2 cups all purpose flour
1/2 teaspoon salt
1 cup (2 sticks) chilled unsalted butter, cut into 1/2-inch cubes
6 tablespoons (or more) ice water
Filling
3 3/4 pounds Golden Delicious apples, peeled, halved, cored, thinly sliced
2 1/4 pounds quinces, peeled, halved, cored, thinly sliced
1 cup sugar
1/2 cup apple cider
1 teaspoon fresh lemon juice
2 tablespoons all purpose flour
1/2 teaspoon ground cinnamon
1/2 teaspoon Chinese five-spice powder*
2 tablespoons (1/4 stick) chilled unsalted butter, diced
1 tablespoon sugar blended with 2 teaspoons whole milk (for glaze)
Vanilla ice cream

Steps:

  • For crust:
  • Blend flour and salt in processor 5 seconds. Add butter; using on/off turns, cut in until coarse meal forms. Add 6 tablespoons ice water. Using on/off turns, blend until moist clumps form, adding more water by tablespoonfuls if dough is dry. Gather dough into ball. Divide in half and shape into disks. Wrap each disk in plastic; chill at least 1 hour and up to 1 day.
  • For filling:
  • Combine first 5 ingredients in large pot. Bring to boil. Reduce heat to medium-low, cover, and simmer until fruit is tender, stirring occasionally, about 25 minutes. Transfer mixture to bowl. Mix in flour and spices. Cool. (Can be made 1 day ahead. Cover and chill. Bring to room temperature before continuing.)
  • Preheat oven to 400°F. Roll out 1 dough disk on lightly floured surface to 13-inch round. Line 9-inch-diameter pie dish (not deep-dish) with dough. Spoon filling into crust; dot with butter. Roll out second dough disk on lightly floured surface to 13-inch round. Drape dough over filling. Roll up overhang of both crusts together to form edge and crimp. Cut hole in center of crust to allow steam to escape; brush top (not edge) with glaze.
  • Bake pie 15 minutes. Reduce oven temperature to 375°F. Bake pie until crust is golden, about 55 minutes longer. Cool pie on rack 30 minutes. Serve warm or at room temperature with ice cream.
  • *A blend of ground cinnamon, cloves, fennel seeds, star anise, and peppercorns, sold in the supermarket's spice section.

Steps:

  • In a large bowl, combine the flour, sugar and salt; cut in the butter until crumbly. Gradually add ice water, tossing with a fork until dough forms a ball., Divide dough in half so that one portion is slightly larger than the other; wrap each in plastic wrap. Refrigerate for 40 minutes or until easy to handle., On a lightly floured surface, roll out larger portion of dough to fit a 9-in. pie plate. Transfer pastry to pie plate. Trim pastry even with edge. Whisk egg and water; brush over pastry., In a large bowl, sprinkle apples with lemon juice; toss to coat. Drizzle with honey and toss to coat. Steps:

  • For Crust:
  • Mix first 3 ingredients in large bowl. Add shortening; cut in using pastry blender or 2 knives until mixture resembles coarse meal with a few pea-size pieces. Mix in enough ice water by tablespoonfuls to form moist clumps. Gather dough. Divide into 2 pieces, 1 slightly larger than the other. Flatten each into disk. Wrap each disk in plastic; chill at least 1 hour. (Can be made 1 day ahead. Keep refrigerated. Let dough soften slightly at room temperature before rolling out.)
  • For Filling:
  • Toss apples and lemon juice in large bowl. Melt butter in heavy large pot over medium heat. Add apples and brown sugar; cook until apples are just tender, stirring occasionally, about 15 minutes. Using slotted spoon, return apples to same bowl. Boil juices in pot until thick, about 15 minutes. Pour juices over apples; cool completely. Mix in flour and five-spice powder.
  • Position rack in lowest third of oven; preheat to 375°F. Place baking sheet on rack. Roll out larger dough disk on floured surface to 12-inch round. Transfer to 9-inch glass pie dish; trim overhang to 1 inch, if necessary. Spoon filling into crust. Roll out smaller dough disk to 10-inch round. Drape over filling. Press top and bottom edges of dough together; crimp decoratively. Cut small hole in center of crust. Brush crust with cream. Sprinkle with 1/2 teaspoon sugar.
  • Place pie on baking sheet in oven; bake until crust is golden brown and filling bubbles thickly, about 1 hour 5 minutes. Transfer pie to rack and cool. Serve slightly warm or at room temperature.

