APPLE PIE QUESADILLAS
Try this sweet spin on an easy classic. Apple pie quesadillas are a delicious sweet treat and a family hit.

Steps:
- Peel, core, and finely dice apples.
- Place in a bowl and toss with granulated sugar, cornstarch, cinnamon, and nutmeg.
- Melt butter in a medium-sized skillet over medium heat.
- Add apples, and stir-fry for about a minute.
- Stir in water while cooking apples through.
- The mixture should be thick, but if it gets too thick, add more water.
- Heat another ungreased skillet or griddle.
- Once it's hot, place a tortilla on the skillet, and spread one third of the apple pie filling on it.
- Top with a second tortilla.
- Fry until the bottom is toasted.
- Flip, and fry until second side is toasted.
- Repeat until all the apple filling is used.
- Let quesadillas cool to set up for five minutes or so before cutting - it makes them SO much less messy!
- Combine powdered sugar, and 2-3 teaspoons of water to make an icing.
- Optionally, you can add 1/2 teaspoon of ground cinnamon to icing.
- Drizzle onto quesadilla wedges. Yummy!

- In small bowl, mix granulated sugar and 1/4 teaspoon cinnamon; set aside. In another small bowl, mix cream cheese, brown sugar and 1/4 teaspoon cinnamon with spoon.
- Spread cream cheese mixture over tortillas. Place apple slices on cream cheese mixture on 1 tortilla. Top with remaining tortilla, cheese side down. Spray both sides of quesadilla with cooking spray; sprinkle with cinnamon-sugar mixture.
- Heat 10-inch nonstick skillet over medium heat. Cook quesadilla in skillet 2 to 3 minutes or until bottom is brown and crisp; turn quesadilla. Cook 2 to 3 minutes longer or until bottom is brown and crisp.
- Remove from skillet to cutting board; let stand 2 to 3 minutes. Cut into 8 wedges.

APPLE PIE QUESADILLAS
A different take on the usual quesadillas. I have a quesadilla press/maker that I use for these, though the recipe uses the stove/oven method.

- In a bowl, combine apple pie filling, raisins and cinnamon.
- Coat a 10 inch skillet with cooking spray.
- Heat over medium heat until hot.
- Place one tortilla in skillet.
- Top with 2 T cheese and 1/4 cup pie filling mixture.
- Cook 1-2 minutes or until cheese is melted and bottom of tortilla is golden brown.
- Using a large spatual, fold tortilla in half.
- Transfer to a foil lined baking sheet.
- Repeat until all eight quesadillas are made.
- Sprinkle remaining cheese evenly over top of quesadillas.
- Bake at 350 degrees for 2-3 minutes or until cheese is melted and quesadillas are heated through.
- Cut each quesadilla into 3 wedges.

One of my favorite quick, breakfast treats. You can make it gluten-free by using corn tortillas! Top this delicious quesadilla with honey, maple syrup, powdered sugar, or whipped topping. Serve as either breakfast or dessert!

- Heat a large skillet over medium-low heat. Cook apple, corn syrup, honey, maple syrup, ground cinnamon, and brown sugar in hot skillet, stirring every few minutes, until apples are slightly softened and caramelized, 8 to 10 minutes. Transfer apple mixture to a bowl.
- Place 1 tortilla in the same skillet over medium-low heat; spread apple mixture on top of tortilla. Top with remaining tortilla. Cook until the bottom tortilla is golden brown, 1 to 3 minutes. Carefully flip the quesadilla and cook until the other tortilla is golden brown, 1 to 3 minutes more.

CREAM CHEESE APPLE PIE QUESADILLA
This is so good! The cream cheese melts into the apple pie filling, and tastes almost custardy. I usually use wheat tortillas and light cream cheese because that's what we have in the house.

Steps:
- Spread cream cheese on one side of the tortilla, completely covering it, using more around the edges, as this will help seal in the pie filling.
- Pour the filling on top of the cream cheese layer and cut apple slices into 1/2 inch pieces with a spoon or butterknife.
- Sprinkle pie filling with cinnamon, if desired.
- Fold tortilla over, gently pressing the edges to seal.
- Brush one side with the melted butter, and put the tortilla, butter side down, into a skillet pre-heated to medium.
- While that side is grilling, brush the unbuttered side with the remaining butter.
- Grill until golden, flip, and grill the other side until golden.
- Remove from skillet and serve with powdered sugar, whipped cream, ice cream, and additional cinnamon, if desired.

- 1. Take one tortilla and lay it flat on a small cutting board. Spoon the apple pie filling onto the tortilla to within a half inch from the edge of the tortilla. Put the second tortilla on top of the first one, like a sandwich.
- 2. Heat up your quesadilla maker and slide the apple quesadilla onto the griddle and close the lid and cook for 5 minutes. If you don't have a quesadilla maker, you can melt a little butter in a large skillet, not too much, over medium heat and slide the quesadilla into the skillet and brown, then carefully flip the quesadilla and brown the other side. Remove hot quesadilla to the cutting board. Cut the quesadilla in 6 pieces, and dust with powdered sugar, and lightly sprinkle cinnamon and nutmeg. Serve hot with or without ice cream. Enjoy!
