450g rhubarb , cut into 3cm slices
350g apples (Bramley or Granny Smith work well), peeled and cut into 3cm chunks
1 vanilla pod , split open or 1 tsp vanilla paste or extract
120g golden caster sugar
ice cream or custard, to serve
200g plain flour
1 tsp ground ginger (optional)
100g cold salted butter , chopped
70g light soft brown sugar

Steps:

  • Heat the oven to 200C/180C fan/gas 6. Toss the rhubarb, apples, vanilla and sugar together in an ovenproof dish and roast for 10 mins.
  • Mix the flour and ginger, if using, together in a large bowl. Rub in the butter with your fingertips to create a chunky breadcrumb textured mixture. Stir through the sugar. Sprinkle the crumble topping onto the fruit and cook for a further 30-35 mins or until the topping is lightly golden brown. Serve with ice cream or custard.

2 medium tart apples, peeled and chopped
1 egg
3/4 cup sugar
1/4 cup maple syrup
1/4 to 1/2 teaspoon ground nutmeg
1/4 teaspoon ground cinnamon
1 cup all-purpose flour
1/2 cup packed brown sugar
Pinch salt
1/2 cup cold butter, cubed

Steps:

  • In a bowl, combine the rhubarb, apples, egg, sugar, syrup, nutmeg and cinnamon. Pour into a greased 2-qt. baking dish. In another bowl, combine the flour, brown sugar and salt. Cut in butter until the mixture resembles coarse crumbs; sprinkle over fruit mixture. Bake at 350° for 45-55 minutes or until bubbly.

1 package chopped frozen rhubarb (500g)
3-4 large golden delicious apples, cored, peeled and sliced thinly
*Note: proportions of fruits and type of fruits used may be varied according to your taste.
For the Crumble:
3/4 cup unsalted butter, at room temperature
1 cup all purpose flour
1 cup lightly packed brown sugar
1 cup rolled oats
1 tsp ground cinnamon
3/4 cup raw almonds, chopped coarsely
2 tbsp crystallized ginger, chopped finely
1 tsp finely grated lemon or orange zest, OR 1.5 tsp finely chopped mixed peel
1 pinch salt
1/4 cup flax seeds (optional)

Steps:

  • Preheat oven to 375F. Arrange frozen rhubarb in bottom of square baking pan. Bake, covered, for 10 minutes. While rhubarb bakes, peel, core and slice apples. Remove rhubarb from oven and arrange apples evenly on top. Bake, covered, for 10 minutes. While fruit bakes, combine all ingredients for crumble in a medium mixing bowl and mix until blended evenly. Remove fruit from oven, and crumble the topping evenly over the fruit. Bake, covered, for 10 minutes, then bake uncovered about 10 more minutes until fruit is bubbling and topping is golden brown. Remove from oven and let stand 10 minutes. Serve with vanilla ice cream.

1 lb fresh rhubarb
1 lb cooking apple
1 orange
1/2 inch grated gingerroot
1 teaspoon ground cinnamon
1/2 cup light brown sugar
1 1/2 cups flour
1/2 cup margarine
1/2 cup light brown sugar
1/3 cup rolled oats
2 tablespoons raw sugar (optional)

Steps:

  • Cut rhubarb into 1 inch pieces. Juice orange and grate rind. Peel, core, and slice apples.
  • Combine rhubarb, juice, rind, apples and ginger in a large saucepan and bring to a boil. Lower heat and simmer 2-3 minutes.
  • Add cinnamon and sugar. Turn mixture into an ovenproof dish. Do not fill more than 2/3 full.