Steps:

  • In a large mixing bowl, combine the apples, pears, lemon zest, lemon juice, orange juice, and 1/2 cup sugar; set aside for 10 minutes.
  • In a small bowl, combine the remaining 1/4 cup sugar, cornstarch, and five-spice powder; stir mixture into the fruit.
  • Transfer filling to the chilled pie shell; smooth filling with you hands to even it out.

- 1 cup flour
- ¾ cup light brown sugar
- ½ cup chopped lightly toasted walnuts
- ¼ tbsp salt
- 3 oz butter, melted
- 4 tart baking apples, such as granny smith or pink lady (1 ½ to 2 lbs
- 6 oz fresh or thawed frozen cranberries, 1 ¾ cup
- ¾ cup plus 6 t. sugar
- 1 oz flour, 3 ½ t.
- 1 tbsp finely chopped crystallized ginger
- ¼ tbsp ground cardamom
- ¼ tbsp ground cinnamon
- 1 blind baked all butter pie crust, or crust of your choice, homemade or store bought

Steps:

  • Position rack in center of oven. Set a heavy duty rimmed baking sheet on rack and heat oven to 350. In medium bowl, mix flour, sugar, walnuts and salt. Using your fingers, blend butter into flour mixture. Set aside. To make filling, peel, quarter and core each apple. Cut each quarter lengthwise into 1/4 inch thick slices and then cut each slice crosswise at 1/4 inch intervals to make tiny rectangles. In food processor, pulse cranberries with 3/4 cup of the sugar until coarsely chopped. In large bowl, mix the remaining 6 T. sugar with flour, ginger, cardamom, and cinnamon, breaking up ginger clumps with your fingers. Toss in cranberry mixture and apples. Mound filling into piecrust. Sprinkle streusel topping over apple mixture, pressing streusel between your fingers into small lumps as you sprinkle. Put pie on heated baking sheet and bake until streusel is deeply browned and the filling is bubbling vigorously at the edge of the pie, 65 to 75 minutes. Check every 20 minutes, and if pastry edge or streusel browns before filling is done, loosely cover top or edges of pit as needed with foil. Transfer to a rack and cool completely before serving. Pie can be stored at room temperature for up to 2 days. Note: A blind baked pie shell is one that has been partially baked.

1 cup carnation fresh edible flower, pink and red,dried

3 drops vanilla fragrance oil (at your craft store)

Steps:

  • Dried Apple Slices: Preheat your oven to 150 degrees.
  • Slice the unpeeled apple in very thin slices and lay in a single layer on a baking sheet sprayed lightly with vegetable oil spray and bake for 30 minutes.
  • You can sprinkle a little cinnamon on top to make these cinnamon dried apples.
  • Let the dried apple cool for about ten minutes before adding to the other ingredients.
  • In a lidded glass jar (a Mason jar is perfect) combine all of the ingredients of the potpourri mixture, and gently combine with a wooden spoon.
  • Cover tightly.
  • This mixture will keep for months.
  • To use, place about a tablespoon into 2 cups of boiling water.
  • Turn down the heat and let the mixture simmer gently to release all of the wonderful apple pie scent!

