Tasty low fat muffins that use fruit and buttermilk to keep them moist. No added Fat or Sugar. I have slightly revised this recipe to use less liquid and produce a "not so dense" muffin. Thank You Zaar member *mikekey* for experimenting with the liquid measurements!

I am completely anti-raisin, but he loves them so that's all that matters. Next time I will make half a batch for me and leave out the raisins, b/c they smell heavenly.

Apple raisin walnut muffins are delicious baked goods that are easy to make and perfect for breakfast or a midday snack. This recipe combines the sweetness of apples and raisins with the crunch of walnuts to create a delightful muffin that is nutritious and filling.

Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1/2 cup milk, room temperature
  • 2 cups apples, peeled and diced
  • 1 cup raisins
  • 1 cup walnuts, chopped

Instructions

  1. Preheat your oven to 375°F (190°C). Line a muffin tin with cupcake liners or spray with cooking spray.
  2. In a medium-size mixing bowl, whisk together the flour, baking powder, cinnamon, nutmeg, and salt. Set aside.
  3. Using an electric mixer on medium speed, cream together the butter, granulated sugar, and brown sugar. Beat until light and fluffy, about 2-3 minutes.
  4. Add the eggs one at a time, mixing well after each addition, then add the vanilla extract and mix again.
  5. With the mixer on low speed, add in the flour mixture in three parts, alternating with the milk. Begin and end with the flour mixture, mixing until the batter is just combined.
  6. Fold in the apples, raisins, and walnuts using a spatula.
  7. Divide the batter evenly among the 12 muffin cups, filling each about 3/4 full.
  8. Bake for 20-25 minutes, or until a toothpick inserted in the center of a muffin comes out clean.
  9. Remove from the oven and let cool in the muffin tin for 10 minutes before transferring to a wire rack to cool completely.

Variations

While this muffin recipe is delicious as-is, there are a few variations you can try:

Add oats:

If you want to add a bit of extra fiber to your muffins, substitute 1 cup of the all-purpose flour for rolled oats.

Swap out the nuts:

If walnuts aren't your thing, feel free to swap them out for chopped pecans or almonds.

Add some spice:

If you love the warm spices in this recipe, try adding a bit of ginger or cloves for an extra kick.

Make them vegan:

If you're looking for a vegan version of this recipe, substitute the butter with an equal amount of coconut oil and the milk with almond milk or another plant-based milk.

Conclusion

Apple raisin walnut muffins are the perfect breakfast or midday snack. With the sweetness of the apples and raisins and the crunch of the walnuts, these muffins are sure to satisfy your cravings. Whether you're looking for a healthy breakfast or a sweet treat, this recipe is the perfect choice.

Apple raisin walnut muffins are a popular breakfast or snack option for those who love baked goods. Rich in flavors, these muffins are perfect for anyone who wants a quick and healthy snack on the go. If you’re looking to make apple raisin walnut muffins, here are some valuable tips to keep in mind.

Tip 1: Choose the right apples

The first and foremost thing to keep in mind is that the quality of the apples you use will greatly impact the flavor of your muffins. Select either tart apples such as Granny Smiths or sweet apples such as Honeycrisps. You should also choose fruit that is ripe and has a firm texture to ensure it won’t turn mushy or disintegrate during baking.

Tip 2: Soak the raisins before baking

One great tip for a better texture in your apple raisin walnut muffins is to soak the raisins in warm water for about 15 minutes before adding them to the mixture. This helps to soften them, and also prevents the raisins from taking away any moisture from the batter.

Tip 3: Use fresh and high-quality walnuts

Walnuts add a rich, earthy flavor to muffins, making them a must-have ingredient. Always use fresh, high-quality walnuts as they can make or break your muffins, and a stale nut may spoil the recipe. Chop them roughly and add them to the batter, and they will give your apple raisin walnut muffins a delicious crunch.

Tip 4: Don’t overmix the batter

Overmixing the batter can make muffins tough and dry. In order to avoid this, mix the wet ingredients first and then add the dry ingredients. Fold the mixture until well combined, but not more than necessary. Add in your mix-ins such as apples, raisins, and walnuts once the flour is mixed in gently.

Tip 5: Measure ingredients correctly

When baking, it’s important to measure all the ingredients with care, as even a small deviation can result in a different texture and flavor. Sift the flour to ensure it’s well aerated and measure it using a leveled and rounded cup. You should always follow the recipe accurately, and avoid adding more than necessary.

Tip 6: Preheat the oven and prepare the muffin tin

Before you start mixing the batter, preheat your oven and prepare your muffin tin properly. Preheat your oven at 375°F (190 °C) and line your muffin tin with baking cups or parchment paper. A well-greased muffin tin ensures that the muffins won’t stick to the pan while baking. You can also use non-stick cooking spray.

Tip 7: Do not overfill the muffin cups

Filling the muffin cups too much can result in overflowing batter and ugly, deformed muffins. The ideal way is to fill each cup about ⅔ full. This allows the batter to expand and rise without spilling over the top.

Tip 8: Bake at the right temperature and time

Baking time and temperature are both critical to the success of your apple raisin walnut muffins. Bake the muffins at 375°F (190°C) for about 20 to 25 minutes, or until the muffins are golden brown and a toothpick inserted in the center comes out clean. Be careful not to overbake or underbake the muffins, as this may affect their texture.

Tip 9: Cooling and storing the muffins

Once your apple raisin walnut muffins are done, remove them from the oven and let them cool in the muffin tin for about 5 minutes. Then remove them from the pan and let them cool completely on a wire rack. You can store your muffins in an airtight container or a freezer bag, and they will stay fresh for about 3 to 4 days at room temperature or frozen for up to a month.

Conclusion

Following these tips will ensure that your apple raisin walnut muffins come out perfect and delicious every time. Not only will they make a great breakfast or snack, but they’re also easy to make and can be enjoyed by anyone, from kids to adults. So, what are you waiting for? Get into the kitchen, gather your ingredients, and start baking!
