Time 2h30m

Yield 8-12 serving(s)

Number Of Ingredients 14

2 apples, diced
2 tablespoons butter, cubed
1/4 cup brown sugar
1/2 teaspoon cinnamon
8 ounces cream cheese
3/4 cup sweetened condensed milk
1/4 vanilla bean
1 pinch cinnamon
spring roll wrappers (at least 4-inch diameter)
bowl water
canola oil, for frying
3/4 cup sugar
1/4 cup cinnamon
caramel ice cream topping, garnish

Steps:

  • - Make the cheesecake filling.
  • Soften the cream cheese with a hand mixer, then beat in the sweetened condensed milk.
  • Scrape out vanilla seeds from the bean and add to the mixture, along with cinnamon.
  • Beat until all incorporated, and then set in the fridge for at least 2 hours.
  • - Make the apple pie filling.
  • Add apples to a small pot, and heat on medium until things start to brown. Stir in the butter, brown sugar, and cinnamon, and cook, stirring every couple of minutes, until the apples are softened.
  • Then keep heating, stirring every few minutes, until most of the liquid is gone.
  • - Assembling the wontons
  • Take a spring roll wrapper and moisten on both sides by dipping your fingers in water and then manually moistening the wrappers.
  • Note: It may take a few tries to find the right amount of water to use, so that the wrappers are pliable without tearing but not too gummy. I suggest practicing a few times before adding filling.
  • Then spoon in the center the cheesecake filling, and then top with the apple pie filling.
  • To roll the wrappers, fold opposite sides over to the middle, then fold the perpendicular sides inches
  • You may want to moisten the back just slightly to make sure it is all together.
  • You should have a nice rectangular sized packet filled with apple cinnamon cheesecake goodness and lay it folded side down and fill the rest.
  • - Deep frying
  • Fill a pot with at least 2 inches of oil, and use a thermometer attached to your pot to keep track of the temperature.
  • You want the temp to be between 340F and 350°F
  • While the oil is heating up, mix cinnamon and sugar together in a small bowl.
  • Place wonton/s in pot (if you can handle frying more than one at a time - great!) and fry on one side for about 1 minute and then turn and fry on other side for another minute.
  • Scoop it out with the slotted spatula and immediately lay it in the cinnamon sugar.
  • Spoon cinnamon sugar over the wontons, and then set aside to cool.
  • - To serve - Arrange 2 - 3 wonton pillows on plate and drizzle with caramel sauce. Enjoy!

I got this recipe out of my DD book "The Sleepover Cookbook" and we make these every time she has someone spend the night. They are so simple to make, but are such a hit with the kids. They are kind of like apple empanadas.

Apple pillows recipes refer to a type of pastry or dessert that features the use of apples as the main ingredient. It involves preparing a pastry dough, typically made of flour, butter, sugar, and eggs, and then stuffing it with cooked apples that have been mixed with spices, such as cinnamon and nutmeg. Apple pillows can be served as a dessert or as a snack, and they are popular in many countries around the world, especially during the autumn season when apples are in abundance.

History and Origins

The origins of apple pillows are unclear, but it is believed that the recipe was first created in Europe, where apples have been a staple fruit for centuries. Apples were commonly used in many traditional dishes, including pies, crumbles, and puddings, and it's likely that one of these recipes inspired the creation of the apple pillow.

Ingredients

The following ingredients are typically used in apple pillows recipes:

  • Pastry dough - made from flour, butter, sugar, and eggs
  • Apples - ideally, a tart and firm variety such as Granny Smith, that are peeled, cored, and diced
  • Sugar - to sweeten the apple filling
  • Spices - such as cinnamon, nutmeg, and allspice to add flavor to the filling
  • Lemon juice - to help prevent the apples from browning and add to the flavor
  • Salt - a small amount can help balance out the sweetness
  • Butter - to add richness to the filling
  • Egg wash - an egg beaten with a little bit of water or milk, brushed on top of the pastry before baking

Preparation

The following steps are typically involved in making apple pillows:

  1. Prepare the pastry dough by mixing the flour, butter, sugar, and eggs together in a bowl until it forms a smooth dough. Chill the dough for at least 30 minutes before using.
  2. While the dough chills, prepare the apple filling by cooking the diced apples in a saucepan with sugar, spices, lemon juice, salt, and butter until tender and fragrant.
  3. Roll out the dough on a floured surface to about 1/4 inch thickness, then cut it into squares or circles.
  4. Spoon the apple filling onto one half of each piece of pastry, leaving enough space around the edges to crimp them closed.
  5. Moisten the edges around the filling with water or egg wash, then fold over the other half of the pastry and press down to seal.
  6. Crimp the edges with a fork or your fingers, then brush the tops of the pastries with egg wash.
  7. Bake the apple pillows in the oven at 375°F (190°C) for 18-20 minutes or until golden brown and puffed up.

