4 (4-oz.) boneless smoked pork chops
2 tablespoons apple jelly

Steps:

  • Spray 8-inch square (2-quart) glass baking dish with nonstick cooking spray. Melt butter in large skillet over medium heat. Add onion and celery; cook 3 to 4 minutes or until crisp-tender, stirring occasionally.
  • Add apple, raisins and apple juice; cook 2 to 3 minutes or until mixture comes to a boil. Remove from heat; stir in stuffing mix. Spread mixture in sprayed baking dish. Top with pork chops. Cover with foil; refrigerate at least 8 hours or overnight.
  • Heat oven to 350°F. Bake covered for 30 minutes.
  • Uncover baking dish; brush pork chops with jelly. Bake uncovered an additional 15 to 20 minutes or until pork chops are thoroughly heated.

6 tablespoons unsalted butter, plus more for greasing the pan and topping
1 lb fresh sage sausage, casing removed
1 medium onion, chopped
2 cooking apples, peeled, cored, and chopped (such as Gravenstein, Rome, or Golden Delicious)
1 -2 stalk celery & leaves, chopped
1/2 teaspoon kosher salt
3 cups chicken broth (homemade or low-sodium canned)
1/4 cup chopped fresh flat-leaf parsley
1/2 cup walnut pieces, toasted (See Note)
2 eggs, beaten

Steps:

  • Preheat oven to 325 degrees F.
  • Put the stuffing cubes in a large bowl and set aside. Butter a 3-quart casserole dish.
  • Melt 2 tablespoons of butter in a large skillet over medium-high heat. Add the sausage and break up with a wooden spoon. Cook until it loses most of its pink color, but not so much that it's dry, about 5 minutes. Add the sausage and pan drippings to the stuffing cubes. Melt the remaining butter in the pan. Add the onion, apple, celery, and salt. Cook until the vegetables get soft, about 5 minutes. Add the broth and parsley and bring to a boil.

Steps:

  • In a medium sized skillet over medium to high heat saute the sausage until it is almost cooked through. With a fork, break up the meat into small pieces. Add the sage and cook the sausage through. Remove the meat from the heat and reserve.
  • In a medium skillet, melt 3 tablespoons butter over medium heat. Add diced onions and saute until translucent. In a large bowl combine the brioche, dried cranberries and apples.

1 cup diced celery

8 cups French bread, 1 inch cubes with crusts (from 1 lb loaf)
1 cup whole milk
1 cup low-fat chicken broth
2 tablespoons butter, melted
3 large eggs, beaten to blend

  • Heat oil in heavy large skillet over medium heat.

1 pound pork sausage
1 cup peeled, chopped apple
2 tbs. packed fresh flat-leafed parsley leaves
2 tbs. chopped sage
1 cups chicken broth
1 cup apple cider
Salt and pepper to taste

Steps:

  • Preheat oven to 325° F. Cut corn bread into 1/2-inch cubes and bake on trays in middle of oven until just dry, about 20 minutes. Melt butter and cook the leeks, shallot and celery and apple. Add the sausage and cook until sausage is cooked through. Mix the corn bread cubes with the apples/onion/leek/sausage/celery mixture, parsley and sage, broth, cider, and salt and pepper to taste and toss together. Cool stuffing completely. You can make this a day ahead, cover and chill. Bring stuffing back to room temperature if you are going to stuff it! Or before baking it.
