1/2 teaspoon ground allspice
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cloves
1 1/2 cups sugar
1/4 cup vegetable oil
8 ounces (scant 1 cup) canned unsweetened pumpkin puree
2 large eggs
2/3 cup water
2 cups half-and-half
1/2 vanilla bean, seeds scraped
5 large egg yolks
1/3 cup pure cane sugar
1 cup heavy cream
1/2 cup apple juice
1 star anise
1-inch piece fresh ginger, peeled and chopped
4 whole cloves
2 cinnamon sticks
1/8 teaspoon ground nutmeg
1 1/2 cups granulated sugar
1/2 cup water
1 tablespoon apple cider vinegar
1 tablespoon apple schnapps

Steps:

  • Preheat the oven to 325 degrees F. Combine the cream, milk, vanilla bean and seeds in a small saucepan over medium heat and bring to a simmer.
  • Whisk together the yolks, sugar, maple syrup, and pumpkin puree in a large bowl. Slowly whisk in the hot cream mixture until combined, remove the vanilla pod, and whisk in the bourbon. Strain the custard into a clean bowl.
  • Scatter the pumpkin bread cubes in a buttered 9 by 13-inch baking glass baking dish. Pour the custard over the bread, pressing down on the bread to totally submerge it in the custard. Let sit for 15 minutes to allow the bread to soak up some of the custard.
  • Place the pan in a larger roasting pan and pour hot tap water into the roasting pan until it comes half way up the sides of the glass dish. Bake until the sides are slightly puffed and the center jiggles slightly, about 1 hour.
  • Remove from the oven and water bath and cool on a baking rack for at least 30 minutes before serving.
  • Spoon some of the Vanilla Bean Creme Anglaise into a shallow bowl, top with some of the bread pudding and drizzle with the Spicy Caramel Apple Sauce. Top with freshly whipped cream. Bread pudding is best served warm.
  • Preheat the oven to 350 degrees F. Butter or lightly spray the bottom and sides of a 9-inch loaf pan with nonstick cooking spray.
  • Whisk together the flour, salt, baking soda, baking powder, allspice, cinnamon, nutmeg, and cloves in a small bowl.
  • In the bowl of a standing mixer fitted with the paddle attachment, beat the 4 tablespoons softened butter, sugar, and oil at high speed until light and fluffy, about 1 minute, scraping down the sides and bottom of the bowl a few times.
  • Add the pumpkin puree and mix until combined. Add the eggs, one at a time, and mix until just incorporated. At low speed, slowly add the flour mixture and water and mix until just combined. Spread the batter into the prepared pan and bake until a toothpick inserted into the center comes out clean, about 60 to 75 minutes. Let cool in the pan on a baking rack for 10 minutes. Remove from the pan and let cool completely.
  • Once the bread is cool, slice in half lengthwise, and then slice each half into 1/2-inch cubes. Spread the cubes on a large baking sheet and bake in a 325 degree oven until lightly toasted, turning once, about 20 minutes. Let cool.
  • Bring the half-and-half and vanilla bean and seeds to a simmer in a medium saucepan.
  • Whisk together the yolks and sugar in a medium bowl until at the pale ribbon stage. Slowly whisk in the hot half-and-half, return the mixture to the pot, and cook over medium heat, stirring constantly with a wooden spoon, until the mixture coats the back of the spoon. Strain into a bowl and set over an ice bath. Stir until chilled. Cover and refrigerate at least 1 hour before serving.
  • Combine the cream, apple juice, star anise, ginger, cloves, cinnamon sticks, and nutmeg in a small saucepan and bring to a simmer. Remove from the heat and let steep for at least 20 minutes. Strain the mixture into a clean, small saucepan and place back over low heat while you make the caramel.
  • Combine the sugar, water and, vinegar in a medium saucepan over high heat and cook without stirring, until it's a deep amber color, about 8 minutes. Slowly whisk in the warm cream mixture a little at a time, and continue whisking until smooth. Add the apple schnapps and cook for 30 seconds longer. Transfer to a bowl and keep warm. The sauce can be made 2 days in advance and refrigerated. Reheat over low heat before serving.

