1 Honeycrisp apple, diced
2 tablespoons light corn syrup
1 tablespoon honey
1 tablespoon maple syrup
1 pinch ground cinnamon, or more to taste
1 pinch brown sugar
2 11-inch flour tortillas

Steps:

  • Heat a large skillet over medium-low heat. Cook apple, corn syrup, honey, maple syrup, ground cinnamon, and brown sugar in hot skillet, stirring every few minutes, until apples are slightly softened and caramelized, 8 to 10 minutes. Transfer apple mixture to a bowl.
  • Place 1 tortilla in the same skillet over medium-low heat; spread apple mixture on top of tortilla. Top with remaining tortilla. Cook until the bottom tortilla is golden brown, 1 to 3 minutes. Carefully flip the quesadilla and cook until the other tortilla is golden brown, 1 to 3 minutes more.

2 (12 inch) flour tortillas
6 ounces Brie cheese, rind removed and cheese thinly sliced
1 sweet-tart apple, such as Fugi or Gala, thinly sliced
1 tablespoon brown sugar
¼ teaspoon ground cinnamon

Steps:

  • Melt 3/4 teaspoon butter in a large skillet over medium heat, tilting the skillet to evenly spread butter. Place 1 tortilla in the melted butter. Cover tortilla with Brie cheese slices and apple slices; sprinkle with brown sugar and cinnamon. Place the remaining tortilla over the filling.
  • Cook quesadilla until bottom tortilla is browned, 3 to 5 minutes. Spread the remaining 3/4 teaspoon butter on top tortilla; carefully flip quesadilla and cook until bottom tortilla is browned and cheese is melted, 3 to 5 more minutes. Slice quesadilla into quarters.

1 Granny Smith apple, thinly sliced
4 teaspoons extra-virgin olive oil
4 8-inch flour tortillas
8 ounces brie cheese, sliced (rind removed)
1 tablespoon whole-grain mustard
1 tablespoon maple syrup
2 strips bacon, cooked and crumbled

Steps:

  • Preheat a grill pan over medium-high heat. Toss the apple slices with 2 teaspoons olive oil and cook, turning occasionally, until marked and tender, 3 to 4 minutes.
  • Lay the tortillas on a cutting board. Top each with one-quarter each of the grilled apple and brie on one side, then fold the tortillas in half to cover the filling.
  • Heat the remaining 2 teaspoons olive oil in a large nonstick skillet over medium heat. Working in batches, cook the quesadillas until golden brown and the cheese melts, about 2 minutes per side. Meanwhile, mix the mustard and maple syrup in a bowl. Slice each quesadilla into wedges. Drizzle with the maple-mustard syrup and top with the bacon.

1 (1-pound) skirt steak
Salt and freshly ground black pepper
3 tablespoons vegetable oil
8 (8-inch) flour tortillas
2 cups shredded mozzarella cheese, divided
2 cups Roasted Tomatillo and Apple Salsa, recipe follows
Eva's Chunky Guacamole, recipe follows
1 pound tomatillos, husked and rinsed
2 green apples, such as Granny Smith, quartered
2 whole cloves garlic, unpeeled
1/2 white onion
2 jalapeno chile, stemmed
2 tablespoons olive oil
Salt and freshly ground black pepper
3 ripe avocados, cut into 1/2-inch dice
2 medium ripe tomatoes, seeded and cut into 1/2-inch dice
1 small white onion, finely chopped
1/4 bunch fresh cilantro, chopped
1/2 serrano chile, finely minced
2 small lemons, about 4 tablespoons
1 teaspoon kosher salt

Steps:

  • Place the steak in a glass dish. Sprinkle the steak on both sides with salt and pepper. Let stand at least 15 minutes and up to 1 hour to tenderize, turning the steak occasionally.
  • Heat the oil in a large, heavy skillet over high heat. Add the steak and saute to desired doneness, about 3 minutes per side for rare. Transfer the steak to a cutting board. Let rest 5 minutes. Slice thinly across the grain.
  • Place 4 tortillas in the skillet with the pan juices and heat over medium-high heat, working in batches if necessary. Place 1/2 cup cheese on top of each one and top with 4 ounces sliced meat. Place the remaining 4 tortillas on the top. Cook until the cheese start to melt, about 2 minutes. Flip and cook until golden and the cheese is melted, another 2 minutes on the other side.
  • Remove the quesadillas from the skillet. Peel open the quesadilla and spoon about 1/2 cup Roasted Tomatillo and Apple Salsa on top. Close the quesadilla and slice into quarters. Serve with Eva's Chunky Guacamole.
  • Preheat the oven to 350 degrees F.
  • Place the tomatillos, apples, garlic, onion and jalapenos on a baking sheet. Toss with the olive oil, 2 teaspoons salt and 1 teaspoon pepper and roast until the tomatillos are softened and slightly charred, about 20 minutes. Peel the garlic. Puree all the ingredients in a blender until smooth. Season with salt and pepper. Makes 3 1/2 cups.

4 teaspoons prepared honey mustard
1/2 cup shredded Monterey Jack
4 ounces smoked turkey breast deli meat
1 Mcintosh apple, thinly sliced
1 cup shredded reduced-fat cheddar

  • 1.Lay out tortillas and spread each with 1 teaspoon honey mustard. Place 1 tortilla, mustard side up, in a large nonstick skillet over medium heat.   • Line half of each tortilla with apple slices, starting at the edge and working toward the middle. Top the apples on each tortilla with a quarter of the brie slices. 1/2 tablespoon honey

1 cup shredded mild Cheddar (4 ounces)

  • Spray a nonstick grill pan or nonstick griddle pan with vegetable oil cooking spray. Place over medium-high heat.

1/4 teaspoon ground cinnamon

Steps:

  • Peel, core and thinly slice apples.

1/3 cup raisins
1/2 teaspoon cinnamon
8 (6 inch) flour tortillas
1 1/2 cups Mexican blend cheese, divided

  • In a bowl, combine apple pie filling, raisins and cinnamon.
  • Coat a 10 inch skillet with cooking spray.
  • Heat over medium heat until hot.
  • Place one tortilla in skillet.
  • Top with 2 T cheese and 1/4 cup pie filling mixture.
  • Cook 1-2 minutes or until cheese is melted and bottom of tortilla is golden brown.
