Very tasty and healthy looking (but not tasting!) muffins, the recipe is taken (with little variations) from "Muffin magic" which is my bible for muffin-making, they all taste wonderful!

Steps:
- Preheat oven 200°C and line muffin pan with paper cases or grease them.
- Combine apples, sugar, oil, eggs, vanilla and orange peel, mix well.
- Add raisins and nuts.
- Combine flours, baking powder, baking soda and spice.
- Add dry ingredients to the apple batter and mix just until combined, do not overmix.
- Pour into muffin pans and sprinkle with a mixture of brown sugar and spice, pressing lightly.
- Bake 20-25 minutes or until skewer inserted in the center comes out clean, let cool on a rack.

This is another recipe I got from my girl Paula Deen. My son LOVES these muffins and they freeze great so I can always have them available to pull out for a mid afternoon snack for him. I am completely anti-raisin, but he loves them so that's all that matters. Next time I will make half a batch for me and leave out the raisins, b/c they smell heavenly.

- Preheat the oven to 350 degrees F.
- Combine the water, sugar, apples, raisins, butter, cinnamon, nutmeg, and cloves in a saucepan; bring to a boil. Remove the pan from the heat and cool completely.
- In a large bowl, stir the nuts and baking soda into the flour. Add the cooled mixture to the bowl, and stir until blended. Fill greased miniature muffin tins with batter to the top. Bake for 15 minutes.

- Preheat the oven to 375 degrees F (190 degrees C). Line a 12-cup muffin tin with paper liners.
- Mix flour, sugar, baking powder, cinnamon, and salt together in a large bowl.
- Melt coconut butter in a small bowl. Beat egg into the butter and pour into the flour mixture. Mix in applesauce and vanilla extract. Fold in raisins and walnuts and mix into a doughy batter.

- Set oven to 350°F.
- Set oven rack to second-lowest position.
- Butter 12 muffin tins or line with paper liners.
- For muffins: in a small bowl mix together first 7 dry ingredients.
- In another large bowl whisk together eggs and brown sugar until well combined.
- Add in melted butter whisking continuously until mixture is creamy.
- Stir in applesauce.
- Fold in flour mixture until JUST combined.
- Stir in nuts.

- Heat oven to 400°F. Grease bottoms only of 12 regular-size muffin cups with shortening or cooking spray, or line with paper baking cups.
- In large bowl, beat milk, oil, vanilla and egg with fork or wire whisk until well mixed. Stir in flour, 1/2 cup sugar, the baking powder, salt and 1/2 teaspoon cinnamon all at once just until flour is moistened (batter will be lumpy). Stir in apple.