Variations

There are many variations on the basic apple pillows recipe, including:

  • Caramel Apple Pillows - featuring a caramel sauce or filling in addition to the spiced apple filling
  • Apple-Cheese Pillows - adding a layer of grated cheddar or other cheese to the filling for a savory twist
  • Apple Cranberry Pillows - mixing fresh cranberries with the apple filling for a tangy burst of flavor
  • Apple Almond Pillows - including ground almonds or marzipan in the filling for added richness and texture
  • Mini Apple Pillows - making smaller, bite-sized versions that are perfect for parties or snacks

Serving Suggestions

Apple pillows can be served warm or at room temperature, and can be enjoyed as a dessert with a dollop of whipped cream or a scoop of vanilla ice cream. They can also be served as a savory snack, paired with a glass of wine or cider. Apple pillows make an excellent addition to brunch or breakfast, served with a hot cup of coffee or tea.

Conclusion

Apple pillows are a delicious and comforting treat that are perfect for fall, winter, or any time of the year. They are easy to make and can be customized with different fillings and spices to suit your taste. Whether you enjoy them as a dessert or snack, apple pillows are sure to satisfy your sweet tooth and warm your soul.

Valuable Tips for Making Delicious Apple Pillows

Making delicious apple pillows requires some level of expertise and patience, but the end result is always worth the effort. The following tips will make the process easier and help you achieve excellent results:
1. Choose the Right Apples
When making apple pillows, always choose apples that are sweet, juicy, and firm. Avoid apples that are mushy or mealy as they may not hold up well during the cooking process. Apples such as Granny Smiths or Honeycrisps are good choices as they are firm and hold up well when cooked.
2. Use Quality Ingredients
Using quality ingredients is key to making delicious apple pillows. Choose high-quality butter, flour, sugar, and cinnamon. Additionally, the apple filling should be made with fresh, high-quality apples that have a good texture and flavor.
3. Add Flavor Enhancers
To enhance the flavor of your apple pillows, consider adding a few flavor enhancers. For example, you can add a pinch of nutmeg or allspice to the apple filling. A few tablespoons of brandy or apple cider can also add a nice depth of flavor to the filling.
4. Keep Dough Cool
When making the dough for the apple pillows, it’s important to keep it cool. This is because warm dough can be difficult to work with and may not hold up well during baking. You can chill the dough in the refrigerator for 30 minutes to an hour before rolling it out.
5. Roll Dough Evenly
When rolling out the dough, make sure to roll it evenly. This will ensure that the dough is of uniform thickness, and the apple filling is evenly distributed. The thickness of the dough can vary depending on your preference, but it should be thin enough that the pockets can be easily folded over and sealed.
6. Use an Egg Wash
To give your apple pillows a beautiful golden brown color, brush the tops with an egg wash. This will not only enhance the appearance of the pastries but also create a slightly glossy and crispy finish.
7. Seal the Pockets Well
When folding over the dough to make the pockets, make sure to seal them well. This will prevent the apple filling from leaking out during baking. You can use a fork to crimp and seal the edges of the dough.
8. Bake at the Right Temperature
Baking at the right temperature is crucial to achieving a perfect result. Most apple pillows are baked at 375°F for about 25-30 minutes. However, the baking time may vary depending on the thickness of the dough and the size of the pockets.
9. Serve with Accompaniments
Apple pillows are best served warm with a dollop of whipped cream or a scoop of vanilla ice cream. This will balance the sweetness of the apple filling and complement the flavors of the pastry.
10. Store Properly
To store apple pillows, make sure to let them cool completely and then place them in an airtight container. They can be stored at room temperature for up to a day or in the refrigerator for up to three days. If you need to freeze them, wrap them tightly in plastic wrap and then foil. They can be frozen for up to three months.

In Conclusion

Making apple pillows is an enjoyable and delicious experience. With the tips mentioned above, you can achieve excellent results and impress your family and friends with your culinary skills. Remember to choose the right ingredients, keep the dough cool, roll it evenly, seal the pockets well, bake at the right temperature, and serve with accompaniments. Lastly, store them properly to ensure they remain fresh and delicious.
