1/3 c brown sugar
1 tsp ground cinnamon
2/3 c granulated sugar
1/2 c butter, softened
2 large eggs
1 1/2 tsp vanilla extact
1 1/2 c all purpose flour
1 3/4 tsp baking powder
1/2 c milk
1 apple, peeled and chopped
1/2 c chopped pecans or walnuts
1/2 c golden raisins

Steps:

  • 1. Preheat oven to 350 degrees F. Grease and flour a 9×5-inch loaf pan. (Can use the non-stick spray with flour added in)
  • 2. Mix brown sugar and cinnamon together in a bowl.
  • 3. Mix chopped apple, nuts and raisins together in another bowl.
  • 4. Beat white sugar and butter together in a bowl using an electric mixer until smooth and creamy. Beat in eggs, 1 at a time, until incorporated; add vanilla extract.
  • 5. Combine flour and baking powder together in a bowl; stir into creamed butter mixture.
  • 6. Mix milk into batter until smooth. Pour half the batter into the prepared loaf pan; add half the apple/nut/raisin mixture and half the brown sugar mixture. Lightly pat apple mixture into batter.
  • 7. Pour the remaining batter over apple mixture layer; top with remaining apple mixture and brown sugar mixture. Lightly pat apples into batter; swirl brown sugar mixture through apples using a finger or spoon.
  • 8. Bake in the preheated oven until a toothpick inserted in the center of the loaf comes out clean, 35 to 45 minutes.

Edited: I have also tried out the bread by using 1/2 whole wheat pastry flour and 1/2 regular flour, a tbl of wheat germ and less sugar to make it a tiny bit "healthier". It came out just as nice as the original.

2 medium apples, peeled and chopped
1 tablespoon water
1 3/4 cups flour
1 1/2 cups sugar
3/4 teaspoon baking soda

1/4 cup vegetable oil

Steps:

  • Preheat oven to 350 degrees.

1 1/2 cups vegetable oil
2 cups chopped unpared cooking apples
1 1/2 cups sugar
1 teaspoon vanilla
3 1/3 cups flour

Steps:

  • Heat oven to 350 degrees.
  • Grease and flour 2 loaf pans.
