Salted Caramel Apple Poke Cake image

This apple cake is super moist, perfectly sweet and packed with fall's most popular flavors. Apple is used in three ways -- applesauce is stirred into the batter, and fresh apple chunks are poked into the baked cake and then sprinkled on top of the frosted cake for flavor and crunch. Gooey caramel, a dusting of flaky sea salt and fluffy cinnamon buttercream are the irresistible finishes.

Time 3h45m

Yield 12 servings

Number Of Ingredients 20

Nonstick cooking spray
1 cup unsweetened applesauce
2 1/2 cups dark-brown sugar
2 sticks (1 cup) unsalted butter, melted
1 cup sour cream
4 large eggs
1 tablespoon pure vanilla extract
4 cups all-purpose flour (see Cook's Note)
2 teaspoons baking soda
1 teaspoon ground cinnamon
1 teaspoon kosher salt
1 medium Pink Lady or other crisp apple, cored and chopped into small pieces (about 1 1/2 cups)
1 cup caramel sauce, plus more for garnish
1/2 teaspoon flaky sea salt, plus more for garnish
1 stick (8 tablespoons) unsalted butter, at room temperature
2 cups confectioners' sugar
1 teaspoon ground cinnamon
1/4 teaspoon kosher salt
1/4 cup heavy cream
1 teaspoon pure vanilla extract

Steps:

  • Preheat the oven to 350 degrees F. Spray a 9-by-13-inch baking dish with nonstick cooking spray.
  • For the cake: Whisk the applesauce, brown sugar, melted butter, sour cream, eggs and vanilla together in a large bowl until smooth. Add the flour, baking soda, cinnamon and kosher salt to the bowl and whisk until just combined. Pour into the prepared pan and smooth the top. Bake until golden brown and a toothpick inserted into the center comes out clean, about 1 hour. Leave the cake in the pan to cool completely, about 2 hours.
  • Once the cake is cool, use the handle of a wooden spoon to poke 25 holes in the cake (5 rows of 5 holes each). Press 2 to 3 apple pieces into each hole; reserve the remaining pieces for garnish. Pour and spread the caramel sauce over the cake and let it stand 10 minutes to sink into the holes and be absorbed by the cake. Sprinkle with the flaky salt.
  • Meanwhile, for the cinnamon buttercream: Beat the butter, confectioners' sugar, cinnamon and salt together in a large bowl with an electric mixer on medium-high speed until smooth. Add the cream and vanilla and continue beating until fluffy, 1 to 2 minutes. Dollop the frosting on top of the cake, then use a small offset spatula to spread it evenly. Garnish with the remaining apple chunks, a drizzle of caramel sauce and another sprinkle of flaky salt.

How to make Apple Pie Poke Cake

Provided by @MakeItYours

Number Of Ingredients 12

1 white cake (prepared in a 13×9 baking dish)
1 cup light brown sugar, packed
4 cups apple slices, diced
¼ cup water
1 tsp cinnamon
¼ tsp nutmeg
¼ tsp salt
14 oz can sweetened condensed milk
1 box (3.4 oz) Instant vanilla pudding mix
2 cup milk
1 tsp cinnamon
12oz whipped topping, thawed

Steps:

  • Prepare white cake according to box directions for a 13×9 cake. While cake is baking, work on cooking the apples. In a large skillet, whisk together the brown sugar with water, 1 tsp cinnamon, nutmeg and salt. Heat over medium high heat until bubbly, then add diced apples. I leave the skins on (I like the chewy taste, but feel free to remove if desired). Reduce heat to low and simmer apples about 12-15 minutes.
  • When cake is done baking, poke holes all over (I use a meat thermometer, you can also use a wooden spoon handle or fork). Pour can of sweetened condensed milk over hot cake. Then pour apple mixture. Spread and smooth until apples are evenly disbursed over top of cake and liquids have drained into the poked holes of the cake. Refrigerate 3-4 hours or overnight.
  • While cake is in refrigerator, whisk the vanilla pudding with milk and 1tsp cinnamon until smooth. Refrigerate until ready to serve. When ready to serve cake, combine pudding mixture with thawed Cool Whip. Spread over cake, slice and serve. ENJOY!

The filling not only adds flavor but keeps the cake ultra-moist throughout the baking and chilling process. Poke Cake variations can include pudding, fruit preserves, and even alcoholic mixes like a Kahlua Poke Cake. While the technique for making Poke Cake is simple, its tasty flavor combinations make this unique cake type an American classic.

Apple poke cake is a delicious and easy dessert that can be enjoyed by everyone, and can be prepared for any occasion. The recipe is quite simple, and there are a few tips that can help you make the best apple poke cake ever. This article will provide valuable tips on how to make apple poke cake recipes that are delicious and perfect.

Tip 1: Choose the right apples

Choosing the right apples is an essential step when making apple poke cake. You should select apples that are firm, flavorful, and have a crisp texture. Apples such as Granny Smith, Honeycrisp, or Braeburn are some of the best options for apple poke cake. Avoid using Red Delicious apples, as they can become mushy and lose their flavor when cooked.

Tip 2: Use a cake mix

Using a cake mix is an easy and convenient option when making apple poke cake. Choose a yellow cake mix or a spice cake mix, and follow the instructions on the box to prepare the cake batter. Some cake mixes may require additional ingredients, such as eggs, milk, or oil, so be sure to check the label before purchasing.

Tip 3: Add apple pie filling

Adding apple pie filling is a simple way to add flavor and texture to your apple poke cake. You can use canned apple pie filling, or make your own by peeling and slicing apples and cooking them with cinnamon, sugar, butter, and lemon juice. Spoon the apple pie filling over the cake batter before baking, and poke holes in the cake afterward to allow the filling to seep into the cake.

Tip 4: Poke holes

Poking holes in the cake is an essential step when making apple poke cake. You can use a wooden spoon handle, a chopstick, or a fork to poke the holes. Be sure to poke the holes all the way to the bottom of the cake, and space them evenly apart. This will allow the apple pie filling or other filling to penetrate the cake and make it moist and flavorful.

Tip 5: Choose the right frosting

Choosing the right frosting is a crucial step in making apple poke cake. Some great options for frosting include cream cheese frosting or caramel frosting. Cream cheese frosting is a tangy and smooth frosting that complements the apple pie filling perfectly. Caramel frosting is a rich and sweet frosting that adds a decadent touch to the cake. You can also use whipped cream, glaze, or other frosting, depending on your preference.

Tip 6: Add toppings

Adding toppings is a fun and creative way to enhance the flavor and appearance of your apple poke cake. Some suggestions for toppings include chopped nuts, such as walnuts or almonds, dried cranberries or raisins, caramel sauce, or whipped cream. You can also sprinkle cinnamon, nutmeg, or powdered sugar over the cake to add extra flavor.

Tip 7: Serve and enjoy

Once your apple poke cake is ready, it's time to serve and enjoy it. You can serve the cake warm or cold, depending on your preference. You can also store the cake in the refrigerator for later use. Apple poke cake is perfect for any occasion, from family gatherings to office parties, and it's sure to please everyone's taste buds.

Conclusion:

Making apple poke cake recipes can be a fun and easy process, and by following these valuable tips, you can create delicious and perfect apple poke cakes every time. Remember to choose the right apples, use a cake mix, add apple pie filling, poke holes, choose the right frosting, add toppings, and serve and enjoy.