  • Heat oven to 180C/fan 160C/gas 4. Grease a 2-litre/3½-pint ovenproof dish lightly with butter. Tip the flour, sugar and baking powder, along with a pinch of salt, into a large bowl. Mix together the milk, butter, egg and vanilla extract and stir into the dry ingredients until you get a smooth batter. Arrange the apples in the dish, spoon the batter on top and smooth with a knife until the apples are covered.
  • For the topping, pour 250ml boiling water over the sugar and stir together until smooth. Pour the liquid over the pudding mixture, then scatter over the pecans. Bake for about 40 mins until the pudding has risen and is golden. Use a big spoon to serve the pudding, making sure you get some of the gooey caramel sauce covering the bottom of the dish. Serve with pouring cream, warm custard or vanilla ice cream.

When you think of pudding, you might immediately think of something creamy, rich, and chocolatey – but did you know that there are plenty of delicious pudding recipes that prioritize fruit? Apple pudding is one such recipe. This dessert is perfect for autumn and winter, when apples are in season and the cozy flavors of cinnamon, nutmeg, and allspice are at their most comforting. Here's everything you need to know about apple pudding recipes.

What is apple pudding?

Apple pudding can take many forms, but at its core, it's a dessert that combines apples with a pudding-like filling. The filling might be creamy or custardy, or it might be studded with chunks of apple. Some apple pudding recipes even include a crust or crumble topping for added texture and flavor. Generally, though, the focus is on the apples. The sweetness and tartness of the fruit are balanced with a mix of warm spices, and the result is a dessert that's both comforting and refreshing.

The history of apple pudding

Pudding has been a popular dessert since the Middle Ages, but it's unclear exactly when the first apple pudding was created. However, we do know that apples have been used in desserts for centuries, and it's likely that someone had the idea to combine them with pudding at some point. In the United States, apple pudding became particularly popular in the 1800s, when apple harvests were abundant and households were looking for ways to use up their surplus fruit. Today, apple pudding remains a beloved dessert that's perfect for any occasion.

Types of apple pudding

As mentioned before, apple pudding can take many forms. Here are just a few of the most common types:
Apple custard pudding:
This type of apple pudding is similar to a baked custard, but with chunks of apple mixed in. The custard might be flavored with warm spices and vanilla, and it's typically served warm or at room temperature.
Apple bread pudding:
Bread pudding is a classic dessert that involves soaking bread in a custard mixture and baking it until it's set. Apple bread pudding is simply a variation on this theme, with diced apples added to the mix. The result is a pudding that's slightly chewy, slightly creamy, and bursting with apple flavor.
Apple crumble pudding:
For those who prefer a little crunch in their dessert, apple crumble pudding is a great option. This recipe typically involves a layer of sliced apples on the bottom, topped with a sweet crumble made from flour, butter, sugar, and sometimes nuts or oats. The whole thing is baked until the apples are tender and the topping is golden brown.
Apple pie pudding:
Love apple pie, but don't want to deal with the hassle of making a crust? You might enjoy apple pie pudding, which is essentially an apple pie filling baked in a dish without the crust. This recipe is perfect for those who want all the flavors of apple pie without the fuss.

How to make apple pudding

While the exact recipe for apple pudding will depend on the type you're making, there are a few key steps that are common to most variations. Here's a basic rundown:
Step 1: Preheat your oven.
Most apple pudding recipes involve baking the dessert, so you'll want to preheat your oven to the recommended temperature before you start mixing your ingredients.
Step 2: Prepare your apples.
For most apple pudding recipes, you'll need to peel and dice your apples before incorporating them into the filling. Make sure to follow the recipe's instructions for how big to cut your apple pieces.
Step 3: Mix your filling.
Whether you're making a custard-based filling or a crumble topping, you'll need to mix together your ingredients in a bowl before pouring them over your apples. This might involve whisking together eggs, milk, and spices for a custard, or rubbing together butter and flour for a crumble.
Step 4: Bake your pudding.
Once your filling is mixed, pour it over your prepared apples and bake the pudding according to your recipe's instructions. Be sure to keep an eye on your dessert as it cooks – depending on the type of pudding you're making, it might need to be stirred occasionally or covered in foil to prevent burning.
Step 5: Serve and enjoy!
Once your pudding is done baking, let it cool for a few minutes before serving. Depending on the recipe, you might want to top it with whipped cream, caramel sauce, or a sprinkling of cinnamon. Enjoy your warm and comforting apple pudding!