4 tablespoons butter
1/3 cup brown sugar
1 cup pecans, coarsely chopped
1 (18 ounce) spice cake mix
1 (21 ounce) can apple pie filling
2/3 cup sour cream
3 medium eggs, slightly beaten
1 tablespoon oil

Steps:

  • Preheat oven 350°F and grease a 10" springform cake pan and set aside.
  • In a separate small pan, melt butter; then stir in brown sugar and nuts.
  • Pour pecan mixture into bottom of cake pan. This will be the top of the cake.
  • By hand, mix cake mix, pie filling, sour cream, eggs, and oil until well-blended.
  • Carefully pour over nut mixture and spread evenly.
  • Bake 45 minutes to one hour. Oven temps vary so check cake after 45 minutes.
  • Remove from oven and let cool in pan for 10 minutes, then invert onto cooling rack.
  • Release spring and remove sides and bottom of pan.
  • If some pecan topping sticks to the pan, replace it on the cake.

1 cup heavy cream
1 tablespoon powdered sugar
1/2 teaspoon apple pie spice
1/2 teaspoon vanilla extract
1/4 cup cornstarch
1 tablespoon cinnamon sugar
2 Granny Smith apples, cored, peeled and cut into 1/4-inch-thick strips

Steps:

  • Pour the oil into a small Dutch oven fitted with a deep-fry thermometer. Heat over medium heat to 365 degrees F. Line a baking sheet with paper towels.
  • Combine the heavy cream, powdered sugar, apple pie spice and vanilla in a large bowl. Whip with a whisk or hand mixer until it holds medium peaks. Refrigerate until ready to serve.
  • Whisk 1/4 cup water into the cornstarch in a bowl until smooth. Add the cinnamon sugar and whisk to combine. Dip the apple strips into the mixture and toss until evenly coated. 2 pie crusts (1 box from the refrigerated section of the grocery store)
2/3 cup brown sugar, firmly packed
2 tablespoons flour
1/2 teaspoon cinnamon
1/4 teaspoon ginger
8 cups golden delicious apples, peeled and sliced (7 or 8 apples)
1/4 cup light molasses
1 tablespoon butter, cut up

Steps:

  • Preheat oven to 425°F.
  • Combine brown sugar, flour, cinnamon, and ginger in a bowl.
  • Add apples and toss to coat.
  • Add molasses and toss.
  • Smooth one of the crusts into a 9-inch pie plate.
  • Spoon apple mixture into the crust.
  • Dot with butter.
  • Place second crust on top, cut vents, and crimp the edges together.
  • Place the pie on a baking sheet and bake for 15 minutes.
  • Reduce oven temperature to 375°F.
  • Bake 60 minutes more or until the apples are tender and the filing is bubbly. (If the crust is browning too quickly, cover the top loosely with foil.).
  • Cool pie on a wire rack for 1 hour.

FOR TURNOVERS:
2 - sheets puff pastry, thawed
- flour
1 large can apple pie filling
4 teaspoon(s) cinnamon-sugar mix, divided
1 - extra large egg
1 tablespoon(s) cold water
FOR GLAZE:
2 tablespoon(s) real butter, softened
2 cup(s) powdered sugar
2 teaspoon(s) vanilla
1 teaspoon(s) pumpkin pie spice blend (cinnamon, nutmeg, ginger and allspice)
2 tablespoon(s) milk, cream or apple juice
2 teaspoon(s) milk, cream or apple juice

Steps:

  • Lightly flour board. Open sheets of puff pastry and roll slightly with a rolling pin to make flat again. With a fluted pastry cutter or pizza wheel, cut each in half, then in half again making 4 squares out of each. 8 total. Place squares onto 2 baking sheets lined with parchment paper. Top each with spoonfuls of apple pie filling in the centers. Evenly sprinkle the filling with 2 of the teaspoons of cinnamon-sugar mix.
  • Beat egg with water. brush 2 edges with eggwash, and fold other side over making a triangle. Press edges closed. Use a fork to crimp. Poke fork in tops to vent. Sprinkle tops evenly with the other 2 teaspoons cinnamon-sugar mix.
  • Bake in preheated 400 degree oven for 20 minutes. *I used both of my ovens. If using one oven, you may want to bake them one sheet at a time. Or be sure to rotate the sheets halfway through baking time.
  • For Glaze: In small bowl mix the butter, powdered sugar, vanilla and spice mix til crumbly with a fork. Mix in 2 tablespoon of milk or cream til no longer lumpy, smooth and of a frosting consistency. Add about 2 teaspoons more til you can drizzle it over the warm turnovers.
  • *If too thin, add more powdered sugar. If too thick, add more milk or cream. Spice amount is to taste.

