Ingredients

The exact ingredients used in apple raisin oven pancake recipes will vary depending on the specific recipe, but most will typically require some combination of the following:
For the pancake batter:
  • All-purpose flour
  • Baking powder
  • Sugar
  • Salt
  • Eggs
  • Milk
  • Butter or oil
  • Cinnamon
  • Nutmeg
For the apple raisin topping:
  • Apples (such as Granny Smith or Honeycrisp)
  • Raisins
  • Brown sugar
  • Cinnamon
  • Lemon juice
  • Butter

Preparation

The method for preparing apple raisin oven pancake recipes will again vary depending on the specific recipe being used, but the general steps involved are:
1. Preparing the pancake batter:
The pancake batter is typically mixed together in a large bowl using a whisk or electric mixer. Dry ingredients such as flour, baking powder, sugar, and spices are combined in one bowl, while wet ingredients such as eggs, milk, and melted butter or oil are whisked together in another bowl. The two mixtures are then combined and whisked until a smooth batter forms.
2. Preparing the apple raisin topping:
The apple raisin topping is typically prepared separately in a saucepan. Apples are peeled, cored, and chopped into small pieces, and then cooked in a mixture of butter, brown sugar, cinnamon, and lemon juice. Raisins are added towards the end of cooking to plump them up and infuse the mixture with rich flavor.
3. Combining the pancake batter and apple raisin topping:
The pancake batter is poured into a greased baking dish, such as a 9x13 inch pan or a cast iron skillet. The apple raisin topping is then spooned over the top of the batter, making sure to distribute it evenly.
4. Baking:
The dish is then baked in the oven at a temperature of around 375°F until the pancake is golden brown on top and set in the center, typically around 20-25 minutes.

One of the great things about apple raisin oven pancake recipes is that they are highly adaptable and can be customized to suit your tastes and preferences. Some possible variations include:
Adding nuts:
Chopped nuts such as walnuts, pecans, or almonds can be added to the apple raisin topping to add crunch and texture.
Using different fruits:
While apples are a classic choice for this dish, you can also experiment with other fruits such as pears, peaches, or berries.
Changing up the spices:
Cinnamon and nutmeg are the most commonly used spices in apple raisin oven pancake recipes, but you can also try using other warm spices such as ginger, cardamom, or allspice.

Serving suggestions

Apple raisin oven pancake can be served on its own or with a variety of toppings and accompaniments, such as:
Maple syrup:
Drizzle warm maple syrup over the top of the pancake just before serving.
Whipped cream:
A dollop of fresh whipped cream adds richness and contrast to the sweet and spicy flavors of the pancake.
Yogurt:
A spoonful of Greek yogurt on the side can help cut through the richness of the pancake and provide a tangy contrast.
Bacon or sausage:
For a heartier breakfast, cook up some bacon or sausage on the side and serve alongside the pancake.
