all the marinade ingredients together.
  • Pour half of the marinade over the chicken. Place the chicken in the refrigerator overnight turning often to ensure all sides get coated and penetrates the meat.
  • Heat the other half of the marinade and reduce to 1 cup. If more heat is desired add 1 tablespoon sriracha sauce. To be used to glaze the chicken. Can be prepped the day.
  • Remove from marinade and let drip away removing excess marinade.
  • Whisk together pumpkin puree, apple juice, sugar, cloves, ginger, cinnamon, cardamom and optional pepper flakes in a saucepan until smooth. Bring to a boil, then reduce heat to medium-low, and simmer until the mixture has reached the consistency of applesauce. About 30-60 minutes. Depending if you use fresh or canned pumpkin. Add liquor off the fire stir, cover and set aside. Can be prepared the day before good chilled or warm.
  • Heat grill and oil grates.
  • Grill chicken legs until well browned on all sides, turning once, 30 to 40 minutes. Glaze the chicken the last 5 minutes with the reduced marinade.
  • Test:.meat near thigh bones should no longer be pink when tested with the tip of a knife.
  • Boneless chicken breasts will cook quicker so turn after 5-7 minutes glazes the flip after 5-7 minutes and glaze.
  • Wings over medium flame. You don't want too high of a temperature. You will also need to turn the wings frequently to avoid burning. It will mean standing by the grill, but you can cook a lot of chicken wings in about 15 to 20 minutes. Just before removing brush glaze over wings.
  • Serve with warmed Autumn Pumpkin Sauce for dipping.

  • All grills are different temperatures.
  • Take advantage of indirect heat!
  • If the chicken browns quickly finish over Brown over direct then move to indirect heat.indirect heat.
  • All grills have hot spots so watch and be sure to move the chicken to spots on the grill so not to burn and completely cook the chicken.
