2 ¼ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
1 egg
1 cup buttermilk
½ cup butter, melted
1 teaspoon vanilla extract
1 ½ cups packed brown sugar
2 cups diced apples
½ cup packed brown sugar
⅓ cup all-purpose flour
1 teaspoon ground cinnamon
2 tablespoons butter, melted

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease a 12 cup muffin tin or line with paper muffin cups.
  • In a large bowl, stir together 2 1/4 cups flour, baking soda and salt. In a separate smaller bowl, mix together the egg, buttermilk, 1/2 cup melted butter, vanilla and 1 1/2 cups of brown sugar until sugar has dissolved. Pour into the flour mixture and sprinkle the diced apple into the bowl as well. Stir just until everything is blended. Spoon into the prepared muffin tin, filling the cups to the top.
  • In a small bowl, stir together 1/2 cup of brown sugar, 1/3 cup flour and cinnamon. Drizzle in 2 tablespoons of melted butter while tossing with a fork until well blended. Sprinkle this over the tops of the muffins.
  • Bake for 25 minutes in the preheated oven, or until the tops of the muffins spring back when lightly pressed.

3 tablespoons sugar
3 tablespoons water
2 tablespoons brown sugar

  • In a small saucepan, combine the apples, sugar, water and brown sugar. Bring to a boil over medium heat. Sprinkle with flour; cook and stir for 2 minutes or until thickened. Stir in butter and lemon juice. Remove from the heat; add vanilla. Set aside to cool., For topping, combine the brown sugar, flour and oats. Cut in butter until mixture resembles coarse crumbs; set aside., In a large bowl, combine the flour, sugar, baking powder, cinnamon and salt. In another bowl, beat the egg, milk and oil. Fat-free, sugar-free, low-calorie, AND vegan!! This recipe came about when I was looking for something a little different to do with some apple pie filling, and for a sugar-free muffin recipe that didn't have any added artificial sweeteners. (Yes, the pie filling is sweetened with Splenda, but that wouldn't affect the texture of the final product the way adding Splenda would.) I used a kitchen scissors to chop the apple slices from the pie filling into smaller pieces. Try to get all of the "goo" from the pie filling in there, too -- don't just throw it out! If you overmix, it will probably be tough; that's why I chose to mix it by hand, though of course you could use an electric mixer if you prefer. I used a jumbo-sized muffin pan, and I got six nice-sized muffins -- for less than 150 calories each!

No apple pie spice? No problem! You can make your own; just add 1 tablespoon ground cinnamon, 1 teaspoon ground nutmeg, 1 teaspoon allspice and 1/2 teaspoon ground clove. If your spice pantry is spare, just use 2 teaspoons of cinnamon.

2 c all purpose flour
2 tsp baking powder
2 tsp apple pie spice (recipe to follow)
1/2 tsp sea salt
1/2 c butter, softened
1/2 c brown sugar

1/3 c sour cream
1 tsp vanilla
2 eggs
3/4 c walnut pieces
TOPPING
1/4 c all purpose flour
1/4 c brown sugar
1/2 tsp apple pie spice
2 Tbsp butter, softened
GLAZE
1 c powdered sugar
3-4 Tbsp cream
1/2 tsp vanilla
APPLE PIE SPICE
1/4 c cinnamon
1 Tbsp all spice
2 tsp ginger
2 tsp nutmeg
1/2 tsp cardamom, if available, not necessary

Steps:

  • 1. -Preheat oven to 350. -Line cupcake/muffin pan with 12 liners, set aside. -Peel and core apples, dice and soak in salt water (2 c cold water 1/4 tsp sea salt) or 2-3 tbsp lemon juice for 3-5 minutes, then rinse and drain, leave diced apples in strainer for excess water to drain off. Mix together apple pie spice ingredients, if you don't have any. This will make extra, just store in air tight container or zip lock bag for future use.
  • 2. Sift together flour, baking powder, apple pie spice and sea salt, set aside. In a large mixing bowl, cream together butter, brown sugar and sugar. Mix in sour cream and vanilla. Add eggs and beat until well combined. Slowly mix in flour mixture until just combined. Fold in apples and nuts. Scoop batter (it will be thick) evenly into prepared pan, set aside.
  • 3. TOPPING: In a small bowl, whisk together brown sugar, flour, apple pie spice. Cut in butter until crumbly. Sprinkle over batter. Bake at 350 for 25 minutes or until toothpick inserted comes out clean. Set pan on cooling rack for 10 minutes, then remove muffins to rack to cool completely.
  • 4. GLAZE: Whisk together powdered sugar, cream and vanilla, add more cream a little at a time until of drizzling consistency. Drizzle over muffins as shown in photo. (You could use milk instead of the cream, but you will need much less.)

1 cup almond milk (or soy or regular)
1/2 cup dark brown sugar, packed
1/4 cup + 2 Tbsp fat free apple yogurt* (or vanilla or plain)
1/4 cup unsweetened apple sauce (or vegetable oil)**

2 large eggs
3 and 1/2 tsp baking powder

2 heaping cups chopped apple (cored + peeled, if you prefer peeled chunks - I did not peel mine)
Oat Streusel Topping
1/4 cup dark brown sugar
2 Tbsp all-purpose flour

  • Preheat oven to 425F. Spray muffin tin with nonstick spray. Set aside. Prepare oat streusel topping by mixing everything together until the mixture resembles course crumbs. Set aside. In a separate large bowl, whisk together the milk, sugars, yogurt, apple sauce, eggs, baking powder, salt and baking soda.