Conclusion

If you're looking for a dessert that's equal parts sweet, tart, and comforting, give apple pudding a try. Whether you prefer a custardy filling or a crunchy crumble, there's a recipe out there that's sure to please. Plus, with apples in season from September through November, fall is the perfect time to experiment with different apple pudding variations. Happy baking!
Apple pudding is a delicious dessert that can be enjoyed on any occasion. It is easy to make and can be customized to suit individual preferences. Whether you are making apple pudding for a party or for a cozy evening at home, there are several tips that you can follow to ensure that your pudding turns out perfectly every time. In this article, we will discuss valuable tips for making apple pudding recipes that will leave your guests impressed.

Tip 1: Choose the Right Apples

The first and most important tip for making apple pudding is to choose the right type of apples. Apples are the star ingredient of this dessert, and the right choice of apples can make or break your recipe. While any type of apple can be used in a pudding recipe, some varieties work better than others. Apples that are firm and tart, such as Granny Smith and Honeycrisp, are ideal for pudding as they hold their shape and provide a balance of sweetness and sourness. Softer apples, such as Golden Delicious and McIntosh, can also be used, but they tend to break down when baked, resulting in a mushy pudding.

Tip 2: Use the Right Pan

The pan that you use for your apple pudding can also impact the final result. Baking the pudding in a deep dish, such as a casserole dish, will give you a pudding that is more custardy on the inside and golden and crispy on the outside. However, if you prefer a more cake-like texture, you can use a shallow baking dish or pie plate. Make sure to grease the pan well to prevent sticking.

Tip 3: Add Some Spice

Adding spice to your apple pudding can enhance the flavor and create a warm, comforting aroma. Cinnamon, nutmeg, and allspice are classic spices that pair well with apples. You can also experiment with other spices, such as cardamom or ginger, to add a unique twist to your pudding. Be careful not to use too much spice, as it can overpower the flavor of the apples.

Tip 4: Use Bread as a Base

Bread is a key ingredient in many apple pudding recipes, as it helps to absorb the custard and give the pudding its signature texture. Use day-old bread, as it is firmer and absorbs the custard better than fresh bread. White or whole wheat bread can be used, but avoid using bread with a lot of seeds, as they can create a gritty texture. Cut the bread into small pieces or cubes, then toss them in the custard mixture until they are well coated.

Tip 5: Let the Pudding Rest

After your apple pudding is baked, it is important to let it rest for a few minutes before serving. This will allow the custard to set and the flavors to meld together. For best results, let the pudding cool to room temperature before serving. You can also chill the pudding in the refrigerator for a few hours to enhance the flavor and texture.

Tip 6: Serve with Whipped Cream or Ice Cream

Apple pudding is delicious on its own, but it becomes even more indulgent when paired with whipped cream or ice cream. Whipped cream adds a light, airy texture that balances out the richness of the pudding. Vanilla ice cream is another great option, as it complements the warm flavors of the apples and spices. You can also sprinkle some cinnamon or nutmeg on top of the whipped cream or ice cream for a festive touch.
Conclusion
Apple pudding is a timeless dessert that can be enjoyed year-round. By following these valuable tips, you can create a pudding that is rich, flavorful, and perfectly textured. Remember to choose the right apples, use the right pan, add some spice, use bread as a base, let the pudding rest, and serve with whipped cream or ice cream. With these tips in mind, you will be able to make apple pudding that is sure to impress your guests.
