Time 40m

Yield 14 to16 scones

Number Of Ingredients 9

4 cups plus 1 tablespoon flour
2 tablespoons sugar, plus extra for sprinkling
2 tablespoons baking powder
2 teaspoons kosher salt
3/4 pound cold unsalted butter, diced
4 eggs, lightly beaten
1 cup cold heavy cream
3/4 cup raisins
1 extra-large egg beaten with 2 tablespoons milk or water, for egg wash

Steps:

  • Preheat the oven to 400 degrees F.
  • Combine 4 cups flour, 2 tablespoons sugar, the baking powder, and salt in an electric mixer fitted with a paddle attachment. Blend in the cold butter at the lowest speed and mix until the butter is in pea-sized pieces. Combine the eggs and heavy cream and quickly add to the flour/butter mixture. Combine until just blended. Combine the raisins and 1 tablespoon flour and then add to the dough and mix quickly. The dough may be a bit sticky.
  • Dump the dough out onto a floured surface and be sure it is well combined. Flour your hands and a rolling pin and roll the dough out to 3/4-inch to 1-inch thick. You will see lumps of butter in the dough. Cut into squares with a 4-inch cutter and then cut in half diagonally to make triangles. Place on a cookie sheet lined with parchment paper.
  • Brush the scones with the egg wash and sprinkle with sugar. Bake for 20 to 25 minutes until the outsides are crisp and the insides are done.

APPLE CINNAMON SCONES

Apple Cinnamon Scones image

I landed my first job in a bakery when I was sixteen. I would come in after school and make huge batches of scone mix to help the morning baker. After I graduated from high school, I became the principal baker --and spent the summer waking up at 2 a.m. Even though I had to go to bed at 7 p.m., I felt like the coolest kid in town. The bakery offered a bunch of different flavors of scones, and I could never decide on a favorite.

Time 45m

Yield About 18 scones

Number Of Ingredients 10

361 grams (3 cups) all-purpose flour
132 grams (2/3 cup) granulated sugar
12 grams (1 tablespoon) baking powder
2 grams (1 teaspoon) ground cinnamon
1 gram (1/4 teaspoon) fine sea salt
142 grams (5 ounces) (10 tablespoons) cold unsalted butter, cut into 1/2-inch cubes
340 to 425 grams (2 to 2 1/2 cups) chopped apples, peeled if desired
242 grams (1 cup) heavy cream
Egg wash: 57 grams (1 large) egg, beaten with 15 grams (1 tablespoon) water and a small pinch of fine sea salt
Turbinado or coarse sugar, for sprinkling

Steps:

  • Preheat the oven to 400 degrees F (204 degrees C), with racks in the upper and lower thirds. Line two baking sheets with parchment paper.
  • In a large bowl, whisk together the flour, granulated sugar, baking powder, cinnamon and salt. Add the butter and toss to coat the cubes with flour. Cut the butter into the flour by rubbing it between your forefingers and thumbs until the butter pieces are between the size of peas and walnut halves. Add the chopped apples and toss gently to combine.
  • Make a well in the center of the dry ingredients and pour in the cream. Toss the mixture with your fingers to combine, then knead gently to ensure everything is evenly moistened.
  • Scoop 1/4-cup mounds of the dough onto the prepared baking sheets (I do this by hand because I like them to look craggy, but you can use a No. 16 (1/4-cup scoop)), leaving at least 1 1/2 inches between them. Brush the tops of the scones with the egg wash and sprinkle generously with turbinado sugar.
  • Bake the scones, switching the sheets from front to back and top to bottom at the halfway mark, for 20 to 22 minutes, until the tops and edges are golden brown. The scones can be served warm or at room temperature.

Apple raisin scones with bourbon whipped cream is a delicious and perfect breakfast or tea-time treat. These scones are flavorful, tender and a little bit boozy. The warm spices, apples, and raisins make it a perfect fall recipe. And the bourbon whipped cream takes these scones to the next level. Here are some valuable tips to make perfect apple raisin scones with bourbon whipped cream.

Tips for making scones:

1. Start with cold butter:
It is essential to start with cold butter for making scones. Cold butter will ensure that the scones come out tender and flaky. The butter will create pockets of steam during baking, which results in a flaky texture. Cut the butter into small cubes and keep it in the refrigerator until ready to use.
2. Use a food processor:
Using a food processor to cut the butter into the scone mix ensures that the butter is evenly distributed in the mixture, resulting in a tender crumb. It also saves time and effort.
3. Do not overwork the dough:
Overworking the dough will result in tough scones. Once the dough comes together, stop kneading and shaping it immediately. Overworking the dough will cause the gluten to develop, making the scones chewy rather than tender.
4. Use a light hand:
When shaping the dough, use a light hand to keep it tender. Press the dough gently and avoid using too much force.
5. Chill the scones before baking:
Chill the scones for at least 15 minutes before baking. Chilling the scones will help them hold their shape and prevent spreading during baking.

Tips for making apple raisin scones:

1. Use a combination of all-purpose and whole wheat flour:
Using a combination of all-purpose and whole wheat flour will add a nutty flavor and a wholesome texture to the scones. It will also give the scones a little more structure.
2. Use fresh apples:
Use fresh apples that are firm and crisp. Avoid using mealy or soft apples for this recipe. Cut the apples into small pieces and toss them with lemon juice to prevent browning.
3. Soak the raisins:
Soak the raisins in hot water or bourbon for 10-15 minutes before adding them to the scone mixture. This will ensure that they become plump and juicy during baking and prevent them from burning.
4. Add warm spices:
Add warm spices like cinnamon, nutmeg, and ginger to the scone mixture to enhance the flavor of the scones. These spices complement the apples and raisins and give the scones a cozy fall flavor.
5. Brush with cream before baking:
Brush the scones with cream before baking to give them a beautiful golden brown color. It will also create a slightly glossy finish on the top.

Tips for making bourbon whipped cream:

1. Use cold heavy cream:
For making whipped cream, always use cold heavy cream straight from the refrigerator. The colder the cream, the faster and easier it will whip.
2. Use a chilled bowl and beaters:
To whip the cream quickly and efficiently, chill the bowl and beaters in the freezer for 10-15 minutes before adding the cream. A cold bowl and beaters will help the cream whip faster and hold its shape better.
3. Add sugar and bourbon:
Add powdered sugar and bourbon to the whipped cream to add sweetness and a little boozy kick. The powdered sugar dissolves faster than granulated sugar and will help create a smooth whipped cream. The bourbon adds flavor and makes it a perfect compliment to the apple raisin scones.
4. Do not overbeat:
Be careful not to overbeat the whipped cream. Overbeating will cause the cream to turn to butter and ruin the texture.
5. Serve right away:
Whipped cream is best served immediately. Once whipped, it will begin to lose its shape and become watery. Serve it right away, alongside the warm apple raisin scones, for a perfect breakfast or tea-time treat.

Conclusion:

These tips will help you make the perfect apple raisin scones with bourbon whipped cream. Follow these tips and tricks to ensure your scones come out tender, flavorful, and delicious. With a little preparation and attention to detail, you can make a cozy and comforting treat that your family and friends will love.