I created this pie for my love of apple and orange spice. I added cranberries, and pears. The orange zest and cranberries give this pie a little tanginess. I am not a lover of very sweet pies. I like to taste my fruit. One pie is never enough at gatherings. I decided to make it in a large baking dish. This will feed a family with leftovers. It is also large enough for a holiday gathering. Why make 2 pies? You can make one huge pie. It is a big hit in my home. Enjoy!

4-5 - hard bosc pears quartered
1/4 cup(s) lemon juice concentrate
3/4 cup(s) light brown sugar
1/2 cup(s) granulated sugar
7 tablespoon(s) all purpose flour
2 teaspoon(s) cinnamon
1/2 teaspoon(s) nutmeg
1/4 teaspoon(s) ground cloves
11/2 teaspoon(s) orange zest
1/2 teaspoon(s) ground ginger
1/2 cup(s) dried cranberries
2 tablespoon(s) butter chopped

Steps:

  • Make crust: place water and ice and a bowl or cup. Set aside. chop up 1 3/4 sicks butter,. Place in a bowl and refrigerate. ( This is for the top crust.) Repeat! Chop up 1 3/4 sticks of butter again. Place in food processor. Add in 2 cups plus 2TB of flour, and 1/4 tsp salt. Pulse on blend for about 30 seconds, or until blended well Add in 7 TB of ice water. Blend until a ball forms. Remove from processor. Form into a rectangle. Wrap in plastic wrap and refrigerate.
  • Remove chopped butter from fridge. Repeat the same process from above. Place butter in food processor.. add 2 cups + 2 tablespoons of flour, and 1/4 tsp salt to food processor. Pilse unyil blended. Add and 7 tablespoons of ice water. Blend until a ball forms. Form ball into a rectangle about 4" x 6". Wrapped in plastic wrap and refrigerate until ready to use.
  • While the crust is chilling. Make your filling for pie. Peel apples and pears. Remove core and slice in to wedges. Toss with lemon juice in a large bowl, or 9 x 13" baking dish and Set aside.
  • Place sugars spices, flour and 1 teaspoon of orange zest in a bowl. Combine well. Drain lemon juice from apples. Toss apples in the flour sugar mixture. Toss in the cranberries.
  • Alternate crumb topping: if making top pie crust. Skip this step. Place flour, sugars, and cinnamon in food processor. Blend well. Place chopped butter in processor. Process until it forms ctumbs. Sprinkle over top of apples before baking.
  • Remove crust from refrigerator. Dust surface with flour . Dust each side of Dough with flour. Roll each crust to about 13x 17". Roll crust very loosely around rolling pin and drape over baking dish. Pat into dish with over some crust over hanging. Brush bottom crust with egg white. place apple filling into crust. Scatter remaining orange zest over top. Scatter 2 tablespoons of chopped butter across top of pie.
  • Roll the second crust the same way as the first. Place over filling. Trim edges with 1 inch over hanging. Dampen bottom crust edges with water. Crimp crust together with fingers to outline inside of dish. Whisk egg with water. Brush top of crust with it. Make four small slices across pie to vent. Place on baking sheet in to 425° oven. Bake for 10 minutes. Reduce heat to 375. Bake about 90 minutes or until apples are softened. Let pie cool completely before slicing.
